This basic pasta dish can be transformed by adding extras like cooked bacon, shrimp or even a few handfuls of baby spinach to the sauce. We like canned San Marzano plum tomatoes because they are slightly sweeter and less acidic than other varieties.

3 tablespoons extra-virgin olive oil
4 cloves garlic, very thinly sliced
Kosher salt
Pinch crushed red pepper flakes
One 28-ounce can San Marzano plum tomatoes, crushed by hand
1 cup torn basil leaves
12 ounces spaghetti
Grated Parmesan, optional
Bring a large pot of salted water to a boil.

Steps:

  • Cook the oil, garlic, 1/2 teaspoon salt and pepper flakes in a large skillet over medium heat, stirring, until the oil heats up and the garlic just starts to turn golden, 4 to 6 minutes.
  • Add the tomatoes; rinse the can with about 1 cup of water, and add the water to the skillet. Add the basil, raise the heat to medium-high and simmer until the sauce thickens, 15 to 20 minutes.
  • Meanwhile, add the spaghetti to the boiling water, and cook according to package directions; strain well.
  • Add the cooked spaghetti to the sauce, and stir to coat. Serve with Parmesan if desired.

1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
4 tablespoons unsalted butter, optional

Steps:

  • In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
  • Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

I just love this recipe! Mum used to make this for us when we were kids. It's apparently a traditional Roman dish, great for vegetarians and very easy and quick to whip up, an awesome dish with a real 'rustic' feel to it! The kids will love it! It is to be served on top of steaming, hot pasta...wholemeal pasta works quite well with this recipe too! Enjoy!

2 cups fresh ricotta
1 (400 g) can crushed tomatoes
1 yellow onion, finely diced
3 cloves garlic, crushed
1 tablespoon tomato paste
2 tablespoons freshly grated parmesan cheese

1 tablespoon olive oil
8 leaves fresh basil
1 (500 g) package pasta (spirals work well with this recipe)

Steps:

  • Firstly, put on a large pot of salted water and bring to the boil, add pasta to water and cook until'al dente' approximately 8- 10 minutes.
  • While pasta is on the go, finely dice your onion and crush your garlic.
  • In a saucepan, put in the olive oil, when the oil is warm, add your garlic and onion and gently saute these until they are transparent.
  • Add the ricotta to the pan, and stir through the onions and garlic well.
  • At this stage, add your salt and pepper, parmesan, crushed tomatoes and tomato paste.
  • Mix well and let simmer gently for 10 minutes.
  • Drain pasta.
  • Turn the ricotta sauce off from the heat, add your fresh basil leaves, roughly torn, into the sauce.
  • Dish up some pasta into a bowl, put some of the ricotta sauce on top of the pasta, and finish off with some extra shavings of parmesan if desired.

1 head garlic
1 teaspoon olive oil

Steps:

  • Slice tomatoes in half. Slice top 1/2 inch off of garlic to expose cloves. Arrange garlic and tomatoes (cut side up) on foil-lined baking dish. Drizzle olive oil over garlic. (This will keep garlic from drying out and getting bitter.) Sprinkle with salt and pepper.
  • Roast in 350 degree oven for 50-60 minutes. Remove from oven and let cool for easier handling.
  • Pour juice out of tomatoes. Discard juice. Squeeze tomato pulp and roasted garlic into blender or food processor. Dicard tomato skins and garlic paper. Blend or process for 5-10 seconds to obtain a smooth consistency.

6 tablespoons extra-virgin olive oil
5 cups diced yellow onions, red onions or shallots
Fine sea salt
1 (28-ounce) can whole peeled, diced, crushed or puréed tomatoes
4 garlic cloves, thinly sliced
2 tablespoons tomato paste (optional)
4 to 5 basil stems (optional)
1/4 teaspoon red-pepper flakes (optional)

Steps:

  • Set a medium Dutch oven or similar pot over medium heat, and add 4 tablespoons olive oil. When the oil shimmers, add onions and a pinch of salt. Reduce heat to medium-low and cook, stirring regularly, until onions are lightly golden and tender, 16 to 18 minutes.
  • In the meantime, pour the tomatoes into a large bowl and use hands to crush, if using whole tomatoes. Pour about 1 1/2 cups water into the can and swirl to rinse any remaining purée off the sides. Add the water to tomatoes in bowl and set aside.
  • Once onions are soft and golden, add garlic and cook, stirring, until it threatens to turn golden, about 90 seconds. Add tomato paste, if using, and cook until color deepens, about 3 minutes. Add tomatoes and season with salt. If using, add basil stems and red-pepper flakes. Stirring regularly, allow sauce to come to a boil, then reduce heat to low, cover and simmer until sauce tastes savory and all raw tomato flavor is gone, about 45 minutes.
  • Taste and adjust seasoning with salt and add remaining 2 tablespoons oil. Use a hand blender to purée, pass through a food mill or let cool, then purée using a blender or food processor. Tomato sauce can be made 1 day in advance and refrigerated or frozen up to 3 months.

