1 cup margarine, softened
1 cup light brown sugar
4 eggs
1.8 cups self-rising flour
1 ⅓ cups golden raisins
1 cup dried currants
⅔ cup candied cherries - rinsed, dried and quartered
¼ cup candied mixed fruit peel, chopped
2 tablespoons grated lemon zest
2 teaspoons mixed spice
1 pound almond paste
2 tablespoons apricot jam
1 egg, beaten

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease and flour an 8 inch springform pan. Line the bottom and sides of pan with greased parchment paper.
  • In a large bowl, cream together the margarine and brown sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour. Stir in the golden raisins, currants, candied cherries, mixed fruit, lemon zest and mixed spice. Pour 1/2 of batter into prepared pan.
  • Divide almond paste into 3 equal portions. Roll out 1/3 of the almond paste to an 8 inch circle. Place the circle of almond paste on the cake batter in pan. Cover with remaining cake batter.
  • Bake in the preheated oven for 2 1/2 hours, or until evenly brown and firm to the touch. If the cake is browning too quickly, cover with foil after an hour of baking. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Set oven to broil.
  • When the cake has cooled, brush the top with warmed apricot jam. Roll out 1/3 of the almond paste into an 8 inch circle and place on top of cake. Divide the remaining 1/3 of almond paste into 11 pieces and roll into balls. These represent the 11 Apostles (excluding Judas.) Brush the almond paste on top of cake with beaten egg. Arrange the 11 balls around the outside edge on the top of cake. Brush the balls lightly with egg.
  • Place cake under the broiler for 8 to 10 minutes, or until almond paste is golden brown.

250g mixed dried fruit (a mixture of sultanas, currants, raisins and candied mixed peel)
1 orange , zested and juiced
500g pack marzipan
250g pack butter , softened
200g light brown soft sugar
4 eggs , plus 1 beaten to glaze
175g plain flour
100g ground almonds
1 tsp baking powder
1 lemon , zested
2 tsp mixed spice
1 tsp vanilla extract
100g glacé cherries , halved
3 tbsp apricot jam

Steps:

  • Put the mixed dried fruit in a bowl with the orange juice and zest and 2 tbsp water. Cover and microwave for 2 mins, then leave to cool completely. Alternatively, heat gently in a pan, stirring now and then until the liquid has been absorbed and leave to cool.
  • Heat oven to 150C/130C fan/gas 2. Roll out a third of the marzipan and use the base of a deep 20cm cake tin as a template to cut out a circle. Wrap any offcuts and the remaining two-thirds of marzipan and set aside for later. Butter and line the cake tin with a double layer of parchment. Beat the butter and sugar together until creamy. Add the eggs, flour, almonds, baking powder, lemon zest, mixed spice and vanilla (all in one go) and mix until well combined. Mix in the cooled soaked dried fruit and fold in the cherries.
  • Scrape half the cake mixture into the tin. Top with the disc of marzipan, then the remaining cake mixture, and level the top with a spatula. Bake for 2 hrs. Check it's cooked by inserting a skewer to the centre of the cake, if any wet mixture clings to the skewer, return to the oven for another 10 mins, then check again. Cool in the tin for 15 mins, then turn out onto a wire rack and leave to cool completely.
  • Brush the top of the cake with apricot jam. Roll out half of the remaining marzipan and use the base of the cake as a template to cut out another disc. Place it on top of the cake and crimp the edges, if you like. Roll the remaining marzipan into 11 equal-sized balls for the apostles. Brush the marzipan with beaten egg and arrange the apostles in a circle on top around the outside, and brush them with a little egg too. Put under a hot grill for a minute or two until just starting to caramelise - be very careful as the marzipan will burn easily. Leave to cool and wrap a ribbon around the cake, if you like. Will keep for up to a week in a sealed tin.

