ROASTED BABY POTATOES
Quick and easy recipe for roasted baby potatoes. Bake them at the same time as you cook your main dish! Can also be used as a quick appetizer! These were so good you don't even need butter or salt to taste. Made the mistake of having them done before the main dish and they were almost all gone by the time dinner started!

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Combine potatoes, olive oil, garlic, rosemary, sea salt, and pepper in a bowl. Toss until potatoes are covered and garlic is evenly distributed. Transfer to a rimmed baking sheet.
- Bake on the bottom rack of the preheated oven, shaking every 5 minutes to prevent burning, until fork-tender, about 20 minutes.

EASY ROASTED SWEET POTATOES
This is a great vegetable to accompany almost any meal and a great company dish. Does not taste like traditional sweet potatoes. I got this recipe from "Healthy Choices" cookbook and I tweaked it a bit.

- Dice peeled potatoes into 1 inche squares.
- Place potatoes in baking dish and roll in oil and seasonings.
- Try and keep potatoes in a single layer.
- Bake at 400 for 45 minutes, turning potatoes with spatula every 15 minutes.
- ** You can also use baking or red potatoes.

SIMPLE ROASTED SWEET POTATO BABY FOOD (STAGE 1/2)
This is one of my daughters favorites and is super easy to make. Roasting the sweet potatoes enhances the sweetness and make them delicious. This is a terrific starter food and a definite first food.

Steps:
- Heat oven to 400 degrees Faranheit.
- Wash potatoes and place on sheet pan.
- Bake in oven about one hour or until the potatoes are tender all the way through.
- Allow to cool.
- Peel skins from potatoes and remove any eyes or black spots.
- Place potatoes in blender or food processor or container suited for stick blender or potato masher.
- Begin pureeing potatoes.
- Slowly add water a little at a time until the potatoes reach a consistency that is suitable for your baby. Younger babies will need thinner consistencies, especially when first starting out, while older babies can handle thicker consistencies. You may not use all of the water, or may need to use a little more.
- Voila!! Delicious, fresh, roasted sweet potato for your baby!
- Maybe be stored in small containers in refrigerator for up to three days.
- For longer storage, fill ice cube trays with sweet potato and freeze. Remove trays from freezer for a few minute then pop out cubes, place in storage bags, and return to freezer. Cubes are equivalent to 1 ounce portions and will keep for three to six months, simply take out and thaw cubes as needed.
- Variations: As baby gets older and more accustomed to food, water may be replaced with other flavorful liquids such as vegetable or chicken stock and fruit juices or purees. You may also begin to add seasonings such as cinnamon, ginger, and curry powder, but do so very gradually to give baby time to adjust. Remember that you can always add more, but you can't take it out.
OVEN-ROASTED SWEET POTATOES
Make perfectly roasted sweet potatoes that are fluffy on the inside and lightly browned at the edges for a colourful side dish. Add a few sliced red onions to the roasting tin, if you like

- Heat the oven to 230C/210C fan/gas 8. Chop the sweet potatoes into 2-3cm cubes.
- Tip into a large, shallow roasting tin, drizzle with the oil and season with salt and pepper. If you're adding additional veg or herbs, such as sliced red onions, garlic cloves and thyme, tip these in as well. Toss everything together to coat in the oil, then roast for 20 mins. Toss again to ensure the potatoes cook evenly, and roast for another 15-20 mins until the potatoes are lightly browned on the outside and tender when pierced with a fork or knife.

Steps:
- Fill a small saucepan with water; add sweet potatoes. Bring water to a boil and cook sweet potatoes until tender enough to break apart with a fork, 25 to 30 minutes.
- Transfer sweet potatoes to a food processor or an immersion blender cup, reserving the cooking water. Blend sweet potatoes until smooth. Add 1/2 to 3/4 cup cooking water and blend until desired consistency is reached.
