Easy and good. Garnish with fresh scallions.

2 (14.5 ounce) cans chicken broth
2 (14.5 ounce) cans beef broth
2 (10.5 ounce) cans shrimp consomme
2 ½ cups frozen shrimp, thawed
1 teaspoon fresh dill weed
salt and pepper to taste
2 tablespoons sliced green onions

Steps:

  • In a large saucepan over medium heat, combine chicken broth, beef broth and shrimp consomme. Bring to a simmer, then strain.
  • Return broth to pot and add shrimp and dill. Heat through and adjust seasonings. Garnish with chopped green onion.

LIME PICKLED RED ONIONS

Another pickled onion recipe... so good on sandwiches. My favorite is salmon on dark bread with these pickled onions on top, which would also be a great appetizer if cut up.

1 large red onion, thinly sliced
1/4 cup fresh lime juice
1 tablespoon olive oil
1/2 teaspoon salt
2 tablespoons chopped fresh cilantro
1 teaspoon chopped fresh oregano or 1/2 teaspoon dried oregano

Steps:

  • Mix all ingredients and let onion marinate at least 3 hours at room temp.
  • Will keep up to 4 days, covered in frig.

juice 2 limes
2 small red onions , thinly sliced
½ tbsp olive oil
2 garlic cloves , finely chopped
½ tbsp ground cumin
½ tbsp smoked paprika
½ tbsp chipotle paste , or Tabasco, to taste
400g can black bean , drained and rinsed
400ml vegetable stock
half-fat soured cream , to serve
coriander leaves, to serve
crisp tortilla chips , to serve

Steps:

  • To make the lime-pickled onions, combine ½ the lime juice and ½ the onions in a small bowl, and season. Leave to pickle for 30 mins.
  • Meanwhile, heat the olive oil in a saucepan over a medium-high heat. Add the garlic and remaining onions, and season. Cook for 8 mins or until the onions are translucent. Add the spices and chipotle purée, cook for 1 min, then add the beans, stock and remaining lime juice. Simmer for 15 mins, then purée in a blender.
  • Pour the soup into a clean pan to reheat. Serve with a little of the drained pickled onions, topped with a small drizzle of soured cream and some coriander, and the tortillas on the side.

  • Toss 2 sliced sweet onions with 3 tablespoons Worcestershire sauce, 2 tablespoons olive oil, 1/4 cup water, and salt and pepper in a baking dish. Cover; roast at 425 degrees F until tender, 25 minutes. Toss 1 cup croutons and 1/2 cup grated gruyere with some parsley, olive oil, salt and pepper; sprinkle over the onions and bake 5 more minutes.

Saffron Shrimp Soup with Tubettini image

1 tablespoon each of olive oil and unsalted butter
1 teaspoon dried tarragon
1 small carrot, diced
1 small onion, diced
1/4 cup dry white wine
1 teaspoon saffron threads
4 cups chicken broth
2 cups fish stock or clam juice
4 fresh plum tomatoes, seeded and cut into fine dice
1/2 cup tubettini
1 pound shrimp, (weighed before peeling) peeled, deveined and chopped
1 cup thawed frozen petite peas
Salt and cayenne pepper, to taste
2 tablespoon chives, snipped

Steps:

  • Heat olive oil and butter in saucepan. Add tarragon, carrot and onion, cover and simmer over very low heat for 5 minutes or until tender. If vegetables are too dry, add a tablespoonful of white wine, cover and cook. When vegetables are tender, remove the cover, add remaining wine, and saffron and evaporate until almost all of the wine is gone. Add the broth, fish stock and diced tomatoes and bring to a simmer. Add the pasta and cook uncovered for 5 minutes or until just tender. Add the shrimp and peas and bring back to a simmer. Season to taste with salt and pepper and garnish with chives or scallions.

BRAISED DUCK WITH SPICED LENTILS AND LIME ONIONS



Braised Duck with Spiced Lentils and Lime Onions image

1 (5-pound) duck
2 teaspoons salt
1 1/2 teaspoons freshly ground black pepper
2 garlic cloves, crushed
2 cinnamon sticks, halved
4 cups chicken or duck fat or lard
1/3 cup olive oil
2 onions, thinly sliced
1/2 cup freshly squeezed lime juice
Spiced Pineapple Lentils, recipe follows, warmed

Steps:

  • Cut the duck in quarters and remove the drumstick tips. Season with 1 teaspoon each of the salt and pepper, rub all over with the garlic and place a piece of cinnamon stick on each quarter. Let sit at room temperature 45 minutes.
  • Preheat the oven to 350 degrees.
  • Transfer the duck to an ovenproof frying pan along with the chicken or other fat. Bring to a boil over medium-high heat, cover with foil and transfer to the oven. Bake 1 hour and 15 minutes. Set aside to cool.
  • When cool enough to handle, lift the duck from the fat and remove and discard the skin. Cover with a wet towel until serving time. To reserve, store the duck in the cooking fat and refrigerate up to a week.
  • To reheat the duck, remove from the fat if necessary, and place on a rack in a tightly covered pan. Warm in a 325 degree oven for about 15 minutes.
  • Meanwhile, to make the lime onions, heat the olive oil in a medium skillet over high heat. Saute the onions, stirring frequently, until just wilted (but not browned). Toss with the lime juice and the remaining 1 teaspoon salt and l/2 teaspoon pepper. Keep warm. The onions can be made a day in advance and refrigerated. Reheat before serving.
  • To serve, spread a bed of lentils on each serving plate. Top with a piece of duck and smother with the warm onions. Serve immediately.

8 cups water
1/2 cup chopped celery leaves
1/4 cup mixed pickling spices
1 tablespoon salt
2 pounds uncooked shell-on shrimp (31-40 per pound)
PICKLING MIXTURE:
2 large onions, sliced
8 bay leaves
1-1/2 cups olive oil
3/4 cup white wine vinegar
3 tablespoons capers
2-1/2 teaspoons celery seed
1-1/4 teaspoons salt
1/4 teaspoon hot pepper sauce

Steps:

  • In a large saucepan, combine water, celery leaves, pickling spices and salt; bring to a boil. Add shrimp. Reduce heat; simmer, uncovered, until shrimp turn pink, 4-6 minutes. Drain; peel and devein shrimp, leaving tails on., Layer shrimp, onions and bay leaves in a 13x9-in. dish. In a small bowl, whisk oil, vinegar, capers, celery seed, salt and pepper sauce; pour over shrimp. Refrigerate, covered, 24 hours., Just before serving, drain shrimp and onions, reserving 1/2 cup marinade. Discard remaining marinade and bay leaves. Transfer shrimp and onions to a serving bowl or individual glasses; drizzle with reserved marinade.
