JIMMY DEAN SIX LAYER BREAKFAST CASSEROLE

The jalapenos give this casserole a nice kick to wake you up in the morning. I found this recipe at jimmydean.com, and I must confess the directions were confusing to me but maybe because it was 5am when I made it. I put half my eggs on the bottom, fit the bread slices in the bottom of the pan, put the entire sausage mixture on top, and covered it with the rest of the egg mixture. Whatever floats your boat...I figure it's all going into the same place (your belly). Personally, I'd use less than 1 teaspoon of salt (probably 1/4 to 1/2 teaspoon), but you decide. I also found it needed to cook more than the 15 minutes the recipe listed and cooked it for closer to 30 minutes at 350. I've posted the recipe the way it was written. Let me know if you're able to decipher it better than I did. Enjoy!

6 eggs
1/4 cup heavy cream
1 teaspoon salt
1/4 teaspoon black pepper, ground
12 -16 ounces hot sausage, cooked, crumbled, and drained
1/4 cup jalapeno pepper, diced
1/2 cup cheddar cheese, shredded
2 tablespoons garlic, minced
1 teaspoon ground cumin
4 slices bread, 1/2 slice

Steps:

  • Preheat oven to 350.
  • Mix the eggs, heavy cream, salt, and pepper in a bowl.
  • In a separate bowl place the cooked sausage, jalapeno pepper, cheese, garlic, and cumin.
  • Place a third of the egg mixture in the bottom of a 2-quart baking dish.
  • Place a slice of bread into the dish.
  • Place 1/3 of the amount of sausage mixture onto the slice of bread.
  • Repeat until last slice of bread is on top.
  • Add the remaining 1/3 sausage ingredients evenly across the top slice of bread and bake in oven for 15 minutes.

1 lb pork sausage, broken up
1 1/2 cups raw potatoes, peeled and sliced
1/2 cup raw onion, sliced
1 cup uncooked white rice
1 1/2 cups canned tomatoes, undrained
1 cup raw carrot, sliced
16 ounces tomato juice
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons sugar

Steps:

  • Partially cook sausage and drain off fat.
  • Place sausage in 2 quart casserole and cover with layers of rice, potatoes, onions and carrots. Add tomatoes with juice. Add tomato juice until it comes up about half-way on the layers. Combine salt, pepper and sugar and sprinkle over top.
  • COVER casserole and bake at 350 degrees for 1 1/2 to 2 hours.
  • Add some water or tomato juice while cooking if casserole seems too dry.

2 c raw potatoes, sliced
2 c celery, chopped
1/2 c onion, chopped
2 tsp salt (or less)
1/4 tsp pepper
1 c green pepper, diced
2 c tomatoes, canned
thin slices of onion, (optional)

Steps:

  • 1. Grease a casserole dish. Sprinkle each layer with salt and pepper before adding the next layer. Place potatoes in the bottom of the casserole
  • 2. Add the layer of celery. Add the layer of hamburger. Add the layer of onions. Add the green pepper.
  • 3. Pour the tomatoes over the mixture. Bake for 2 hours at 350 degrees.

1 pkg. Jimmy Dean® Hot Pork Sausage Roll
1 jalapeño pepper, seeded, finely chopped
1 garlic clove, minced
1 cup (4 ounces) shredded sharp cheddar cheese
3 slices wide-pan hearty country white bread (about 5x1-1/4 inches each)
6 eggs
¼ cup whipping cream
½ teaspoon ground cumin

Steps:

  • 1. Preheat oven to 325°F. Cook sausage, pepper and garlic in large skillet over medium-high heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently; drain. Return sausage mixture to skillet. Stir in cheese. 2. Place 1 bread slice on bottom of lightly greased 1-½-quart round casserole or soufflé dish; top with 1/3 of the sausage mixture. Repeat layers twice. 3. Beat eggs, cream and cumin in large bowl with wire whisk until well blended; pour over ingredients in casserole dish. Press down on sausage mixture with back of spatula to completely cover sausage and bread with egg mixture; cover. Refrigerate 10 minutes. 4. Bake, covered, 1 hour or until knife inserted in center comes out clean, uncovering after 45 minutes. Let stand 10 minutes before serving. Make Ahead: Assemble as directed. Cover and refrigerate up to 24 hours. When ready to serve, bake as directed. Yield: Makes: 6 servings (1/6 casserole each)

With ground beef and veggies, this is a one dish dinner for us. This is also a recipe that has room to make it your own with more spices. I like to add a little garlic powder or garlic pepper.
