We always have a lot of extra peppers in the garden. So I prepare a bunch of these stuffed peppers, then freeze them for baking later. That way, we can enjoy them year-round. They're always a treat, no matter how often I serve them!

8 medium green peppers, tops and seeds removed
1 pound ground beef
1 cup chopped onion
1 garlic clove, minced
2 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon pepper
2 cans (10-3/4 ounces each) tomato soup, undiluted
2 cups shredded cheddar cheese
1-1/2 cups cooked rice

Steps:

  • In boiling salted water, cook peppers for 3-5 minutes. Remove and set aside. In a skillet, cook beef, onion and is tender. Drain any fat. Add seasonings and soup; simmer, uncovered, for 10 minutes. Stir in cheese; cook and stir until melted. Stir in rice. Fill peppers; place in a shallow baking dish. Bake at 350° for 20 minutes.

6 large green peppers
1 lb ground beef
1/3 cup chopped onion
3 1/2 teaspoons salt
1/4 teaspoon pepper
1/2 teaspoon seasoning salt
1 minced garlic clove
1 lb chopped fresh tomato
1/2 cup water
1/2 cup uncooked brown rice
1 teaspoon Worcestershire sauce
2 cups shredded cheddar cheese (divided)
1 teaspoon sugar

Steps:

  • Preheat oven to 350°F.
  • Cut the tops off the peppers and discard seeds and membranes.
  • Boil peppers for 5 minutes. Remove and stand upright in a 13x9 casserole dish.
  • Generously sprinkle inside of each pepper with salt (1/2 tsp or more if you like).
  • Cook ground beef and onions until meat is browned.
  • Season beef and onion mixture with remaining salt, pepper, garlic, and seasoned salt.
  • Add tomatoes, water, rice, sugar, and Worcestershire sauce and stir.
  • Cover and simmer until rice is tender (approximately 15-30 minutes).
  • Stir in 1 cup shredded cheese.
  • Stuff peppers with the meat and rice mixture.
  • Bake uncovered for 20 minutes at 350°F.
  • Top peppers with remaining cheese and bake and additional 5-10 minutes.

1 ¼ pounds ground beef
3 cloves garlic, minced
1 onion, diced
1 (15.5 ounce) can diced tomatoes
1 cup shredded Cheddar cheese
1 ½ cups chicken broth
6 red bell peppers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large nonstick skillet over medium-high heat. Stir in the ground beef, and cook until brown and crumbly. Pour off excess grease, then stir in garlic, onion, and tomatoes. Cook and stir until the onions soften just a bit, about 3 minutes. Stir the cheese into the mixture, and set aside.
  • Cut the tops off of the peppers, and remove the veins and seeds. Fill each pepper with the ground beef mixture and pour in some of the chicken broth. Place into the cups of a muffin tin, and replace the tops.
  • Bake in preheated oven 30 minutes.

I wanted to make stuffed peppers at the cottage without taking a lot of ingredients and came up with this. Great for lunch or as a side dish and easily doubled. Meatless.

2 large red peppers or 3 medium red peppers
1 (198 g) package black bean and rice mix (such as Zatarain's)
2/3 cup old cheddar cheese, grated
1 (10 ounce) can condensed tomato soup

Steps:

  • Prepare beans and rice according to package directions. Let stand until most of the liquid is absorbed.
  • Preheat oven to 350 degrees.
  • Wash and dry peppers. Slice off the stem end and remove membrane and seeds.
  • Stuff each pepper halfway with beans and rice, sprinkle in 1/4 of the cheese, fill to the top with beans and rice and sprinkle in another 1/4 of the cheese. Press with the back of a spoon as you fill to compact. Replace the stem ends onto the peppers.
  • Stand up in an ovenproof baking dish and spoon tomato soup over. Do not reconstitute the soup.
  • Bake for 40 - 50 minutes, until peppers are tender.
  • Note: Not a big deal if the peppers won't stand up. Use a couple of toothpicks to hold the stem "lid" in place.
  • Prep time doesn't include time to make the beans and rice - 25 minutes.

This is a favorite of ours, originally printed from Cooks.com, which we've adjusted to our liking. We prefer to use more, smaller peppers, so you get more pepper to filling ratio. Serve with a good crusty bread. The original suggests a dollop of sour cream.

1/2 cup uncooked rice (prefer brown rice)
1 lb ground pork
1 lb ground beef
2 teaspoons paprika paprika (or 1 tsp. regular paprika and 1 tsp. half-sharp (hot)
3 teaspoons salt
2 teaspoons black pepper
3 tablespoons flour
3 tablespoons butter
6 -8 bell peppers (possibly 10 if very small)
2 (46 ounce) cans tomato juice

Steps:

  • Parboil rice and mix with pork, beef, spices, salt and pepper. Choose well formed peppers. Cut off tops of peppers, wash and seed. Tops taken off in rings can be used as "bases" for any peppers that do not sit well in the pot. Stuff peppers tightly with meat mixture. Set peppers aside. Roll any left over meat into meat balls.
  • In a large heavy pot, a 4 quart or greater dutch oven works well, make a light roux by melting the butter and stirring in the flour. Stir and cook flour until lightly browned. Sir in tomato juice. Add peppers to pot making certain they are submerged or at least well doused with the sauce. (Add any meat balls to pot.).
  • Bring to a bubbling simmer and cook 2-3 hours, stirring occasionally, to be sure peppers don't burn on the bottom. Serve with crusty bread and if you want, a dollop of sour cream. These are very good made a day ahead and they freeze very well. (We often find we have a great deal of sauce left over and if anyone can come up with a use for it, please let me know.).

Make these moreish rice-stuffed peppers for an easy family dinner. Add mangetout, grated carrot and peri peri seasoning, or use any veg and spices you have

3 large peppers
250g pouch microwaveable basmati rice
1 tsp olive oil, plus extra for drizzling
1 large carrot, coarsely grated
30g mangetout (or use any other vegetables you may have), trimmed and halved
1 tsp spice mix f your choice, plus a pinch (I use peri-peri seasoning)
sweet chilli sauce or hot sauce, for drizzling (optional)

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Cut away the tops from the peppers (reserving these for later, including the stalks), then scoop out the seeds using a spoon and discard.
  • Cook the rice following pack instructions. Heat the oil in a medium frying pan and cook the carrots, mangetout and spice mix for 5 mins until the vegetables have softened, then stir in the rice.
  • Drizzle the hollowed-out peppers with a little olive oil and sprinkle over a pinch more of the spice mix and plenty of seasoning. Put the peppers cut-side up on the baking tray and spoon the rice mixture into the hollows, packing it in with the spoon. Drizzle with a little chilli sauce or hot sauce, if you like, then put the reserved pepper pieces back on top. Cook for 15-25 mins in the oven, or until the peppers are soft and tender but not collapsing.
