SIMPLE CHOCOLATE STRAWBERRY SHORTCAKE



Simple Chocolate Strawberry Shortcake image

A chocolate version of everybody's favorite dessert.

2 (1 ounce) squares unsweetened chocolate, chopped
1 ½ cups all-purpose flour
½ teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup white sugar
⅓ cup margarine
1 cup sour milk
2 tablespoons orange liqueur
1 (16 ounce) package frozen whipped topping, thawed
1 quart fresh strawberries
2 (1 ounce) squares semisweet chocolate, chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease and flour 2 (9 inch) pans. In the top of a double boiler, heat unsweetened chocolate, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm.
  • In a large bowl, combine flour, baking powder, baking soda, salt and sugar. Cut in margarine until mixture resembles coarse crumbs. Blend in sour milk and melted unsweetened chocolate. Divide batter into prepared pans.
  • Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool. Sprinkle cakes with orange liqueur.
  • Reserve 8 to 10 strawberries and slice the rest. Place one cake on a serving plate, top with half of the sliced strawberries and half of whipped topping. Cover with second layer, top with remaining strawberries and whipped topping. Garnish with whole strawberries. In the top of a double boiler, heat semisweet chocolate, stirring occasionally, until chocolate is melted and smooth. Drizzle over the strawberries.

I don't think this really qualifies as a recipe, more like combining a few different items for a super easy, delicious dessert. Throw the strawberries in the fridge before you start making dinner and then put it all together in just a couple minutes after the meal. Big hit with the husband...

8 ounces fresh strawberries, hulled and sliced lengthwise
1 tablespoon sugar (recommended -- Vegan Cane Sugar)
1 tablespoon lemon juice
1 cup whipped topping (recommended -- Tru Whip, all natural whipped topping)
4 slices angel food cake
2 sprigs mint (to garnish) (optional)

Steps:

  • In a ceramic bowl (retains the cold) sprinkle sugar and lemon juice over strawberry slices, mix until combined.
  • Cover bowl with saran wrap and place in the refrigerator for about one hour.
  • Place one slice of angel food cake on plate, top with 2 oz strawberry mixture and 1/4 cup of whipped topping. Place second slice of cake over whipped topping, top with 2 oz strawberries and 1/4 cup of whipped topping. Garnish with mint sprig if desired.
  • Repeat with second shortcake.

This is based off of the "Original Strawberry Shortcake Recipe" that I have also posted. I served it with an un-sugared mixture of cut-up strawberries and blueberries and topped it with canned whipped cream. As easy at it gets, and a lot less calories too!

2 cups all-purpose flour
1/4 cup Splenda sugar substitute
1 tablespoon baking powder
1/4 teaspoon salt
3 tablespoons cold butter, cut into chunks
1 large egg
3/4 cup skim milk

Steps:

  • Preheat the oven to 375 degrees.
  • Combine the flour, Splenda, baking powder, and salt in a medium bowl.
  • Cut the butter into the dry ingredients with a pastry blender or a large fork.
  • Whisk the egg into the milk.
  • Make a well in the center of the dry ingredients and pour the wet mixture into the well.
  • Mix with a fork until the ingredients just stick together.
  • Spread the mixture evenly into a greased round cake pan or square baking dish.
  • Bake for 15 to 20 minutes until golden on top and a toothpick inserted in the center comes out clean.
  • Serve with fruit, jam, whipped cream, chocolate sauce or whatever else suits your fancy.