Steps:

  • Adjust an oven rack to the middle position and heat the oven to 475°F.
  • Combine the bread crumbs and oil in a 12-inch skillet and toast over medium heat, stirring often, until golden, about 20 minutes. Spread the bread crumbs in a shallow dish and cool slightly; when cool, stir in the parmesan.
  • In a second shallow dish, combine the flour, garlic powder, 1 tablespoon salt and 1/2 teaspoons pepper together. In a third shallow dish, whisk the egg whites and water together.

Lay the chicken on the wire rack.
  • Spray the tops of the chicken with the vegetable oil spray. Bake until the meat is no longer pink in the center and feel firm when pressed with a finger, about 15 minutes.
  • Remove the chicken from the oven. Spoon 2 tablespoons of the sauce onto the center of each cutlet; top the sauce with 2 tablespoons of the mozzarella. Return the chicken to the oven and continue to bake until the cheese has melted, about 5 minutes. Sprinkle with the basil and serve, passing the remaining sauce and parmesan separately.
  • FOR SIMPLE TOMATO SAUCE: Pulse the tomatoes in a food processor until mostly smooth, about ten one second pulses; set aside.
  • Cook the garlic, tomato paste, oil and pepper flakes in a medium saucepan over medium heat until the tomato paste begins to brown, about 2 minutes.
  • Stir in the puréed tomatoes and cook until the sauce is thickened and measures 2 cups, about 20 minutes.
  • Off the heat, stir in the basil and season with salt and pepper to taste. Cover and set aside until needed.

ULTRA SIMPLE PORCUPINE MEATBALLS IN TOMATO SAUCE

I looked around and all of the porcupine meatball recipes that have been posted include extra and (I think) unnecessary ingredients like Worcestershire sauce. This is the recipe my family has been using since I was a kid. They're very easy to make, taste great with ground beef or turkey, and freeze well. A couple of notes: if you use onion, chop it so it isn't only about double the size of the rice (or less). If it's too much larger it might not be as easy to form the meatballs and could be weird to bite in to. The rice you use should be uncooked Minute Rice, the kind that cooks in like 5 minutes or so.

2 (8 ounce) cans condensed tomato soup
2 lbs ground beef
1 cup rice
1/2 cup chopped onion (optional)
1 egg

Steps:

  • Preheat oven to 350 degrees.
  • Combine meat, rice, onion, egg and one can of soup.
  • Roll into meatballs that are approximately 2 to 3 inches in diameter and put in a 9x13 inch glass baking dish.
  • Combine second can of tomato soup with water (only about half as much as you would to make it into tomato soup) and pour half over the meatballs in baking dish.
  • Bake 45 minutes. Make sure you're keeping an eye on them. Cut one meatball in half to determine if it is cooked all the way through.
  • Heat remaining tomato soup and water mixture and pour over meatballs when serving.

RICOTTA GNOCCHI WITH SIMPLE TOMATO SAUCE

1 pound fresh ricotta cheese, drained (see Note)
2 large egg yolks
1 tablespoon kosher salt
1 teaspoon freshly grated nutmeg
About 2 1/2 cups 00 Tipo or all-purpose flour (see Note)
Tomato sauce
2 cups Stewed Tomatoes
1/2 cup extra-virgin olive oil, plus more for drizzling
1/4 cup unsalted butter
2 tablespoons chopped fresh flat-leaf parsley
Kosher salt and freshly ground black pepper

Steps:

