1 cup pimiento-stuffed olives, chopped
3/4 cup olive oil
1 celery rib, finely chopped
1/2 cup sliced pepperoncini, chopped
1/2 cup pitted Greek olives, chopped
1/4 cup cocktail onions, drained and chopped
1/4 cup red wine vinegar
2 tablespoons capers, drained
3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried basil
3/4 teaspoon pepper
1/2 teaspoon kosher salt
1/2 teaspoon celery seed
1 round loaf (1 pound) unsliced Italian bread
1/2 pound thinly sliced Genoa salami
1/2 pound thinly sliced deli ham
1/2 pound sliced mortadella
1/2 pound sliced Swiss cheese
1/2 pound sliced provolone cheese

Steps:

  • In a large bowl, combine the first 14 ingredients. Cover and refrigerate at least 8 hours. , Cut bread in half horizontally; carefully hollow out top and bottom, leaving a 1-in. shell (discard removed bread or save for another use). Spoon half the olive mixture over bottom half of bread. Layer with salami, ham, mortadella, Swiss and provolone; top with remaining olive mixture. Replace bread top. Wrap tightly. Refrigerate at least 3 hours or overnight. Cut into 8 wedges.

1 round loaf (1 pound) unsliced Italian bread
1/2 cup pitted Greek olives, sliced
1/2 cup chopped pimiento-stuffed olives
1/4 cup minced fresh parsley
1/4 cup olive oil
1 tablespoon fresh oregano leaves
1 tablespoon balsamic vinegar
1 teaspoon minced garlic
1/2 teaspoon coarsely ground pepper
1/4 teaspoon crushed red pepper flakes
1/2 cup sliced pepperoncini
1/4 pound thinly sliced hard salami
1/4 pound sliced provolone cheese
1 jar (16 ounces) roasted sweet red pepper strips, drained
1/4 pound sliced pepperoni

Steps:

I love to make these wraps when we have a busy week. They're easy to put together...and my family gobbles them up. You can adapt the filling to use ingredients you have on hand or to suit your own tastes.

6 flour tortillas (10 inches)
1 pound thinly sliced deli ham
2 cups shredded Swiss cheese
3 cups chopped lettuce
1 medium tomato, seeded and diced
1/2 cup diced cucumber
2 tablespoons chopped green pepper
2 green onions, chopped
DRESSING:
3/4 cup mayonnaise
3 tablespoons whole milk
2 teaspoons sugar
1 teaspoon prepared mustard
1/2 teaspoon celery seed

Steps:

  • On each tortilla, layer four slices of ham and 1/3 cup cheese; roll up and secure with toothpicks. Place in an ungreased 11x7-in. baking pan. Cover and bake at 350° for 14-16 minutes or until cheese is melted., Meanwhile, combine the lettuce, tomato, cucumber, green pepper and onions. In a small bowl, whisk the dressing ingredients. Unroll the tortillas halfway; top each with 1/3 cup lettuce mixture and 1 tablespoon dressing. Roll up again; serve immediately.

I was inspired to transform a ham sandwich into something wonderful using the Italian flavors I grew up with after reading a post I saw on a Sicilian Facebook group that I belong to. I love this sandwich cold but if it is a chilly winter day and you want something to warm your belly, you can wrap this sandwich in tinfoil and...

1 c ricotta cheese
1 lemon zest, grated
1/2 lb good quality shaved ham
8 slice prosciutto de parma sliced extra thin
radicchio
flat leave italian parsley
fig marmalade or spread
crusty italian bread
salt and pepper

Steps:

  • 1. Cut the radicchio in half and place it on a sheet of tinfoil. Drizzle it with olive oil and sprinkle with salt and pepper. Place in the oven under the broiler, turning frequently, until it is slightly charred on all sides. Remove from the oven and cut into thin slices. Set aside.
  • 2. Mix the ricotta, lemon zest and 1 tbsp of olive oil in a bowl. Set aside.
  • 3. With a serrated knife, cut the bread length wise then into sandwich size portions. You can go big or small depending on if it is going to be an appetizer plate of sandwiches or if you are serving a sandwich for lunch. Brush the bread with olive oil and place under the broiler until desired toastyness.
  • 4. To make this sandwich, begin by placing a schmear of the cheese mixture on the bottom half of each sandwich (you are going to add more on top!). Then layer each sandwich with the ham, prosciutto, radicchio and parsley. Place a heaping tablespoon, or more depending on the size of your bread, of the cheese mixture on each top half. Spoon a generous helping of the fig marmalade on top of the cheese. Place the top half of the sandwich on the bottom and push down slightly. I know, your mouth is watering right now. Believe me it should be! It is that good.

1 package (8 ounces) cream cheese, softened
Yellow and red food coloring
16 slices whole wheat bread
1/3 cup spreadable honey nut cream cheese
1/2 cup creamy peanut butter
2 medium bananas, thinly sliced
1/2 cup honey

Steps:

  • Divide regular cream cheese into thirds; place in separate bowls. Tint one portion yellow and one portion orange with yellow and red food coloring. Leave remaining portion white., Using a 3-in. candy corn-shaped cookie cutter, cut two pieces from each bread slice. Spread honey nut cream cheese over eight bread cutouts. Layer with peanut butter and bananas; drizzle with honey. Top with remaining bread cutouts. Decorate top of sandwiches with tinted cream cheese to resemble candy corn.
