2 (.25 ounce) packages active dry yeast
2 ½ cups warm water (110 degrees F/45 degrees C)
½ cup nonfat dry milk powder
½ cup vegetable oil
2 tablespoons white sugar
1 tablespoon salt
8 ½ cups all-purpose flour
1 tablespoon butter, melted

Steps:

  • In a large mixing bowl, dissolve yeast in 1/2 cup warm water. Add remaining water, dry milk, oil, sugar, salt, and 3 cups of flour; beat with an electric mixer on medium speed for 3 minutes, or until smooth. Stir in enough remaining flour to form a soft dough.
  • Turn dough onto a lightly floured surface. Knead until smooth and elastic, about 6 to 8 minutes. Place in a greased bowl, turning once to grease surface. Cover the bowl with a damp cloth. Let rise in a warm place until doubled in size, about 1 hour.
  • Punch the dough down, and divide in half. Shape into loaves. Place in two greased 9 X 5 x 3 inch loaf pans. Grease the tops of the loaves, and cover with a damp cloth. Let rise until doubled, about 1 hour.
  • Bake at 375 degrees F (190 degrees C) for 35 minutes, or until golden brown. Remove bread from pans to cool on wire racks. Brush with melted butter or margarine.

2 1/2 cups water, at a temperature between 105 and 115 F
2 (1/4 ounce) packages yeast
2 tablespoons sugar
2 teaspoons salt
2 tablespoons vegetable oil
6 1/2 cups flour

Steps:

  • Mix the water, yeast, and sugar together in a small bowl.
  • Add the salt to 5 1/2 cups of the flour in a large bowl.
  • Set the other cup of flour aside. Mix the liquid and the dry together and then add the oil.
  • Mix until it comes away from the sides of the bowl, sprinkle some of the last cup of flour on a wooden surface, and knead until the dough gets sticky again.
  • Keep adding more flour and keep kneading.
  • Push forward, fold over, push forward, fold over.
  • I do this one handed because I have to, but it works.
  • Put a little oil in the large bowl, that has been scraped clean, add the kneaded dough and roll it over a few times to coat. Cover, let stand for about one hour in a warm place. Punch down, cut the dough in half and roll it out to about a 9 inch by 18 inch rectangle. Roll it up, tuck in the ends and place in a very well lubricated ( I use crisco) glass baking dish.
  • Repeat with the other half, and then cover with a cloth and let it rise again for about 45 minutes.
  • Use a sharp knife to put a few slashes in the top, brush with a little beaten egg or milk, and put into a pre-heated 375 (f) oven for 30 minutes.
  • The bread is done when an instant read thermometer reads 190 (f).

A good, old-fashioned, English, white crusty loaf soft inside and lightly textured is still hard to beat, couldn't be easier to make, and the pleasure of eating it is difficult to match.

Steps:

  • Begin by warming the flour in the oven for about 10 minutes, then turn the oven off. Sift the flour, salt, yeast and sugar into a bowl, make a well in the centre of the mixture, then add the water. Now mix to a dough, starting off with a wooden spoon and using your hands in the final stages of mixing, adding a spot more water if there are any dry bits. Wipe the bowl clean with the dough and transfer it to a flat work surface (you may need to flour this).
  • Knead the dough for 3 minutes or until it develops a sheen and blisters under the surface (it should also be springy and elastic). You can now either return the dough to the mixing bowl or transfer it to a clean bowl; either way, cover it with clingfilm that has been lightly oiled on the side that is facing the dough. Leave it until it looks as though it has doubled in bulk, which will be about 2 hours at room temperature.
  • After that, knock the air out, then knead again for 2 minutes. Now divide the dough in half, pat each piece out to an oblong, then fold one end into the centre and the other in on top. Put each one into a buttered tin, sprinkle each with a dusting of flour, then place them side by side in an oiled polythene bag until the dough rises above the tops of the tins – this time about an hour at room temperature. Alternatively, place all the dough in the one tin. Meanwhile, pre-heat the oven to gas mark 8, 450F (230C).
  • Bake the loaves on the centre shelf for 30-40 minutes, or 35-45 minutes for the large loaf, until they sound hollow when their bases are tapped. Now return them, out of their tins, upside-down to the oven to crisp the base and side crust for about 5 minutes, then cool on a wire rack.