  • 1. To prepare the gnocchi, gently mix the cheese, egg yolks, salt, and nutmeg in a large bowl until blended.
  • 2. Using your hands, fold the flour gradually into the cheese mixture. You may need more or less flour, depending on how well the cheese was drained. Work the dough until it forms a loose ball. Turn out onto a lightly floured surface and knead once or twice. Divide the dough into 4 pieces and roll each one into a long rope about 3/4 inch in diameter. Lightly dust each rope with flour to prevent sticking when you cut them into gnocchi.
  • 3. Line a baking sheet with parchment paper and lightly dust it with flour. Cut the ropes into 3/4-inch-long pieces and transfer each piece to the baking sheet.
  • 4. You may choose to leave the gnocchi in these pieces or go one step further by rolling each piece into a ball. Use your thumb, the back of a fork, or a small gnocchi paddle to make grooves on 1 side of the balls and a small indentation on the other.
  • 5.Transfer the gnocchi to the baking sheet and refrigerate, uncovered, for up to 24 hours. (Do not cover with a damp cloth or the gnocchi will soften.) After the gnocchi dry for 24 hours in the refrigerator, they can be transferred to a rigid plastic container and frozen for up to 1 week. Let them thaw before cooking.
  • 6. Fill a large saucepan with lightly salted water and bring to a boil over high heat. Gently drop the gnocchi into the water and cook for about 2 minutes, or until the gnocchi bob to the surface. When they do, cook for 1 minute longer and then drain, reserving about 1/4 cup of the pasta water.
  • 7. To prepare the tomato sauce, heat the tomatoes over medium-high heat. Thin or loosen with a little pasta water. Stir in 1/2 cup of olive oil and the butter until the butter is incorporated. Toss the gnocchi with the tomato sauce. Stir in the parsley and season to taste with salt and pepper.
  • 8. Divide the gnocchi among 4 serving plates and drizzle with olive oil.

SIMPLE TOMATO-AND-ONION SAUCE (SOUTHERN AFRICAN)



Simple Tomato-And-Onion Sauce (Southern African) image

Posted for "Looking to Africa", African Cooking Forum, Jan 2009. This is an example of the simple sauce which is made to serve as a "salsa" or topping for cornmeal porridge or "pap", a staple food, in almost all of Africa except the far eastern and western parts. Of course there are many variations, and if you have any leftover gravy, add it to this basic sauce while it cooks. If you can spare a handful of ground beef, that goes in too. For many rural people "pap en sous" (thick cornmeal mush and this salsa) might be their entire meal. As enough "pap" is made, tummies do get full. This recipe is smallish and will serve 3 - 4. Easily doubled, and exact ingredients do not matter.

  • In a pot, fry the onion in oil, fat or lard. Stir often, until onion turn pale brown.
  • Add the tomatoes and rest of ingredients.
  • It's best to cover the pot and simmer until nicely thickened, or leave open and stir often.
  • Add any extras you like while it cooks, such as gravy or a little ground meat. To thicken and brown the simple sauce, sauce powder (like Bisto) is often stirred into a little lukewarm water, and added.
  • You can also add a few dashes of Worcestershire sauce.
  • Serve over pap/sadza/ugali (and there are many other names for it in the various languages!) Of course, if it is available, this would be served with a meat stew or grilled meat. If meats are not on the menu, this is the meal. Sometimes spinach or swiss chard is added to the plate as a side veggie.

Olive oil
2-3 cloves garlic, minced
1 tsp dried oregano or chopped fresh basil stalks
1 whole red chili
28 oz can (800 gr) whole plum tomatoes (good-quality Italian ones are best)
Salt and pepper
1 tsp red wine vinegar

Steps:

  • 1. In a medium saucepan over medium heat, add some olive oil and fry the garlic, oregano (or basil stalks) and whole red chili. Pierce the red chili first so it doesn't explode. It will give a subtle heat to the sauce. 2. Saute just a minute or two until fragrant then add the canned tomatoes. Do not mash the tomatoes, as the seeds can be bitter and if you chop them up right away the sauce won't be as sweet as it should be. 3. Lightly season with salt and pepper, turn the heat down to low and let simmer for 30 minutes. Remove the chili. 4. Break and mash the tomatoes up with a spoon, season the sauce more carefully with a bit more salt and pepper, and add a tiny swig of red wine vinegar just to give the sauce a little twang. It is now ready to serve with pasta, or stir in some additions to take this sauce forward: Spicy Arrabiatta - start the tomato sauce off by adding a few more whole fresh chili's. After the sauce has simmered for 15 to 20 minutes, remove the chili's, chop them up and add back as much as you need to give your arrabiatta the desired heat. Tomato Basil - a real crowd-pleaser can be made by taking the tomato sauce off the heat when it's ready and adding a big handful of torn fresh basil, a nice swig of balsamic vinegar, a good knob of butter and a handful of grated Parmesan. This is fantastic with pasta like rigatoni or tagliatelle, or with grilled meats and fish. Puttanesca - simmer the sauce gently with a handful of good pitted and squashed olives, a couple of anchovies and a handful of capers. You can take this in a different direction by flaking in a can of tuna when the sauce is ready. Tagliatelle, Spinach & Goat Cheese - Cook tagliatelle in a pot of salted boiling water while the sauce is simmering. Just before the pasta is ready, stir in a large handful of spinach into the tomato sauce. Drain the pasta saving a bit of the pasta water, and toss with olive oil and the reserved water, then pour your spinach and tomato sauce over top. Toss and top with grated Parmesan and crumbled goat cheese. Fish or Chicken, Olives and Basil - Pour your warmed tomato sauce into a small baking pan and put a couple of fish fillets on top. If you prefer to use chicken breasts, brown them first in a little oil before placing them on top. Sprinkle with some pitted olives, capers and basil leaves and top with a little torn mozzarella, and place in the oven at 425 degrees for 15 minutes until the fish is cooked. If using chicken breasts they will need about 20 minutes. Sausages Baked in Tomato Sauce - Pour your warmed tomato sauce into a baking pan or oven proof dish. Take some nice sausages, toss them in a little olive oil, then place them on top of the sauce and cook at 425 degrees for about 30 minutes or until the sausages are golden and crisp on top. Throw whole basil leaves on top to serve. The sausages will be nice and juicy on the bottom from the sauce and lovely and crisp on top. To turn it into a cassoulet, add a can of beans such as cannellini, flageolet, haricot or chickpeas and chunks of bacon before you bake.

