A delicious Asian satay marinade and sauce for chicken and beef.

1 large red onion, chopped
2 large garlic cloves, chopped
3 stalks lemon grass, chopped
½ cup soy sauce
1 tablespoon peanut oil
1 tablespoon ground turmeric
1 ½ teaspoons brown sugar
1 teaspoon ground cumin
1 teaspoon ground ginger
salt and black pepper to taste
1 pound skinless, boneless chicken breast halves - pounded thin
12 wooden or bamboo skewers

Steps:

  • In a large nonreactive bowl, stir together the onion, garlic, lemon grass, soy sauce, peanut oil, turmeric, brown sugar, cumin, ginger, salt, and pepper. Reserve about 2 tablespoons of marinade in a small bowl, and refrigerate until cooking time. Mix the chicken breasts into the remaining marinade, stir to coat well, and marinate in refrigerator overnight.
  • About 30 minutes before serving, soak the skewers in water. Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove the chicken breasts from the bowl, and discard the used marinade. Cut each chicken breast on the diagonal into 6 long strips, and thread a chicken strip onto one of the soaked skewers. Grill the skewers, turning frequently and basting with the reserved marinade, until the chicken is cooked through with brown, crispy edges, 5 to 8 minutes per skewer.

Cooking spray
4 cooked pork chops, cut into 2-inch pieces
1 large red onion, cut into wedges
1/2 cup prepared teriyaki sauce
1/4 cup sesame seeds
4 cups cooked rice
1 teaspoon curry powder
1 teaspoon ground cumin
1 teaspoon finely grated lemon zest
1/2 cup reduced-sodium chicken broth
1/3 cup golden raisins
1/3 cup shelled pistachio nuts
2 tablespoons chopped fresh cilantro
Salt
Freshly ground black pepper

Steps:

  • Coat a large griddle or grill pan with cooking spray and preheat to medium-high.
  • Skewer alternating pieces of pork and onion on metal or wooden skewers. Brush teriyaki sauce all over onion and pork and roll skewers in sesame seeds. Place skewers on hot pan and cook 3 to 5 minutes, until seeds are golden brown.
  • In a medium saucepan, combine rice, curry powder, cumin, lemon zest, broth, raisins, and nuts. Bring to a simmer. Cook 3 minutes to heat through. Fold in cilantro and season with salt and pepper.

1-1/2 pounds boneless skinless chicken breasts
1 teaspoon steak seasoning
1 tablespoon canola oil
3 tablespoons reduced-fat chunky peanut butter
1/4 cup unsweetened apple juice
2 tablespoons lime juice
2 tablespoons reduced-sodium soy sauce
2 teaspoons hot pepper sauce
6 kaiser rolls, split
2 cups torn romaine
1 cup shredded carrots
1/2 cup julienned peeled cucumber
6 tablespoons unsweetened crushed pineapple

Steps:

  • Sprinkle chicken on both sides with steak seasoning. In a large skillet, cook chicken in oil for 4-7 minutes on each side or until juices run clear. Transfer to a cutting board and shred., In a large microwave-safe bowl, melt peanut butter. Whisk in the apple juice, lime juice, soy sauce and hot pepper sauce. Add chicken and toss to coat. , Spoon 1/2 cup chicken mixture onto roll bottoms; top with romaine, carrots, cucumber and pineapple. Replace roll tops.

2 Tbsp curry powder
2 Tbsp sugar
1/2 cup salad oil
1/2 cup soy sauce
4 cloves garlic press
3 - 4 lbs chicken

Steps:

  • In a small bowl, combine curry powder, sugar, oil, soy and garlic. Cut chicken into 3/4 inch cubes and place in plastic bag. Pour in marinade; seal and refrigerate, turning occasionally for 2 hours. Thread chicken on bamboo skewers; cook as directed.
