3 tablespoons ketchup
1 tablespoon milk
1 pound extra-lean ground beef
1 egg
¼ cup dried plain bread crumbs
1 teaspoon Greek seasoning
2 (20 ounce) jars marinara sauce, or more to taste
1 pinch white sugar
¼ teaspoon cayenne pepper

Steps:

  • Blend ketchup and milk together in a bowl. Mix in beef, egg, bread crumbs, and Greek seasoning to combine.
  • Heat marinara sauce to a simmer in a 2-quart pot over low heat.
  • Roll beef mixture with your hands to form meatballs. Drop into the simmering sauce. Add sugar and cayenne pepper. Cook, stirring gently and regularly, until meatballs are no longer pink and sauce is heated through, 25 to 30 minutes.

1 tablespoon extra-virgin olive oil
3 cloves garlic, finely chopped
1 teaspoon hot red pepper flakes
1 tablespoon anchovy paste, optional but recommended
1 tablespoon chopped flat-leaf parsley
1 (15-ounce) can crushed tomatoes
Salt and pepper

Steps:

  • Heat a small pot over medium heat. Add extra-virgin olive oil, garlic, pepper flakes and anchovy paste. Cook 2 minutes. Add parsley, tomatoes, salt and pepper. Stir sauce, bring to a bubble and simmer 5 minutes over low heat then place in small bowl and serve.

2 tablespoons olive oil
3 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
1 (28 ounce) can tomato puree
2 ½ tablespoons dried oregano
2 ½ tablespoons dried parsley
¼ cup grated Romano cheese
⅓ cup grated Parmesan cheese
2 bay leaves
1 teaspoon onion powder

Steps:

  • Heat oil in a large saucepan over medium heat. Saute garlic until aromatic and tender. Stir in crushed tomatoes, tomato puree, oregano, parsley, Romano cheese, Parmesan cheese, bay leaves and onion powder. Reduce heat to low and simmer for at least 40 minutes.

SIMPLE MARINARA SAUCE

This is the marinara sauce I make all winter. It's basically the same sauce as the fresh tomato sauce I gave you last summer, but canned tomatoes stand in for the fresh ones (so you won't have to peel the tomatoes or put them through a food mill). If you buy chopped tomatoes in juice, you won't even have to chop them.

1 (28-ounce) can tomatoes, seeded and chopped if not already chopped, with juice
1 tablespoon extra virgin olive oil
2 garlic cloves, minced
1/8 teaspoon sugar
a few sprigs of fresh basil, if available
Salt to taste
1 tablespoon slivered fresh basil (optional)

Steps:

  • Pulse the chopped tomatoes in a food processor fitted with the steel blade, or pass through the medium blade of a food mill before you begin. Heat the oil over medium heat in a large, wide nonstick skillet or saucepan and add the garlic. Cook, stirring, for 30 seconds to a minute, until it begins to smell fragrant, and add the tomatoes and their juice, the sugar, salt, and basil sprigs. Stir and turn up the heat. When the tomatoes begin to bubble, lower the heat to medium and cook, stirring often, until thick and fragrant, 15 to 20 minutes, or longer if necessary. Remove the basil sprigs and wipe any sauce adhering to them back into the pan. Taste and adjust seasonings. Stir in the slivered basil.

This was my Grandma Sloop's recipe for spaghetti sauce. She used fresh garlic from the garden, and homemade tomato juice canned from tomatos out of the garden...she always made it with meatballs, and my mother makes it with 1 lb of ground beef...I however love it meatless! This is very very garlicky so it might not be everyone's cup of tea...I use the minced garlic you buy in a jar in the produce section - makes it very easy!

1 (64 ounce) can tomato juice
6 crushed garlic cloves or 6 spoonfulls of minced garlic
1 (8 ounce) can tomato paste

Steps:

  • Pour tomato juice into small stockpot.
  • Add garlic.
  • Bring sauce to a boil.
  • turn down to medium, and simmer for about 1 hour, stirring occosionally.
  • Add can of tomato paste and continue cooking until paste is blended in with sauce and sauce has thickened.
  • Serve over spaghetti, enjoy!
  • Optional: add 1 1/2 lb. browned ground beef or meatballs.
  • recipe can be doubled or tripled and frozen.