A wonderul spiced & fruited cake which heralds the advent of Spring. I used to make one for my Mum every year, when I lived in England! Traditionally made to mark Mothering Sunday, this cake is also known as an Easter Cake; Simnel cake has a fascinating cultural heritage with roots that stretch back to the Romans and Athenians. In Britain, known as the Shrewsbury Simnel, it is simply made using white flour, fragrant spices and is generously studded with dried fruits and pungent peel. Like a Christmas cake, it is covered with pale sweet almond paste. The decoration is plain - eleven little balls of smooth paste which represent the apostles (omitting Judas). A specially baked simnel cake is a wonderful gift to take to your mother, for Mothering Sunday Tea Time. Decorate it with crystalised flowers and tie some yellow ribbon around the side.

400 g icing sugar, sifted
250 g ground almonds
1 large egg yolk, beaten lightly
3 -4 tablespoons orange juice
5 drops almond essence
250 g plain flour
1 pinch salt
1 teaspoon nutmeg
1 teaspoon cinnamon
280 g currants
250 g sultanas
110 g mixed peel
160 g butter
160 g caster sugar
3 large eggs
200 ml milk, to mix

Steps:

  • CHECK LIST: a sifter, nest of bowls, food processor or electric beater, spatula, wooden spoon, 24 cm round cake tin, baking paper, brown paper and twine, rolling pin, thin metal skewer.
  • STAGE 1.
  • To make your own almond paste you will need a food processor fitted with a steel blade. Don't be tempted to use store-bought almond paste because it contains lots of sugar and few almonds, it will turn to liquid under the grill.
  • Place icing sugar and almonds in food processor bowl. Process, slowly dripping in egg yolk, orange juice and almond essence. The mixture should form a pliable paste.
  • Set aside a small portion for balls with which to decorate the cake.
  • Roll out the remaining paste into 2 circles which are the approximate size of the tin. Set aside.
  • STAGE 2.
  • Preheat oven to 160°C/320°F.
  • Use a sturdy non-stick cake tub or line the buttered base with baking paper. As the baking period is long (1-1 1/2 hours), prevent the cake drying out by wrapping a double thickness of brown paper around the pan and securing it with twine.
  • Sift flour, salt and spices together, then stir in fruit and peel.
  • Cream butter and sugar thoroughly until light and creamy then beat in eggs one at a time, until the mixture is fluffy. (Reserve a drop of egg yolk for brushing over top layer of almond paste.).
  • Stir flour and fruit into creamed mixture (you may need to add a little milk to give the mixture a dropping consistency).
  • STAGE 3.
  • Place half the mixture into a greased and lined cake tin.
  • Place one pre-rolled round of almond paste over the top.
  • Cover with remaining cake mixture. Before baking the cake, give the pan of mixture a sharp tap on to a firm surface. This settles the mixture and prevents holes from forming in the cake.
  • Bake in the centre of the oven for 1-1 1/4 hours or until a thin metal skewer inserted in the centre of the cake comes out without a trace of stickiness.
  • Level the cake by placing a weighted plate on top of the cooked cake while it is still hot.
  • Turn out cake on to a wire rack after leaving it to settle in the cake tin for between 10 and 15 minutes. Peel off paper and leave to cool completely.
  • STAGE 4.
  • Cover the top of the cake with a second round of almond paste. Roll 11 small balls of paste and place evenly around the top of the cake. Brush the top with a little beaten egg and very lightly brown under the grill until the almond paste turns light golden brown.
  • Remove and leave to cool.

225g sultanas
100g currants
50g mixed peel
2 lemons, 1 juiced and 2 zested
50ml orange juice
50ml brandy (optional)
225g butter, softened
225g light muscovado sugar
4 medium eggs
225g self-raising flour
100g glacé cherries, quartered
2 tsp mixed spice
500g yellow marzipan
1 tbsp apricot jam

Steps:

  • Put the sultanas, currants and mixed peel in a bowl with the lemon juice, orange juice, and brandy, if using. Mix well, cover and leave to soak overnight.
  • Heat the oven to 150C/130C fan/gas 2. Line the base and sides of a 20cm round cake tin with baking parchment.
  • Add the rest of the cake ingredients to the soaked fruit and stir until well combined. Spoon half of this mixture into the bottom of the cake tin and level it off so it's as flat as possible. Roll a third of the marzipan into a circle 20cm diameter and put it on the top. Gently add the rest of the mixture, levelling the surface again.
  • Bake for approximately 2½ hours until brown, well-risen and firm to the touch. A metal skewer should come out clean when inserted. Allow to cool for 20 mins in the tin and then turn out to cool on a wire rack.
  • Warm the apricot jam in a small saucepan and brush on the top of the cake. Roll out half of the remaining marzipan to the size of the top of the cake. Press it down firmly and push the edges down with your thumb to crimp it round the sides.
  • Roll the rest of the marzipan into 11 balls (these represent the Apostles). Place the balls evenly on top of the cake in a circle, sticking them down with a little dab of the jam. Gently blow torch the top of the cake until the balls are a light golden brown, alternatively put the whole cake under a hot grill until the marzipan turns a light golden colour.

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
¾ cup butter
¾ cup white sugar
4 eggs
1 teaspoon vanilla extract
2 cups golden raisins
¼ cup raisins, chopped
½ cup chopped candied mixed fruit peel

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease one 9 inch tube pan.
  • Sift flour, baking powder, and salt together.
  • Cream butter or margarine and sugar together. Beat in the eggs one at a time. Stir in the vanilla and the sifted flour mixture. Fold in the raisins, and candied peel mixing well. Spoon batter into the prepared pan.
  • Bake at 325 degrees F (165 degrees C) for 1 hour and 45 minutes to 2 hours. Makes about 16 servings.

Simnel cake is an English tradition, formerly made by girls on Mothering Sunday (Mother's Day, in March in the UK), but now the cake has become an Easter tradition. It is usually decorated with a layer of marzipan, and 11 marzipan (almond paste)balls around the edge, to represent the apostles, (minus Judas Escariot, for obvious reasons). This recipe is from the April 2006 issue of Delicious magazine, and instead of 11 balls of marzipan it decorates the cake top with violets and marzipan eggs.

175 g butter, softened, plus extra for greasing
250 g plain flour, plus a little extra
1 teaspoon freshly grated nutmeg
1 teaspoon ground cinnamon

125 g currants
175 g golden caster sugar (superfine sugar)

200 g almond paste (marzipan)
yellow food coloring
350 g almond paste
1 tablespoon apricot jam, warmed
3 -4 fresh african violets

Steps:

  • Preheat oven to 150 degrees Celsius Grease and line a 20 cm round deep cake tin with double thickness of baking (parchment) paper.
  • Sift flour, nutmeg, cinnamon, and a pinch of salt into a bowl. Stir in the zest, cherries, peel, sultanas, raisins, and currants.
  • Cream the butter and sugar until light and fluffy. Gradually beat in the eggs, adding a little extra flour if the mixture begins to curdle. Add the flour and fruit mix and milk and mix to a soft dropping consistency. Spread just over half of the mixture in the tin.
  • On a surface dusted with icing sugar, roll out 200 g almond paste to a 19 cm circle. Place on top of the mixture in the tin. Spoon in the rest of the mixture. Level the top and make a slight dent in the centre. Bake for 2 3/4 hours, or until golden and a skewer inserted into the centre comes out clean. Cool in the tin.
  • For the decoration, dust the work surface with icing sugar. Knead a little yellow colouring into 350 g almond paste, then cut off 50 g and set aside. Roll out the remainder into a 20 cm circle. Brush the top of the cake with the jam and put the almond paste on top. Crimp the edges.
  • Take the remaining almond paste and divide into 5 pieces. Dust your hands with icing sugar and roll each piece into an egg shape. Arrange on the cake with the violets.

2 oranges , grated zest and juice
2 tbsp Cointreau
350g mixed dried fruit
100g whole glacé cherry
250g pack marzipan
200g soft butter , diced
200g golden caster sugar
350g self-raising flour
4 large eggs
2 tbsp milk
50g blanched almond
100g caster sugar
125g icing sugar
zest 1 orange
1-1.5 tbsp orange juice

Steps:

  • Heat oven to 160C/fan 140C/gas 3. Tip the zest and juice into a bowl. Add the Cointreau, mixed fruit and cherries. Meanwhile, grease and line the base and sides of a 2kg loaf tin with baking parchment. Shape the marzipan into a sausage the length of the tin, then roll out to the width with a rolling pin.
  • Put the butter, sugar, flour and eggs and milk in a bowl and beat with an electric hand-whisk until smooth. Stir in the mixed fruit and their juices. Spoon half the mixture into the loaf tin, then cover with the layer of marzipan. Top with the rest of the cake mixture and smooth the top. Bake for 1 hr 50 mins until risen and firm to the touch. (Take care if you are checking by piercing with a skewer as you may pierce the marzipan and think that the cake is not cooked yet.) Cool in tin, peel away the paper once cold. It will keep wrapped in foil for 2 weeks.
  • To make the caramel almonds, tip the almonds into a frying pan and heat, swirling the pan so the almonds toast. Tip from the pan then add the sugar to the pan and heat until the sugar turns to a liquid caramel - take care not to heat it too fast or it will burn. Add the almonds, then pour onto a greased baking sheet to set. Will keep in a cool place for 2 days.
  • Decorate the cake on the day you eat it, as the caramel will dissolve on contact with the cake. Mix the icing sugar with the orange zest and juice until smooth, then pour over the cake. The mix is quite wet and will dribble down the sides. Chop the almond caramel, scatter over the icing and leave until the icing sets.

* 225g sultanas
* 100g currants
* 50g mixed peel
* juice of 1 lemon (optional
* 50 ml brandy (optional)
* 50 ml orange juice (optional)
* 225g soft butter
* 225g light muscovado sugar
* 4 eggs
* 225g self-raising flour
* 100g glace cherries, rinsed in hot water, dried and quartered
* grated rind of 2 lemons
* 2 tsp mixed spice
* 450g best quality marzipan
* 2tbsp apricot jam
* 1 egg beaten, to glaze

Steps:

  • Two days before you intend to make the cake place the sultanas, currants and mixed peel in a bowl with the lemon juice, brandy and orange juice, mixing it well and leaving to one side for the fruit to soak up the liquid. This will produce a much moister cake when baked, but can be omitted.
  • Pre-heat the oven to 150C/Gas 2. Line the base and sides of a 20cm deep round tin with silicone paper.
  • Measure the rest of the cake ingredients in with the fruit and beat well until thoroughly mixed. Put half of this mixture in the bottom of the cake tin and level it off so that it is as flat as possible. Divide the marzipan into three equal parts and roll out one piece into a circle 20cm diameter, and put it on the top of the cake mixture. Gently spoon on the rest of the mixture, levelling the surface again.
  • Bake for approximately 2 ½ hours until brown, well risen and firm to touch. Allow to cool for 15 mins and then turn out to cool on a wire rack.
  • When the cake is cool, warm up the apricot jam in a small saucepan and brush the top of the cake with it. Roll out half of the remaining marzipan to the size of the top of the cake. Press it down firmly and push the edges down with your thumb to crimp it round the sides. Roll the rest of the marzipan into eleven balls to represent the Apostles, without Judas. Brush the top of the marzipan with the beaten egg and place the balls evenly around the outside, brushing the tops of the balls as well. Place the whole cake under a hot grill until the marzipan turns a light golden colour.

It's a quick and easy version of the Easter Classic. I got the original recipe from a Good Food Magazine and have made it for every Easter since. Don't be put off by the long list of instructions, it is broken down into small bits, it's really quite simple

6 ounces raisins
6 ounces sultanas
4 ounces whole glace cherries
250 g marzipan
8 ounces soft butter
8 ounces golden caster sugar

2 tablespoons milk
2 ounces blanched almonds
4 ounces caster sugar
4 1/2 ounces icing sugar

Steps:

  • Heat oven 160c Fan / 140c/Fass 3.
  • Tip the zest and juice into a bowl.
  • Add the Cointreau, , mixed fruit and cherries. Meanwhile, grease and line the base and sides of a 2kg loaf tin with baking parchment.
  • Shape the marzipan into a sausage the length of the tin, then roll out to the width with a rolling pin.
  • Put the butter, sugar, flour and eggs and milk in a bowl and beat with an electric hand-whisk until smooth.
  • Stir in the mixed fruit and their juices.
  • Spoon half the mixture in the loaf tin, and then cover with the layer of marzipan.
  • Top with the rest of the cake mixture and smooth the tip.
  • Bake for 1hr 50 minutes until risen and firm to the touch. If you do the skewer test, make sure you don't pierce a piece of marzipan otherwise you may think the cake isn't cooked when it is.
  • Cool in the tin, peel away the paper once cold. You can keep it wrapped in foil for 2 weeks if needed.