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer.
  • Select the sweet dough cycle. Five minutes into the cycle, check the consistency of the dough. Add additional rice flour or liquid if necessary.
  • When bread is finished, let cool for 10 to 15 minutes before removing from pan.

Time: About 45 minutes plus about 3 hours' resting and rising
1 1/2 tablespoons yeast
1 1/2 tablespoons kosher salt
6 1/2 cups unbleached, all-purpose flour, more for dusting dough
Cornmeal.

Steps:

  • 1. In a large bowl or plastic container, mix yeast and salt into 3 cups lukewarm water (about 100 degrees). Stir in flour, mixing until there are no dry patches. Dough will be quite loose. Cover, but not with an airtight lid. Let dough rise at room temperature 2 hours (or up to 5 hours). 2. Bake at this point or refrigerate, covered, for as long as two weeks. When ready to bake, sprinkle a little flour on dough and cut off a grapefruit-size piece with serrated knife. Turn dough in hands to lightly stretch surface, creating a rounded top and a lumpy bottom. Put dough on pizza peel sprinkled with cornmeal; let rest 40 minutes. Repeat with remaining dough or refrigerate it. 3. Place broiler pan on bottom of oven. Place baking stone on middle rack and turn oven to 450 degrees; heat stone at that temperature for 20 minutes. 4. Dust dough with flour, slash top with serrated or very sharp knife three times. Slide onto stone. Pour one cup hot water into broiler pan and shut oven quickly to trap steam. Bake until well browned, about 30 minutes. Cool completely. Yield: 4 loaves. Variation: If not using stone, stretch rounded dough into oval and place in a greased, nonstick loaf pan. Let rest 40 minutes if fresh, an extra hour if refrigerated. Heat oven to 450 degrees for 5 minutes. Place pan on middle rack.

500 g white bread flour
300 ml warm water
2 tablespoons olive oil
1 teaspoon salt
1 (7 g) package dry yeast

Steps:

  • Add flour into a bowl, then add the yeast on one side of the flour, and the salt on the other side, then add the oil and water, now you stir to mix all ingredients, and when all the ingredients are incorporated, you place the dough onto a lightly oiled hard surface and knead for approximately 10 minutes, then place the dough into a clean well oiled bowl and cover with cling film, and leave to double for about an hour, then place dough on hard surface and knead for 5 minutes and place in a bread tin and leave to rest for 30 minutes, now make a slash longwise on the top of the loaf with a sharp knife, then bake in a pre-heated oven at 200C for 20 to 25 minutes.

1/2 stick unsalted butter, softened
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
1 tablespoon chopped garlic
One 10-ounce baguette, sliced lengthwise and cut in half
1/4 cup mayonnaise
1 tablespoon grated Parmesan
1 tablespoon spicy brown mustard
1 teaspoon Worcestershire sauce
Juice of 1 lemon
Kosher salt and freshly ground black pepper
One 15-ounce can small white beans, drained and rinsed
1 large head romaine lettuce, cleaned and torn into bite-size pieces

Steps:

  • Preheat the oven to 350 degrees F.
  • For the herb garlic bread: In a medium bowl, stir together the butter, basil, parsley and garlic. Spread the herb butter evenly over the cut sides of the bread. Reserve half the garlic bread for another use, such as Round 2 Recipe Garlic Bread Pizza. Place the other pieces onto a baking sheet, buttered-side up, and put it into the oven until the bread is warmed through and browned around the edges, 8 to 10 minutes.
  • For the salad: In a bowl large enough to hold the salad, whisk together the mayonnaise, cheese, mustard, Worcestershire and lemon juice. Season with salt and pepper. Add the beans and toss to coat. Add the lettuce and toss to coat with the dressing. Transfer to a platter or divide the salad evenly among 4 large plates. Serve with a piece of the garlic bread.
