I found this recipe on a can of "Bush's" garbanzo beans. This is one of my favorite lunches now. Tossed on top of some lettuce or stuffed into a pita. Let me kow if you try any successful variations.

2 (16 ounce) cans chickpeas, drained (garbanzo beans)
1 (9 ounce) can tuna
1/2 cup finely chopped celery
1/4 cup finely chopped onion
2 tablespoons chopped fresh parsley
1/3 cup balsamic vinaigrette
1/4 teaspoon salt
1/4 teaspoon pepper (freshly cracked if you have it)
1 medium tomatoes, diced

Steps:

  • Combine all ingredients in a bowl.
  • For best results let it marinate at least one hour before serving.
  • See I said it was simple.

Some of the best recipes are the most simple. This is one of those. I prefer it just as written, but you may add any ingredients you choose such as chopped onion, scallions, chives, water chestnuts, chopped hard-boiled eggs, lemon-pepper, dill, parsley, etc. I often take this to potlucks when I need a quick and easy (and economical) dish. I've never had to take home left-overs. Tuna pasta salads can be found at many pot lucks. Albacore tuna is plentiful on the Pacific Coast, and this recipe represents the Western U.S.

12 ounces pasta shells or 12 ounces macaroni, cooked and drained
12 ounces canned chunk albacore tuna, drained
1 cup chopped celery
1 cup frozen green pea, thawed
1 1/2 cups mayonnaise (this amount is an estimate, you'll need enough to make the salad creamy) or 1 1/2 cups Miracle Whip (this amount is an estimate, you'll need enough to make the salad creamy)
salt and pepper

Steps:

  • Combine the cooked and drained pasta with the drained tuna, chopped celery, peas, and mayonnaise, using only enough mayonnaise for the salad to be creamy.
  • (If it's made ahead, you may need more because the pasta will absorb the mayo.) Chill at least 1- 2 hours before serving.

Number Of Ingredients 5

4 can(s) tuna (4 ounce size) packed in oil or water, your choice. you can use either chunk light or white albacore.
6 large eggs, hard boiled
3 or 4 Tbsp onion, minced (more if you like)
3 or 4 Tbsp sweet pickle relish (more if you like)
3/4 to 1 c mayonnaise or miracle whip (or you may combine them, using about 1/2 cup each)

Steps:

  • 1. Drain tuna well, squeezing out as much oil or water as possible. Put into a medium sized bowl, set aside.
  • 2. Finely chop onion, hard boiled eggs and add to tuna. Add pickle relish and mayonnaise and stir well.
  • 3. Transfer tuna salad to a plastic tub with a lid and place in refrigerator. Allow to cool thoroughly and serve on bread, with crackers or any way that you like.

JUDY'S SIMPLE TUNA SALAD

My husband does not like a lot of ingredients in his tuna salad, so I came up with a version he loves.

3 - 6 oz cans tuna, drained (i like to squeeze out the extra water with my hands)
4 large celery ribs, small dice
1/4 tsp celery seed
1 tsp dried parsley
1/2 c miracle whip
scant 3/4 cup mayonnaise
1 c sweet pickle relish

Steps:

  • 1. In large mixing bowl, place drained tuna, break up with fork. Add diced celery, celery seed, dried parsley and pickle relish. Stir to combine.
  • 2. In small mixing bowl combine miracle whip and mayonnaise. Pour over tuna mixtue and stir throughly to combine. Cover and place in refrigerator. Serve when completely chilled.