250g slightly salted butter , plus extra for greasing
100g orange-flavoured plain chocolate or 100g plain chocolate plus 2 tsp orange extract
400g plain flour
500g golden caster sugar
25g cocoa , plus extra for dusting
1 tsp bicarbonate of soda
2 eggs
284ml tub buttermilk
zest and juice 1 orange
85g golden caster sugar
100g icing sugar , plus extra to decorate
200g ground almond
50g cocoa powder , plus extra for dusting
1 egg , plus 1 yolk, beaten
2 x 250g/9oz tubs mascarpone
250g butter , softened
250g icing sugar
zest 2 oranges

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line the base and sides of two deep 23cm cake tins. Boil the kettle. Put the butter and chocolate in a small pan and gently heat, stirring, until completely melted. Mix together the flour, sugar, cocoa and bicarbonate of soda with a pinch of salt in your largest mixing bowl. Whisk the eggs, buttermilk, orange zest and juice together in a jug. Scrape the melted chocolate mixture and egg mixture into the dry ingredients, add 150ml boiling water and whizz briefly with an electric whisk until the cake batter is lump-free. Divide between the tins and bake for 45 mins - swapping the tins round after 30 mins if on different shelves. To test they're done, push in a skewer and check that it comes out clean. Cool the cakes in their tins.
  • Meanwhile, make the marzipan. Mix the sugars, ground almonds and cocoa in a bowl. Make a well in the middle, tip in the egg and egg yolk and mix together with a cutlery knife before kneading with your hands to a smooth ball. Wrap in cling film and set aside. Will keep in the fridge for 1 week if making ahead.
  • Make the frosting: beat the mascarpone and butter together until smooth. Sift in the icing sugar, add the zest, then beat again until combined.
  • To assemble, split each cake in half horizontally. Dot a little frosting on your serving plate and sit one of the cake halves on top. You'll use about half the frosting to sandwich the cakes together - spread the plated-up cake with some frosting, then repeat to sandwich the remaining cakes on top. Brush the top of the cake with a tiny bit more frosting.
  • Roll out the marzipan, on a dusting of cocoa if you need, to a rough 27cm circle. Using your cake tin like a cookie cutter, stamp out a marzipan circle, then carefully lift this onto the top of your cake. Roll the remaining marzipan into 11 small balls and stick them on top, using a little more frosting or water like glue. Spread the remaining frosting round the outside of the cake, then dust the top with a little more cocoa and icing sugar.

200g softened butter , plus extra for greasing
200g golden caster sugar
3 large eggs
175g self-raising flour
50g ground almonds
½ tsp baking powder
¼ tsp almond extract
2 tbsp milk
3 tsp red food colouring
½ tsp yellow food colouring
200g apricot jam
2 x 500g blocks of marzipan

Steps:

