2 (16 ounce) packages frozen cauliflower
¼ cup butter
¼ teaspoon ground black pepper
½ teaspoon salt
1 clove garlic, minced

Steps:

  • Place cauliflower in a pot with enough water to cover. Bring to a boil and cook 10 minutes, or until tender. Drain and return cauliflower to pot.
  • Stir butter, black pepper, salt, and garlic into cooked cauliflower.
  • Mash cauliflower mixture with a potato masher or whisk until a smooth consistency similar to mashed potatoes.

1 large head cauliflower, cut into florets
3 cups chicken broth
3 tablespoons butter
1 cup shredded Vermont white Cheddar cheese
¼ cup grated Parmesan cheese
salt and pepper to taste

Steps:

  • Bring cauliflower and chicken broth to a boil in a large saucepan over high heat. Reduce heat to medium, cover, and simmer for 10 minutes. Uncover the saucepan and increase heat to medium-high. Allow cauliflower to simmer until soft and the cooking liquid has reduced by half, about 10 minutes.
  • Remove cauliflower from the heat, and add the butter, Cheddar cheese, and Parmesan cheese. Mash with a potato masher until the cheeses have melted and the cauliflower is smooth, then season to taste with salt and pepper.

3 stalks celery
4 tablespoons hummus
1/4 cup parmesan cheese
1 teaspoon cumin
2 teaspoons garlic powder
1/4 teaspoon paprika (optional)

Steps:

  • Separate cauliflower into similar sized florets and chop celery in very small pieces.
  • Steam together until very tender; at least 15 minutes.
  • Smash together with cheese, hummus, garlic, and cumin using a fork or potato masher to a coarse consistency.
  • If desired, garnish with paprika.

Rachael Ray used fresh cauliflower...I found it really expensive in the store, so I tried frozen...still so very good...everyone in my family LOVED it! She also said it was a low carb substitute for mashed potatoes. I am giving you MY recipe for the same dish.

2 (16 ounce) bags frozen cauliflower
1 cup of shredded cheddar cheese
1/4 cup of shredded parmesan cheese (Rachael Ray used Parmesan Reggiano)
2 cups chicken broth (Rachael Ray used beef broth)
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Bring chicken broth to a boil (Rachael Ray used beef broth).
  • Add frozen cauliflower.
  • Boil for about 8-10 minutes.
  • Drain -- in case there is too much liquid -- Add cheeses, butter and more broth if it is too thin for your taste.

It might be tough to imagine that anything could taste better than mashed potatoes. But cauliflower mash captures all the flavors of beloved potatoes, and you won't be able to taste the difference. Not only is this mash cheesy, buttery and silky smooth, it also brings along a stellar lineup of vitamins and nutrients. Plus it's lower in carbohydrates and calories than its potato counterpart.

Number Of Ingredients 8

6 cups (810 grams) cauliflower florets
8 garlic cloves
1 cup (120 grams) shredded Cheddar
1/4 cup (60 milliliters) heavy cream
2 tablespoons salted butter, plus more for serving
1/4 teaspoon sea salt, plus more to taste
1/8 teaspoon freshly ground black pepper, plus more to taste
1 tablespoon chopped fresh chives, for garnish

Steps:

  • Bring an inch of water to a boil in a large saucepan. Place the cauliflower in a steamer basket set over the boiling water. Cover and steam for about 5 minutes, until the florets are fork tender. Transfer the florets to a high-powered blender or food processor.
  • Add the garlic, cheese, heavy cream, butter, salt and pepper to the cauliflower. Blend until smooth and creamy, 1 to 2 minutes. After 1 minute, if there are still chunks, use a rubber spatula to scrape down the sides, then process again until light, fluffy and completely smooth. Taste and adjust the seasoning if needed.
  • Let the mash sit for 2 minutes to settle. Top with chives and serve with extra butter.
