Crazy-Simple Cottage Ham, Potatoes, and Green Beans image

Cottage ham is one of my favorite dishes to eat because it's rich in flavor and incredibly simple to make. Requiring only five ingredients and five minutes of prep time, this dish could quickly become a go-to meal in your household. If you can't wait the hour it takes to cook, drop it in a slow cooker in the morning, and it'll be ready when you get home.

1 (3 pound) cottage ham
4 russet potatoes, peeled and halved lengthwise
3 (14.5 ounce) cans cut green beans, drained
1 white onion, sliced thickly
water to cover

Steps:

  • Put ham into a Dutch oven. Arrange potato halves, green beans, and onion slices around the ham. Pour enough water into the pot to cover the vegetables completely.
  • Place a cover on the pot and bring the water to a boil, reduce heat to medium-low, and simmer mixture until potatoes are completely soft, about 55 minutes.
  • Remove ham to a cutting board to slice to desired thickness; serve with vegetables.

A simple and tasty side dish when fresh green beans are plentiful. Prep time doesn't include time to prep the beans before steaming.

1 1/2-2 lbs fresh green beans (about 1 inch long)
2 tablespoons butter or 2 tablespoons margarine
1 teaspoon olive oil
kosher salt
pepper

Steps:

  • Prepare green beans by snapping them or cutting them to approx 1 inch in length and rinsing them.
  • Over a pot of boiling water, steam beans for 15-20 minutes (until just tender with a little"bite" to them; Also, to steam I use a covered colander over a Dutch oven filled 1/4th full with water) Remove steamed beans and turn into a serving bowl.
  • Add all of the rest of the ingredients, seasoning to taste.
  • Enjoy!

Green beans with amazing flavor are also super easy. This is a very simple side dish that takes its flavor from the ham used and the lengthy cooking time. If Grandma didn't have ham on hand she would substitute bacon.

2 lb fresh green beans
1/4 lb cooked ham, cubed or in strips (or cooked bacon)
1 onion, chopped
1 tsp sugar
3 1/2 c water
black pepper to taste
you might need salt but check as ham can be very salty

Steps:

  • 1. Rinse beans, snip off ends and and slice to desired length. Place beans in pot with ham, onion, sugar, pepper, and water. Bring to a boil and then turn down heat to a simmer, cover pot, and cook for 1 hour on low.
  • 2. Remove cover from pot. Turn heat up to medium and cook for about 20 minutes more or until liquid is reduced to a thick sauce you will serve with beans. Grandma often served these with a slice of ham and corn bread.

1 tablespoon finely chopped onion
2 lettuce leaves

  • Place beans in a saucepan and cover with water. Bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender. 1/2 lb fresh green beans
1 small tomatoes (chopped)
1 garlic clove (crushed)
1 small onion (chopped)
2 tablespoons butter
water
salt & pepper
1/2 teaspoon seasoning salt
1/4 cup toasted slivered almonds (optional)

Steps:

  • Wash and snip the ends of green beans.
  • In a pan, saute the onions and garlic until soft.
  • Add the chopped tomato and a bit of water cook for 15 minutes, until mixture has become soft and well mixed together.
  • Add the green beans, salt & pepper and seasoning salt. If water evaporated, add a little more to help beans cook.
  • Cover and cook until beans are crisp yet tender, approximately 20 minutes.
  • There should be some liquid, not much, spoon beans onto a platter, spooning tomato pieces on top of beans.
  • You could garnish with toasted slivered almonds if you like.
  • Serve next to your favorite entree.

1/4-1/2 cup fat-free Italian salad dressing

Steps:

  • Can be made earlier in the day. Snip off the tops, but not the curly tails (they look better rustic-style), from the green beans. Boil in salted water for 3 mins until just tender. Get a bowl of iced water ready. Drain the beans and plunge into the water for 3 mins, then drain well and tip out onto a plate. Finely chop the shallot, scatter over the beans and sprinkle with some vinaigrette. Set aside to cool.

I call these "My Famous Green Beans". I don't remember where I got the recipe, but I didn't see another like it here. I always make these instead of mushy green bean casserole for Thanksgiving!

2 lbs fresh green beans, snapped and trimmed
1 small onion (I prefer red)
6 slices bacon
1 tablespoon white vinegar
2 tablespoons sugar
1 pinch salt and pepper

Steps:

  • Steam the green beans.
  • Saute bacon and crumble it to make bits (or you can chop the bacon small before cooking; it doesn't matter).
  • Drain most of the fat out of the bacon pan, then saute the onion until almost soft. Add sugar, vinegar, salt and pepper. Once fully liquified, pour over steamed beans, top with bacon bits and toss!
