2 cups hot mashed potatoes
4 ounces PHILADELPHIA Cream Cheese, cubed
1 cup KRAFT Shredded Cheddar Cheese, divided
2 cloves garlic, minced
4 cups frozen mixed vegetables, thawed
1 cup beef gravy

Steps:

  • Preheat oven to 375 degrees F. Brown meat in large skillet. Meanwhile, mix potatoes, cream cheese, 1/2 cup of the shredded cheese and the garlic until well blended.
  • Drain meat. Return to skillet; stir in vegetables and gravy. Spoon into 9-inch square baking dish; cover with potato mixture and remaining 1/2 cup shredded cheese.
  • Bake 20 min. or until heated through.

1/2 cup chopped onion
1 garlic clove, minced
1/4 cup water
2 tablespoons taco seasoning
1 cup shredded cheddar cheese, divided
1-1/2 cups leftover or refrigerated mashed potatoes, warmed

Steps:

  • In an ovenproof skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add garlic; cook 1 minute longer. Stir in water and taco seasoning; heat through. 4 large potatoes, peeled and cubed
1 tablespoon butter
1 tablespoon finely chopped onion
¼ cup shredded Cheddar cheese
salt and pepper to taste
5 carrots, chopped
1 tablespoon vegetable oil
1 onion, chopped
1 pound lean ground beef
2 tablespoons all-purpose flour
1 tablespoon ketchup
¾ cup beef broth
¼ cup shredded Cheddar cheese

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter, finely chopped onion and 1/4 cup shredded cheese. Season with salt and pepper to taste; set aside.

  • Heat oil in a large frying pan. Add onion and cook until clear. Add ground beef and cook until well browned. Pour off excess fat, then stir in flour and cook 1 minute. Add ketchup and beef broth. Bring to a boil, reduce heat and simmer for 5 minutes.
  • Spread the ground beef in an even layer on the bottom of a 2 quart casserole dish. Next, spread a layer of mashed carrots. Top with the mashed potato mixture and sprinkle with remaining shredded cheese.
  • Bake in the preheated oven for 20 minutes, or until golden brown.

I took something I have been cooking for years and cut the portion size down for two people with a bit of leftovers. This recipe would fit into a bread loaf pan and should feed 3 hungry people.

Number Of Ingredients 15

1 1/2 c prepared instant mashed potatoes or 3/4 lb potatoes prepared with 3 tbsp butter and 1/2c milk
salt and pepper
1/2 lb hamburger or 1/4 hamburger, 1/4 ground turkey
1/2 Tbsp oil
1 clove garlic, minced or grated
1/2 medium onion, roughly chopped
1 pkg brown gravy (dry mix)
1/2 c water
1 stalk celery, chopped
1 small carrot, shredded
1/2 c frozen peas (thawed, any excess water disgard)
1/4 c canned kernal corn, or frozen corn thawed
1 c shredded cheese (mozzarella, cheddar, parmesan, colby)
1 1/2 tsp dried parsley (about 3 good shakes)
cooking spray

Steps:

  • 1. Preheat to 350° F.
  • 2. Prepare instant potatoes according to directions to create about 1 1/2 c prepared potatoes. Add 1/2 minced garlic and set aside.
  • 3. In a medium pan, add oil and brown meat. Add onions and the remaining 1/2 garlic and cook until translucent, but do not burn garlic. Add dry gravy packet and 1/2 c. water into a separate bowl and whisk together. Add mixture to meat, stirring until heated through and thickens. Spray loaf pan with non-stick spray. Add beef, onions and gravy to the bottom of a lightly sprayed bread loaf pan. On top of meat, sprinkle on mixture of peas, bell pepper, celery, carrot and corn. Top this with prepared potatoes either with a pastry bag or dollop potatoes on top and smooth out. Sprinkle cheese on top of potatoes and add a few shakes of dried parsley flakes. I do not season with any additional salt as the gravy packet has salt, but I do add pepper.
  • 4. Cook in the oven for 20 minutes or until cheese is melted.

This recipe is great if you happen to celebrate Thanksgiving with family or friends and you get sent home with a bunch of leftovers. It's like having a Thanksgiving meal all over again.

Nonstick cooking spray
1 tablespoon olive oil
3/4 cup diced carrots
1/2 cup diced onion
1 garlic clove, minced
1 1/2 cups shredded or diced cooked turkey (I boiled a 1-pound turkey breast)
1/2 cup frozen peas
1 tablespoon all-purpose flour
1 tablespoon tomato paste
1 cup chicken stock
1 teaspoon Worcestershire sauce
2 sprigs thyme, leaves stripped and stems discarded
Salt and ground black pepper

1 2/3 cups mashed potatoes (I boiled 2 small red potatoes, then mashed it with 1/4 cup milk and 1/4 teaspoon garlic powder)

Steps:

  • Preheat the oven to 375 degrees F and lightly spray two 16-ounce oven-safe ramekins with nonstick cooking spray. Set aside.
  • Heat up the olive oil in a large skillet over medium-high heat. Add the carrots, onion and garlic and cook until softened and fragrant, 5 to 7 minutes.
  • Add in the turkey and peas and stir to combine. Sprinkle the flour over the mixture and stir to incorporate, then stir in the tomato paste. Gently add the chicken stock and Worcestershire sauce. Stir and let the mixture thicken, about 5 minutes. Stir in the thyme leaves and season with salt and pepper. Remove the mixture from the heat.
  • Divide the mixture evenly between the ramekins, then divide the mashed potatoes evenly and spread on top of the mixture. Place the ramekins on a baking sheet for easier transfer and bake, uncovered, for 20 minutes. Cool 10 to 15 minutes, then serve and enjoy!