  • Grease a 20cm square baking tin. Measure a double layer of foil long enough to line the base and 2 sides of the tin with 20cm excess. Fold a 10cm pleat in the centre (step 1). Push the foil into the tin, making sure the pleat is in the centre and the corners are nice and sharp (step 2). Line the 2 halves of the tin by putting a long strip of baking parchment in lengthways over the foil (step 3). Criss-cross another strip widthways to completely cover the foil (step 4). Repeat to line the other compartment. You now have two compartments for the different colours.
  • Heat oven to 180C/160C fan/gas 4. Put the butter and sugar into a bowl and, using an electric whisk, beat until light and fluffy. Beat in the eggs, one at a time, then beat in the flour, baking powder and almond extract. The batter needs to be dropping consistency (it should fall off a wooden spoon). If it is a little thick, add a drop of milk and continue to beat.
  • Halve the batter by weighing and dividing equally into separate bowls. Fold the red colouring through one and the yellow colouring through the other.
  • Tip the batters into each side of the prepared tin and bake for about 25 mins, until the sponges have risen and a skewer inserted into each sponge comes out clean. Leave them to cool in the tin, then remove to a rack to cool completely.
  • To assemble, neatly trim each sponge, then sit one on top of the other and trim again so they are both the same size. Cut each sponge in half lengthways so you have 4 long rectangles. Warm the jam in a small pan, then brush along a long side of each sponge. Stick the jam sides together to create the chequerboard effect, then brush the sides and top with more jam.
  • Dust a work surface with icing sugar. Roll out one of the blocks of marzipan until it is 20cm long, then roll it so it is wide enough to wrap around the sponge. Brush the loaf all over with more apricot jam, then tightly wrap the marzipan around the sponge, trimming it where the edges meet. Smooth the marzipan over the sponge. Sit the loaf on its seam.
  • To make the Apostles, roll the remaining marzipan into 11 small balls (you might not need all the marzipan for this, but any excess can be frozen) and sit on the loaf at even intervals. To give the cake a contrast of colour and a classic simnel cake finish, lightly blowtorch the balls on the top of cake. The cake will now keep for up to 3 days in an airtight container.

Instructions retooled 09 March 2020 Lacto-ovo-vegetarian safe. I adapted this from a recipe I got at a renaissance fair back in '98. It is basically a medieval fruit cake. But before the 13th century, "simnel" simply meant a type of flour, and usually referred to bread, not cake. Around 1225 CE it began also to be associated with a cake (like this one), but it wasn't until the early 1900's that the modern, quick leavened, version of simnel cake came into being. Modern simnel cakes are described as "light." THIS one is definitely not light. But it IS tasty, so do give it a try!

4 cup(s) all purpose flour
1 teaspoon(s) salt
2/3 cup(s) lemon and orange peel, grated (*see step #11)
2 cup(s) dried currents, sultanas, or raisins (or combination)
1 1/2 cup(s) unsalted butter
4 cup(s) sugar
8 large eggs
8 ounce(s) almond paste (not marzipan), warmed

Steps:

  • Preheat oven to 300℉. (NOTE: increase of baking time to 2 hour 30 minutes 03/09/2020) Pre-warm almond paste, if desired (see step #7). Grease a 9" x 13" baking pan. Line with kitchen parchment or waxed paper (be neat if you want your cake to look pretty) then grease the paper. Set aside.
  • Sift flour together with salt and set aside. Dust grated citrus peel and currants in some additional flour and set aside. Be sure to break up clumps so they distribute evenly throughout the cake.
  • In a large mixing bowl, cream butter and sugar until smooth.
  • Add eggs one by one, beating after each addition. You want a lot of loft since this recipe uses no leavening. You need those air bubbles to make the cake lighter.
  • Add the flour and salt mixture in three parts, beating as you go. Next, add the citrus peel and currants, stirring until fully incorporated.
  • Pour half the batter into prepared 9" x 13" pan. Spread into corners, creating a level surface across the center.
  • Spread (warmed) almond paste over top of batter in baking pan.* *Although warming is not absolutely required, spreading is much easier when you pre-warm the paste in some way (see step #1). Otherwise, you end up "dotting" the top with lumps of paste, which can work, of course, but the paste ends up being uneven throughout the cake. My paste comes in a glass jar which I put in the microwave for a few seconds at a time, stirring after each [if possible] until it's like pourable peanut butter (not runny). (If it's too hot to touch, let it cool until it's lukewarm.) Another warming method is to place watertight almond paste container in hot water until paste is soft and squishy.
  • Add remaining batter to completely cover almond paste, spreading evenly across the top.
  • Bake at 300℉ for 2 hours and 30 minutes or until done (possibly up to 3 hours total - cover top with foil if it begins to get overly brown). The top should be a deep golden (or medium tan) color. (Test tap before placing in oven, if you're doing that -- see next paragraph.) Since there is a layer of almond paste in the center, using a toothpick to test for doneness can be frustrating. To test, I tap my finger nail* (remembering the pan is hot!) in the center under the pan, listening for a hollow sound. You may want to have a "test tap" before putting it in the oven to know what it sounds like before it's baked.) *You could also use a table knife handle or something of similar heft.
  • Cool in pan until completely room temperature (I use a rack). To serve, you can leave in pan or turn onto a platter. Cut into 18 small pieces as cake is very rich. No need to frost (although tradition suggests a light dusting of powdered sugar, sometimes in the shape of a cross if the cake is made in individual serving sizes).
  • *CITRUS PEEL NOTE: The original recipe did not indicate a ratio of lemon peel to orange peel. I used a 3:3 ratio of lemons to oranges (as in, the peel of three lemons and the peel of three oranges, but because lemons are smaller than oranges, you get less peel, so I think it works out more like 2:3 lemon peel to orange peel by volume). You can use dried, of course, but I have not tried it (if you do, remember to reduce by half or 2/3 the amount...so, I think that means you would use 3 tablespoons of dried peel instead of 2/3 cup of fresh...maybe) (fyi, math was not my strongest subject! Take my advice at your own risk!).
  • NOTES *This is a rich, dense fruit cake. There is no leavening. It is important to make sure the cake is completely baked throughout. *Dried currants are traditionally used, but of course, you can use any similar dried fruit. *I have seen versions made with differing spices, including cinnamon, ginger, allspice, cloves, and saffron. I have not tried them yet, so if you do, please let me know how it goes! *I use almond paste (or almond butter if I can't find "paste") which is coarser than marzipan and not as sweet. But many other recipes do call for marzipan. Since I've never used that ingredient I can't advise on how to substitute it here, but feel free to give it a go and let me know how it turns out! *Simnel cake is a traditional English holiday treat. For many people there is a great amount of tradition associated with it, including baking it in the round with 11 balls of marzipan on top. Consider my recipe here as more of a "secular" version. ;-D

