Quick Apple Puddings image

Sweetened stewed apples with a hint of vanilla lie beneath a layer of crispy bread flavoured with butter, cinnamon and brown sugar. Just delicious!

1 lb / 500g Bramley Apples or a mix with dessert apples (peeled and sliced)
2 - 4 slices white or wholemeal bread (depending on size)
50 g castor sugar
1 tsp vanilla extract
4 knobs of butter or margarine (about 25g/1 oz)
4 tsp soft light brown sugar
1 tbsp lemon juice
Cinnamon for dusting

Steps:

  • Pre-heat the oven to 180°C.
  • Place the prepared apple slices into a pan and pour over the lemon juice and 1 tbsp water.
  • Stew under a lid for 4-5 minutes on a moderate heat until soft.
  • While the apples are cooking use a ramekin as a template to cut 4 circles from the sliced bread.
  • Butter the bread circles, dust generously with cinnamon and spread a tsp of brown sugar on each.
  • Cut the circles into quarters.
  • Stir the caster sugar and vanilla extract into the apples once cooked.
  • Divide the stewed apples between 4 ramekins.
  • Then lay the bread quarters over the apples in a circle so that the last quarter is tucked under the first.
  • Place the puddings on a baking tray in the middle of the oven for 15 minutes until the tops go crispy.
  • Let the puddings cool down for at least five minutes before serving as they will be extremely hot inside!
  • Serve with cream if wished.

This simple apple dessert combines all the best pudding bits in a single bake that's sweet and saucy on the bottom, fluffy in the middle and crunchy on top.

50 g sultanas
2 tbsp spiced rum
6 pink lady apples
15 g unsalted butter (plus extra to grease)
30 g Demerara sugar
145 g unsalted butter (softened)
70 g Demerara sugar (plus extra to finish)
2 eggs
1 tsp vanilla extract
100 g self-raising flour (sifted)
1 tbsp lemon zest (finely grated)
3 tbsp milk
20 g flaked almonds

Steps:

  • Pre-heat the oven to 190ºC. In a small bowl, soak the sultanas in the spiced rum and set aside. Peel and core the apples, then slice them into thin wedges. Grease a small glass rectangular baking dish (20 x 15 cm).
  • Heat a non-stick frying pan over medium heat, then add the apples, butter and sugar. Cook until they begin to caramelise, tossing them to ensure they colour evenly. Tip in the sultanas and rum, then cook for a further 5-10 minutes until the apples are tender.
  • Transfer the apple mixture to the prepared baking dish and spread in an even layer. Set aside to cool.
  • Using an electric mixer, cream the butter and sugar together until pale and fluffy. Add the vanilla extract and beat for a further 30 seconds. Beat in the eggs one at a time, adding a spoonful of the flour with the second egg. Fold in the remaining flour and lemon zest with a metal spoon, alternately with the milk, adding just enough to get a dropping consistency.
  • Spoon the pudding mixture carefully over the apples, then sprinkle with flaked almonds and a little more demerara sugar if you wish. Put the cake in the oven and immediately lower the temperature to 170ºC. Bake for 40-45 minutes until the top is golden brown and a skewer inserted in the middle comes out clean.
  • Allow to cool slightly. Serve warm with cream or vanilla ice cream.

This is one of my Mom's recipes and one that both Dad and I really enjoyed. Always looked forward to the fall and apples from MacIntosh tree out back! Sometimes Mom called it Apple Pudding other times she called it Apple upside-down cake, either way it was a cake texture with baked apples and a carmel type sauce. Always a treat to come home from school and smell this in the oven! Serve it warm as is or with vanilla ice cream!

6 apples, peeled and sliced
1/2-1 teaspoon cinnamon
4 tablespoons butter, softened
1/2 cup brown sugar
1 egg, lightly beaten
1/2 cup milk

140g self-raising flour
100g golden caster sugar
1 tbsp baking powder
200ml milk

50g pecan, roughly chopped

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Grease a 2-litre/3½-pint ovenproof dish lightly with butter. Tip the flour, sugar and baking powder, along with a pinch of salt, into a large bowl. Mix together the milk, butter, egg and vanilla extract and stir into the dry ingredients until you get a smooth batter. Arrange the apples in the dish, spoon the batter on top and smooth with a knife until the apples are covered.
  • For the topping, pour 250ml boiling water over the sugar and stir together until smooth. Pour the liquid over the pudding mixture, then scatter over the pecans. Bake for about 40 mins until the pudding has risen and is golden. Use a big spoon to serve the pudding, making sure you get some of the gooey caramel sauce covering the bottom of the dish.
