One 5-ounce bag prewashed baby arugula
1 Fuji apple, cored, quartered, seeded, and thinly sliced
1/4 cup thinly sliced chives
1/4 cup Apple Cider Vinaigrette (recipe follows)
Apple Cider Vinaigrette
3/4 cup apple cider
1/3 cup apple cider vinegar
1 tablespoon dijon mustard
1/2 teaspoon salt
1 cup olive oil
(makes 1 1/2 cups)

Steps:

  • Combine the arugula, apple, and chives in a large mixing bowl. Dress with the vinaigrette, making sure to lightly toss the greens but thoroughly incorporate the dressing.
  • Apple Cider Vinaigrette
  • Bring the apple cider to a boil in a small pot over mediumhigh heat. Reduce the heat to low and simmer until the liquid reduces by half, about 12 minutes.
  • Pour the cider into a small mixing bowl. Add the vinegar, mustard, and salt and whisk vigorously. While continuing to whisk, slowly drizzle the olive oil into the bowl until completely incorporated.

  • The Dijon mustard does more than add a vibrant note to the vinaigrette. It provides a stable base that helps the oil and vinegar emulsify, creating that smooth, creamy texture that you want in a vinaigrette. A well-emulsified vinaigrette also evenly coats the lettuce leaves for a balanced salad. Try adding a teaspoon to your basic vinegar-and-olive-oil dressing for a smoother result.

1/4 teaspoon salt
Pinch of freshly ground pepper
2 tablespoons extra-virgin olive oil
2 bunches baby arugula, about 6 cups
1 head radicchio, torn into pieces, about 3 cups
2 cups mache (about 1 ounce), or 2 endives, leaves separated
1 cup grape tomatoes, thinly sliced

Steps:

  • Whisk lemon juice, salt, and pepper in a small bowl. Gradually add oil, whisking constantly until emulsified.
  • To serve, toss arugula, radicchio, mache, and tomatoes in a large, chilled bowl with just enough dressing to lightly coat.

1/4 cup pecans
6 cups baby arugula
1 peach, sliced
2 ounces sharp white cheddar cheese, diced
1/3 cup olive oil
3 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 350 degrees F; on a rimmed baking sheet, toast pecans, tossing once, until fragrant, 4 to 5 minutes.
  • Let cool and chop pecans; set aside.
  • In a serving bowl, toss together arugula, sliced peach, and cheddar.
  • Whisk together vinaigrette ingredients OR place them in a glass jar with a tight fitting lid and give them a good shake.
  • Drizzle 4 tablespoons of the vinaigrette over salad and scatter pecans on top; toss to combine.
  • Serve with additional vinaigrette, if desired.