SIMNEL LOAF CAKE

Celebrate Easter with our stunning simnel loaf cake. Hidden marzipan along with a toasted marzipan and cherry decoration makes this a showstopper dessert

125g mixed dried fruit (a mixture of sultanas, currants, raisins and candied mixed peel)
½ small orange , zested and juiced
vegetable or sunflower oil, for the tin
125g marzipan
125g butter , softened
100g light brown soft sugar
2 eggs
90g plain flour
50g ground almonds
½ tsp baking powder
½ lemon , zested and juiced
1 tsp mixed spice
1 tsp vanilla extract
50g glacé cherries , halved, plus 6-8 left whole, to serve
100g icing sugar

Steps:

  • Put the mixed dried fruit in a bowl with the orange juice and zest and 1 tbsp water. Cover and microwave for 2 mins, then leave to cool completely. Alternatively, heat gently in a pan, stirring now and then until the liquid has been absorbed and leave to cool.
  • Heat oven to 180C/160C fan/gas 4 and oil a 900g loaf tin before lining the base and sides with baking parchment. Roll out 50g of the marzipan into a sausage that is as long as the loaf tin. Wrap the remaining the marzipan and set aside for later. Beat the butter and sugar together until creamy. Add the eggs, flour, almonds, baking powder, lemon zest, mixed spice and vanilla (all in one go) and mix until well combined. Stir in the cooled, soaked dried fruit, then fold in the cherries.
  • Pour the cake batter into the tin until it is halfway full. Lay the sausage of marzipan down the middle, then scrape in the remaining cake mixture, making sure the marzipan is covered. Bake for 40-50 mins. Check it's cooked by inserting a skewer into the cake, if any wet mixture clings to the skewer, return to the oven for another 10 mins, then check again. Cool in the tin for 15 mins, then turn out onto a wire rack and leave to cool completely.
  • Mix the icing sugar with the juice from the lemon and enough water (about 1 tbsp) to make a thick but pourable icing. Roll the remaining marzipan into 6-8 equal-sized balls, and caramelise, if you like (see tip below). Drizzle the icing over the top of the cake, letting it stream down the sides a little. Top with the marzipan balls, alternating each one with a cherry. Will keep in an airtight container for up to a week.

