Puff Pastry Turnovers with Shrimp, Scallops and Spinach image

3 tablespoons butter
8 ounces mushrooms, sliced
1/3 cup finely chopped shallots
1 cup whipping cream
1/2 cup dry white wine
1/2 cup canned low-salt chicken broth
1 1/2 tablespoons Dijon mustard
1 teaspoon white wine vinegar
1 10-ounce package frozen chopped spinach, thawed, squeezed dry
1 17 1/4-ounce package frozen puff pastry (2 sheets), thawed
16 uncooked large shrimp, peeled, deveined
8 sea scallops, halved horizontally

Steps:

  • Preheat oven to 500°F. Melt butter in heavy large skillet over medium-high heat. Add mushrooms and shallots; sauté 5 minutes. Add cream, wine and broth. Boil until mixture is reduced to 1 cup, about 12 minutes. Mix in mustard and vinegar, then spinach. Season with salt and pepper. Cool.
  • Roll out 1 pastry sheet on lightly floured surface to 12-inch square. Place 1/8 of spinach mixture on bottom half of 1 square. Top spinach mixture with 2 shrimp and 2 scallop halves. Brush pastry edges with water. Fold unfilled half of pastry over filling, forming rectangle. Press edges of pastry closed with tines of fork. Place pastry on large baking sheet. Repeat with remaining pastry, spinach mixture, shrimp and scallops.
  • Bake pastries 5 minutes. Reduce heat to 375°F. Bake pastries until puffed and golden brown, about 15 minutes longer. Serve warm.

5 tablespoons butter, divided
1/2 cup panko bread crumbs
1 teaspoon garlic powder, divided
1 pound uncooked shrimp (31-40 per pound), peeled and deveined, tails removed
2/3 cup spreadable garlic and herb cream cheese, divided
1/2 cup sherry or chicken broth
1/4 cup minced fresh parsley
1/2 teaspoon dried tarragon
1/8 teaspoon ground nutmeg
1 sheet frozen puff pastry, thawed
1 large egg, beaten, room temperature
Lemon wedges, optional

Steps:

  • Preheat oven to 400°. In a large skillet, melt 2 tablespoons butter over medium heat. Add bread crumbs and 1/4 teaspoon garlic powder. Cook and stir until toasted, 3-4 minutes. Transfer to a small bowl; wipe pan clean., In the same skillet, melt remaining 3 tablespoons butter over medium heat. Add shrimp and remaining 3/4 teaspoon garlic powder; cook and stir until shrimp turn pink, 6-8 minutes. Reduce heat to low; stir in 1/3 cup cream cheese, sherry, parsley, tarragon and nutmeg until combined. Remove from the heat., On a lightly floured surface, unfold puff pastry. Roll into a 12-in. square. Cut into four 6-in. squares. Spread remaining 1/3 cream cheese over squares to within 1/2 in. of edges. Using a slotted spoon, place about 1/2 cup shrimp mixture on one side of each square. Fold dough over filling. Press edges with a fork to seal. Brush beaten egg over tops. Prick tops with a fork. Sprinkle with reserved crumb mixture, pressing lightly to adhere. Place on a parchment-lined baking sheet. Bake until golden brown, 20-25 minutes. If desired, serve with lemon wedges.

2 tablespoons butter
1 tablespoon minced shallot
2 tablespoons finely chopped sweet red peppers
2 tablespoons flour
1 cup half-and-half cream (10%)
2 cups crabmeat
1 cup peeled raw shrimp (thawed)
1/4 cup dry sherry
3/4 cup sliced mushrooms (regular white or mixed variety)
1/4 cup grated lightly smoked cheddar cheese
1/4 cup grated parmesan cheese
2 sheets puff pastry, thawed

Steps:

  • Melt butter, add onion and red pepper and saute until just softened.
  • Add flour and stir to incorporate the flour with the butter/onion mixture. Slowly add the cream, stirring constantly until all cream has been added. Cook until thick and smooth. Add crabmeat, raw shrimp, mushrooms and sherry to the sauce and cook until shrimp are pink through.
  • Stir in the grated cheeses. Let simmer until reduced and thickened a little more.
  • Line a deep dish pie plate (or any other type of ovenproof dish) with the pastry (keep the parchment paper and put that down first so the pastry won't burn to the bottom).
  • Add the crab/shrimp mixture. Put another sheet of pastry (no parchment) on the top, pinch edges together. Cut vent holes in the top and brush with a little melted butter. Sprinkle with more cheese if you wish.
  • Bake at 350 for about 30 minutes or until the pastry is puffed and golden.

