2 chicken breasts, sliced
1 lb cooked andouille sausage
4 tablespoons olive oil
3 cloves garlic, minced
3 bell peppers, diced
1 medium onion, diced
6 cups milk, whole preferred
1 lb fettuccine pasta, uncooked
¾ cup parmesan cheese, plus more for serving
3 tablespoons fresh parsley, chopped, plus more for serving
1 teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1 teaspoon pepper

Steps:

  • In a small bowl, combine all spices for the cajun seasoning and mix together. Set aside. Store any extra in an airtight container for future use.
  • In a heavy bottom pot (such as a Dutch oven), heat 2 tablespoons of olive oil over medium heat.
  • Add the sliced chicken and 2½ tablespoons of the prepared cajun seasoning.
  • Add the andouille sausage and cook until the chicken is no longer pink, about 4-5 minutes.
  • Remove the meat from the pot and add the remaining olive oil.
  • Add the garlic, diced peppers and onions and cook until the onions are transparent and softened, about 5 minutes.
  • Add the milk and stir so that the seasoning is incorporated into the liquid.
  • Turn the heat to high and bring to a boil.
  • Add the uncooked fettuccine, stirring constantly until the noodles are al dente, about 10 minutes.
  • On low heat, add the meat back in and stir so that it's evenly incorporated.
  • Add the cheese and parsley, and stir. Remove from the heat.
  • Enjoy!

1 cup(s) heavy cream
5 ounce(s) parmesan cheese, grated (more if desired)
- salt (to taste)
- white pepper (to taste)

Steps:

  • Prepare fettuccine according to package directions.
  • In a small sauce pan slowly warm heavy cream and butter until butter is melted.
  • Once butter has melted gradually stir in the cheese, stirring constantly. Be careful not to add too much cheese at once to prevent clumping.
  • Stir salt and pepper into sauce, and toss with cooked pasta. Serve hot.

This is a recipe that I created by modifying my mother's recipe. My boyfriend is a fettuccine Alfredo connoisseur and he scrapes the pan every time! I get nothing but rave reviews when I make this dish. I must warn you, this recipe is not for the health conscious. Enjoy!

24 ounces dry fettuccini pasta
1 cup butter
¾ pint heavy cream
salt and pepper to taste
1 dash garlic salt
¾ cup grated Romano cheese
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted; this will thicken the sauce.
  • Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

3 tablespoons butter
1/2 cup finely chopped shallots
5 garlic cloves, minced
2 cups heavy whipping cream
1-1/4 cups shredded Asiago cheese
1 cup grated Parmesan cheese, divided
3/4 cup grated Romano cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1 package (12 ounces) uncooked gluten-free pasta

Steps:

  • In a large saucepan, heat butter over medium heat. Add shallots; cook and stir until tender, 2-3 minutes. Add garlic; cook 1 minute longer. Add cream; cook and stir until heated through. Stir in Asiago, 1/2 cup Parmesan, Romano cheese, salt and pepper; bring to a boil, stirring constantly. 1/2 cup heavy cream
1/2 stick unsalted butter, cut into pieces

  • Cook fettuccine in a pasta pot of boiling salted water (2 tablespoons salt for 6 quarts water) until al dente. Reserve 1/2 cup cooking water, then drain pasta.

This recipe came to The Times in a 2004 article about Elaine Kaufman, the founder and proprietress of the famed New York restaurant and celebrity hot spot that bore her name and where this dish was served. There is nothing fancy or complicated about it - it's glorified macaroni and cheese, really - but it is delicious and deeply satisfying. (Fun fact: Jackie O was a fan.)

2 tablespoons butter
1 small clove garlic, finely chopped
1 1/2 cups heavy cream
1 large egg yolk
1 pound fresh fettuccine
1 cup freshly grated Parmigiano-Reggiano cheese
Freshly ground pepper to taste

Steps:

  • Bring 6 quarts generously salted water to a boil.
  • While the water heats, melt the butter in a large, deep skillet over medium-high heat. Add garlic; saute until fragrant and sizzling, about 2 minutes. Whisk the cream with the egg yolk in a bowl until blended; pour into the garlic butter. Reduce heat to medium-low; stir until hot but not boiling. Keep warm over low heat.
  • Meanwhile, cook the pasta, partially covered, until al dente. (The pasta will float when it's done.) Drain in a colander, shaking out excess water, but reserve a little cooking water. Pour hot pasta into the cream mixture and toss to coat (still over low heat). Add the cheese and keep tossing gently until cream is mostly absorbed. Season with salt and pepper. If sauce is absorbed too much, toss with a little pasta water. Serve in warm bowls.