200g packet ground almonds
100g golden caster sugar
50g stem ginger , finely chopped
1 tbsp cornflour , plus extra for rolling the almond paste
1 large egg white
100g sultanas
100g currants
100g raisins
50g stem ginger , finely chopped
2 tsp tea leaves, or 1 tea bag
2 tbsp golden syrup
2 tsp ground ginger
100g plain flour
50g self-raising flour
100g butter , softened
100g golden caster sugar
2 large eggs , beaten
2 tbsp apricot jam , warmed in a microwave or small pan
icing sugar , for dredging
sugar-frosted edible wafer flowers
ribbon , to tie round the cake

Steps:

  • Make the almond paste. Tip the ground almonds into a bowl and stir in the caster sugar, ginger and cornflour. Pour in the egg white and work together until you have a smooth paste. Roll into a ball, wrap in cling film and put in the fridge for at least half an hour, to firm up.
  • Preheat the oven to 180C/Gas 4/fan oven 160C. Line a 7.5cm/3in deep, 18cm/7in round cake tin with non-stick baking parchment. Use two circles for the bottom and two layers of paper for the sides (this will help protect the cake during the long bake).
  • Make the cake. Mix the fruits and stem ginger in a bowl. Put the tea in another bowl, pour over 125ml/4fl oz boiling water and infuse for 5 minutes. Strain the liquid over the fruit, then stir in the golden syrup and ground ginger.
  • Sift together the plain and self-raising flours. Beat the butter and sugar in a large bowl with an electric whisk until the mixture is light in colour and drops softly from the beaters. Beat in the eggs a little at a time, then gently stir in the sifted flours until smooth. Finally, stir in the dried fruits and their liquid.
  • Spoon half the cake mixture into the tin and smooth the surface. Unwrap the almond paste on a surface lightly dusted with cornflour, and roll a third of it into a round to barely cover the surface of the mixture. Lift and place the paste inside the tin and press down to remove any trapped air. Spoon the rest of the cake mixture on top and smooth the surface.
  • Cover the top of the tin with foil, scrunching it lightly at the sides to hold it in place. Bake for 50 minutes, remove the foil and bake for a further 45 minutes to 1 hour until a skewer inserted into the cake comes out clean (replace the foil hat if the cake shows signs of overbrowning during this time). Leave in the tin until completely cold, then remove and strip away the lining paper.
  • For the decoration, put the remaining almond paste on a surface lightly dusted with cornflour and roll into a round that is barely 18cm/7in in diameter. Trim any rough edges using the base of the tin. Brush the jam over the surface of the cake, then press the paste firmly on top, making sure it is centred and even.
  • Preheat the grill until hot. Place the cake on a baking tray and grill until light brown on top, rotating it to make sure it browns evenly. Remove and leave to cool. (You can make up to this stage in advance - wrap the cake in cling film and keep in an airtight container for up to 3 weeks. You can freeze the cake for up to 1 month)
  • To finish, put the cake on your prettiest serving plate and sift icing sugar over the almond paste. Decorate with a few sugar-frosted flowers, dust lightly with a little extra icing sugar and tie a ribbon around the cake.

Looking for an Easter cocktail with all the spices of the season? This twist on an Amaretto sour has a splash of orange juice and a dusting of cinnamon to give you Simnel cake in a glass

25ml kirsch or brandy
100ml amaretto
juice 1 lemon
juice 1 orange
100ml madeira
ice
50g golden marzipan
100g golden caster sugar
thick strip of orange zest
1 tsp cinnamon
1 tsp mixed spice
pinch dried ginger
4 cocktail sticks

Steps:

  • Start by making the spiced syrup. Put all of the ingredients into a saucepan with 100ml water. Gently bring to the boil, then turn the heat off and allow to cool completely. Once cold, pour the mixture through a sieve into a jug and chill until needed. Will keep in the fridge for up to 1 week.
  • Heat grill to high then roll the marzipan in to 4 balls and place on a baking sheet and grill for 2-3 mins or just until the very top of the marzipan is toasted. Leave to cool then when cold enough to handle thread them on the cocktail stick
  • Fill 4 tumblers with ice then pour the brandy, Amaretto, lemon and orange juice, Madeira and 50ml of the syrup into a cocktail shaker with a large handful of ice. Shake well until the out side of the shaker feels icy cold. Strain into the tumblers and add the marzipan garnish. Serve immediately.
