SIMPLE CRUSTLESS SWEET POTATO PIE
This recipe is pretty versatile. I used a can of Farmer's Market sweet potato puree, and you can easily swap out for a can of squash puree or pumpkin. Unsweetened soymilk does just fine in this too, I just happened to have vanilla on hand and think that made it a little sweeter.

Steps:
- Beat eggs, then the sugar and flour.
- Add everything else and beat together.
- Grease a 9" pie pan with cooking spray, then pour the mixture inches Bake at 400F for 35-40 minutes.
SIMPLE SWEET POTATO PIE
This recipe belonged to my Grandmother. She was a simple home cook. She did not care for "spicy" spices, so when she created her sweet potato pie, all you tasted was the yummy sweet potato. This recipe has been a family favorite for over 50 years and it continues to be loved by the newer generations.

Steps:
- 1. In a small bowl, beat egg whites until stiff. In another bowl, cream butter and potatoes. Add sugar and egg yolks to the potato mixture and mix well. Fold in egg whites. Pour into a pie crust. Bake at 400 degrees for 30 minutes.
- 2. When cooled serve with fresh whipped cream.
