I love all kinds of salads. I need to start eating more fruit, and I found this recipe on another site. This looks like a quick way to enjoy some of favorite fruity flavors! The passive work time is the time that it chills in the fridge.

1 cup mandarin orange, drained
1 cup pineapple chunk, drained
1 cup angel flake coconut
1 cup sour cream
1 cup chopped nuts
1 cup miniature marshmallow

Steps:

  • Mix all ingredients together in a medium size bowl.
  • You can cover with whipped cream or cool whip if desired.
  • Cover and place in refrigerator 4 hours or overnight.

This recipe was submitted by Virginia Shufflebarger. I found this recipe in Salads Food Writers' Favorites. I have not tried this recipe, but I plan to use no sugar added fruit cocktail, pineapple chunks and unsweetened coconut.

1 cup cottage cheese
1 cup sour cream
1 cup fruit cocktail, drained well
1 cup pineapple chunk, drained well
1 cup miniature marshmallow
1 cup shredded coconut
strawberries (optional) or sweet cherries, garnish (optional)
fresh mint leaves, garnish (optional)

Steps:

  • In a mixing bowl, combine cottage cheese and sour cream. Stir in fruit cocktail, pineapple, marshmallows and coconut. Mix well.
  • Transfer to one large or six individual serving bowls. garnish with strawberries or cherries and mint leaves, if desired.

1 tablespoon vegetable oil
3 cups shredded lettuce
3 large hard-boiled large eggs, sliced

2 cups shredded cooked chicken breast
1 package (10 ounces) frozen peas, thawed
DRESSING:
1 cup mayonnaise
1/4 cup sour cream
2 green onions, chopped
2 teaspoons Dijon mustard