A lovely pasta dish from Jamie Oliver. The cognac gives the sauce a nice touch. You may flame the sauce if you wish, but it is also nice without the flaming. There are three variants at the end of the directions.

8 plum tomatoes
sea salt
fresh ground black pepper
4 tablespoons butter
4 tablespoons extra virgin olive oil
300 g prawns (small ones, peeled) or 300 g shrimp (10 1/2oz)
1 garlic clove, peeled and finely chopped
1 lemon (zest and juice)
cognac (or Vecchia Romana, 2 shot glasses)
150 ml double cream (5 1/2floz)
400 g tagliatelle pasta noodles (dried or fresh, 14oz)
1/3 cup parsley, roughly chopped

Steps:

  • Blanch and skin the tomatoes (score tomatoes with one or more criss cross, plunge into boiling water for ca 30s until skin begins to peel away, cool in cold water, remove skin).
  • Half tomatoes and chop into small pieces.
  • Put a pan of salted water on to heat for the pasta.
  • Put the butter and olive oil in a second pan, and fry the prawns, garlic, lemon zest and tomatoes for a couple of minutes.
  • Add the booze and allow to flame if you like. If you want to flame it, it helps when the booze is warm. The flame should go out after about 30seconds, so don't worry.
  • Add the cream, allow to simmer gently for a couple more minutes and then remove the pan from the heat.
  • Season the sauce carefully.
  • Put the pasta into the boiling water - fresh will need only 3 minutes and dried will need to be cooked according to the packet instructions.
  • If your sauce has cooled down then reheat it now.
  • When the pasta is cooked, drain it in a colander and then toss with the parsley in the pan in which it was cooked.
  • Check the seasoning, then divide on to your serving plates with the sauce on top.
  • Serve straight away, telling your guests to stir the pasta up in their bowl every so often to keep the pasta moist.

  • Crumble over a little ricotta or feta cheese - just a little bit - both of these cheeses have a nice texture, go really well with prawns and make it look great.

4 garlic cloves, peeled and finely sliced
1 fresh red paprika, halved, deseeded and finely sliced
1 small bunch fresh basil, leaves picked
800 g whole tomatoes, tinned
1 tablespoon pickled capers
1 teaspoon sea salt
1 teaspoon black pepper
500 g fresh lasagna sheets
parmesan cheese, grated

Steps:

  • Sauté garlic and red paprika strips in hot olive oil over a medium heat until lightly coloured.
  • Add most of the basil, stir and wait few seconds until wilted.
  • Add the whole tomatoes and break them up into smaller chunks with a wooden spoon. Bring the sauce to the boil and simmer for about 5 minutes.
  • Stir in capers, sea salt and pepper. Set aside and keep warm.
  • On a lightly floured work surface, cut the lasagne sheets into strips with a knife or a pastry wheel.
  • Cook the pasta in lots of boiling water for a few minutes until just al dente. Drain and stir into the warm sauce.
  • Sprinkle with grated Parmesan cheese and some basil leaves and serve immediately.

1 small onion, chapped
2 garlic cloves, chopped
1 stalk celery, chopped
1 carrot, chopped
1 (32 ounce) can crushed tomatoes
4 -6 basil leaves
1/2 teaspoon sea salt
1 teaspoon fresh ground black pepper
5 tablespoons unsalted butter (optional)
2 bay leaves

Steps:

  • In a large pot, heat oil over medium-high heat.
  • Add onion and garlic and saute until soft and translucent--about 2 minutes. Add celery and carrot and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil and bay leaves and reduce the heat to low. Cover the pot and simmer for 1 hour or until thick. Remove bay leaves and taste for seasoning. If sauce tastes too acidic, add unsalted butter, 1 tablespoon at a time, to round out the flavour.
  • I like my sauce a little spicier, so I add a few red pepper flakes.
