1 cup dried split peas
5 cups cold water
¼ cup diced onion
¼ cup thinly sliced celery
1 tablespoon ketchup
1 tablespoon extra-virgin olive oil
1 pinch coarse salt
2 cloves garlic, crushed, or more to taste
3 bay leaves, or more to taste
1 cup sliced carrots, or more to taste
ground black pepper to taste

Steps:

  • Inspect peas, discarding any stones, foreign matter, or unattractive peas. Place peas in a fine mesh strainer and rinse under cold running water to remove pea dust.
  • Transfer drained peas into a pot with a lid and a heavy, heat-diffusing bottom. Add water, onion, celery, ketchup, olive oil, salt, garlic, and bay leaves. Cover and bring to a boil over medium-high heat. Reduce heat to a very slow simmer. Cook, stirring and scraping the bottom every 7 to 12 minutes, until peas have largely fallen apart, about 1 1/2 hours.
  • Stir carrots into the soup. Cook, covered, stirring often, until peas are completely dissolved and soup is thick, about 1 1/2 hours more. Remove and discard bay leaves. Season with pepper.

It was a nasty, winter night and I was not about to bundle up and go food shopping. My pantry and fridge were looking rather anemic, but I figured I could come up with something that would satisfy my need for comfort food and warm me up from the chill coming through my old windows. A few fresh vegetables and some cans in my pantry did the trick. Sometimes you think this type of recipe will be a one time meal, but not so this time.I'll be making this again for sure.

2 tablespoon(s) unsalted butter
2 cup(s) chopped celery
1-1/2 cup(s) carrots, diced
1 - large onion diced
2 clove(s) fresh garlic finely diced
2 teaspoon(s) old bay seasoning
4 ounce(s) dried split peas
4 ounce(s) raw barley
1 can(s) 14.5 oz low sodium, fat free chicken broth
1 can(s) 10.34 oz fat free condensed cream of chicken soup
1 can(s) 14.5 water or more if needed
- salt and pepper
1 teaspoon(s) sriracha sauce

Steps:

  • In large sauce pan over low heat add butter and melt. Now add the celery, carrots, onion, garlic, and Old Bay Seasoning. Cook until vegetables become soft. Add chicken stock and split peas. Raise heat to a simmer and cook covered on low 30-40 minutes. Even though the pot is covered, the broth will mostly evaporate.
  • While the split peas are cooking make the barley in a separate pot. Add barley to boiling water and cook about 40 minutes. When time is up, drain barley and add to soup pot with split peas.
  • Add the can of cream of chicken soup and water. Stir until combined. Add salt and pepper and sriracha sauce. Heat to simmer and serve. This is a creamy soup that you'll make over and over again. So simple, inexpensive, hearty and delicious!

The long cooking time and use of homemade chicken broth is what makes this split-pea soup so flavorful. This recipe is the result of much experimentation and years of trying to fix my mom's recipe for split pea soup! Sometimes, instead of simmering this on the stove I'll let it simmer in a Crockpot all day long. Putting some of this soup in a thermos makes the perfect lunch in between classes or at work; you don't even realize you're eating a lot of vegetables and the split peas make it high in fiber. A very nutritious choice!

2 tablespoons olive oil
1 cup chopped onion
3/4 cup chopped celery
3/4 cup chopped carrot
1 cup chopped potato
1 cup finely chopped up ham
1 cup dried split peas
5 cups homemade chicken broth
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • 1. Saute onions with olive oil in a large stock pot until translucent on medium heat, which will take about 8 minutes.
  • 2. Add celery, carrots and potato and saute 3-4 more minutes.
  • 3. Pour in chicken broth and add split peas and ham. Uncovered, bring to a boil.
  • 4. Once boiling, cover and turn heat down to low. Let the soup simmer for 3-4 hours. The soup is done when the split peas have broken apart and are evenly mixed throughout the soup.
  • Notes: The longer you cook the soup, the better and more developed the flavor gets--sometimes I'll transfer it to a crock pot and let it simmer in there all day. If you like a smooth soup, blend finished soup with an immersion blender or in a food processor in small batches (large batches will make a mess!) If you like a thicker soup, add a small hand full of split peas to the 1-cup listed.

This is simplicity at its best. Served with cornbread and brownies, you get pure comfort food. I add extra basil and if you don't like split pea soup, substitute dried navy beans for split peas. Soak the navy beans overnight and increase first cook time to 2 hours and then stir in celery and carrots and continue to cook as directed. Also I add extra vegetables. Enjoy!

This is so easy..just wash the peas,dice the veggies, and toss in the pot with spices and ham hocks. (A meaty ham bone can be substituted for the ham hocks) Prepare early, simmer 4 hours, and enjoy. This gets better and better everyday after being in the fridge. This recipe came from an old church cookbook I found years ago. I recommend stirring the pot whenever you pass by the stove....it gets smoother and smoother with every stir.

2 1/2 cups dried split peas
2 cups chicken broth
8 cups water
1 medium onion, diced fine
1 large carrot, diced fine
1 -2 celery rib, diced fine
2 smoked ham hocks
2 potatoes, diced fine
1 large garlic clove, minced
1 whole clove
1 bay leaf
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Rinse split peas to remove any soil.
  • Combine peas and all other ingredients in a large pot and bring to a boil.
  • Simmer, covered for 4 hours or more, until peas are thoroughly cooked,stirring often to combine the ingredients.
  • (You may add another cup of water if the soup seems too thick).
  • Remove the bay leaf and the clove(if you can find it).
  • Take out the ham hocks or hambone and remove the meat from the bone,and return the meat to the soup.
  • Serve and enjoy.

2 qt water
2 medium onions, chopped
2 medium carrots, chopped
8 oz ham, chopped
2 large vegetable bullion cubes
1 tsp salt
1/4 to 1/2 tsp pepper, to taste

Steps:

  • 1. Combine all ingredients in a 4-6 quart crockpot/slow cooker.
  • 2. Cover and cook on low 8 hours
  • 3. Puree' to desired smoothness in batches in blender or use an imersion wand to blend to taste.
