1-1/2 cups chicken broth
1-1/2 cups uncooked instant rice
1 tablespoon butter
1 to 1-1/2 teaspoons grated lemon zest
1/2 teaspoon minced garlic
Dash salt
2 tablespoons minced fresh parsley
2 tablespoons diced pimientos
1/8 teaspoon pepper

Steps:

  • In a small saucepan, bring broth to a boil. Stir in the rice, butter, lemon zest, garlic and salt; cover and remove from the heat. Let stand for 5 minutes. Stir in the parsley, pimientos and pepper. Fluff with a fork.

1 tablespoon vegetable oil
1 small yellow onion, finely diced
2 cups long-grain white rice
Kosher salt
1/4 cup fresh lemon juice
3 tablespoons chopped fresh mint, plus more for garnish

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onions and cook until soft, taking care not to let them color, 3 to 5 minutes. Add the rice and stir to coat with the oil. Add 3 cups water and 1 teaspoon salt and bring to a boil. Reduce the heat to low, then cover and cook until all of the liquid has been absorbed, about 20 minutes. Remove from the heat and fluff with a fork to separate the grains. Let sit, covered, for 5 to 10 minutes.
  • Add the lemon juice and mint to the rice and toss to distribute evenly.
  • Serve hot, garnished with chopped mint.

salt and fresh ground pepper (, to taste)
1 cup low sodium vegetable broth
1 cup half & half ((or heavy cream or evaporated milk))
Juice of 1 lemon ((about 3 tablespoons))

Steps:

  • Melt butter and heat olive oil in a nonstick pan.
  • Add onions and cook for 1 minute.

4 tablespoons (1/2 stick) butter (preferred) or extra-virgin olive oil
3 to 4 cups cooked rice, made by any method
Salt and lots of freshly ground black pepper
N/A freshly ground black pepper
1 teaspoon minced garlic
Juice of 2 lemons, plus more if needed
1 lemon, quartered

Steps:

  • 1. Heat half the butter or oil over medium-high heat in a large non-stick skillet; when the butter foam subsides or the oil is hot, spoon in the cooked rice, tossing and stirring.
  • 2. Season with salt to taste, lots of pepper, the garlic, and most of the lemon juice. Cook, stirring frequently, for about 5 minutes, or until hot. Stir in the remaining butter or oil and cook for 1 minutes.
  • 3. Remove the rice from the pan to a platter, add the remaining lemon juice and serve, with lemon quarters.