1/2 cup flour
heavy cream
1 lb medium shrimp, 41 to 50 peel and deveined
1/2 teaspoon thyme
2 tablespoons minced fresh chives
salt

18 pepperidge farm frozen puff pastry shells
1 beaten egg
1 teaspoon water

Steps:

  • In a large skillet add in butter and melted over a medium heat add in the flour and using a wire whisk blending to form a roux add in heavy cream to form a sauce and simmer for 5 minutes. Add in the shrimps, thyme, chives and salt and pepper to taste. Simmer over a low heat for 5 minutes and remove from the stove top and set aside to cool for an hour.
  • Heat the oven to 350°F Beat egg and the water in a small bowl with a fork. Brush the pastry shells with the egg mixture. Place onto a cookie sheet and into the oven.
  • Bake for 15 minutes or until golden brown. Remove from oven and place onto a rack to cool and spit the top third off and remove some of the center and fill with the cream shrimp's mixture and top off with the top layer.

1/4 cup butter
1 tablespoon vegetable oil
2 lbs large shrimp, peeled and deveined with tails on
2 onions, chopped
2 cups sliced mushrooms
1/2 cup sherry wine
2 bell peppers, chopped
2 tablespoons tomato paste
3 cups heavy cream
1 teaspoon chili powder
salt and pepper, to taste
commercial puff pastry sheet, cut into 4-inch diamond shapes, baked according to package directions, and split in half
6 shrimp, cooked, shelled, and deveined, with tails on

  • Heat 2 tbs. butter and the oil in a skillet,and saute shrimp 2 to 3 minutes,depending on size, until bright pink.

1 tablespoon olive oil
2 teaspoons minced shallots
1/4 lb shrimp, shelled and chopped medium fine
3 1/2 ounces mushroom caps, chopped medium-fine (shiitake or brown)
1 tablespoon minced serrano ham, cut from 1/8 inch thick slice (or prosciutto)
2 teaspoons minced parsley
1 1/2 teaspoons fresh thyme
1/4 teaspoon sweet paprika (preferably Spanish smoked)
2 tablespoons dry sparkling wine (such as cava or dry white wine)
6 tablespoons heavy cream
4 teaspoons grated cured manchego cheese (or Parmesan cheese)
fresh grated nutmeg (a pinch)
4 teaspoons Worcestershire sauce
kosher salt or sea salt
fresh ground pepper

Steps:

  • Heat oven to 450°; roll out puff pastry to a thickness of 1/8 inch, then cut into rounds with a 2 ½ inch scalloped-edge cookie cutter, and transfer to a baking sheet.
  • With a 1 ½ inch cookie cutter, centered over the 2 ½ inch rounds, make incisions, about three-quarters through the dough.
  • Bake on an upper rack until golden brown, about 8 minutes.
  • Turn off the oven, and leave the pastries in the oven with the door slightly ajar for another 5 minutes, or until the pastries are thoroughly crisped.

1 dash onion salt, to taste
1 dash Worcestershire sauce
1 (6 ounce) package cream cheese
1 teaspoon chives
1 mushroom, diced

Steps:

  • Bake puff pastry shells according to package directions.
  • When done, cut out the top and scoop out the dough.
  • Discard the dough, keep the top to the pastry.

These are easy to make and make a beautiful presentation for entertaining. Using premade pesto and Alfredo sauce make these easy on the host(ess). The prep time is all during the baking time, so you can actually have these on the table in 30 minutes.

1 pkg frozen puff pastry shells (10 oz)
4 sprig(s) fresh parsley
2 green onions
1 lemon
4 oz baby portabella mushrooms, sliced
1 Tbsp garlic butter
3/4 lb small raw shrimp, peeled & deveined
3/4 lb bay scallops
1 Tbsp basil pesto
1 Tbsp flour
1/2 c alfredo sauce

Steps:

  • 1. Preheat oven to 400F. Place the frozen pastry shells, top side up, on the baking sheet. Bake for 20-25 minutes until puffed up and golden.
  • 2. While shells are baking, chop parsley and onions finely and set aside. Cut the lemon and juice half of it, to make 1 tablespoon juice. Set aside.
  • 3. In a large skillet, melt the garlic butter. Add the sliced mushrooms and cook for 2 minutes. Add the shrimp, scallops and pesto. Cook another 2 minutes or until the seafood is opaque.
  • 4. Add flour, Alfredo sauce, the tablespoon of lemon juice, the parsley and onions. Stir to combine and simmer 2 minutes, stirring occasionally, until a little bit thickened.
  • 5. Put the baked pastry shells on serving plates. Remove the tops and hollow out the insides. Fill the shells with the seafood mixture. Sprinkle additional finely chopped parsley over the top, optional. Serve.

1 package (5.2 ounces) garlic & herb spreadable cheese, softened
1 tablespoon finely chopped fresh parsley
2 slices bacon, cooked and crumbled
18 fresh jumbo shrimp (about 1 pound), peeled with tail left on, deveined and butterflied
1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed

Steps:

  • Heat the oven to 400°F.
  • Stir the cheese, parsley and bacon in a medium bowl. Spoon about 2 teaspoons cheese mixture down the center of each shrimp. Fold the sides of the shrimp over the filling.
  • Unfold the pastry sheet on a lightly floured surface. Cut the pastry sheet crosswise into 18 (1/2-inch wide) strips. Starting at the top, wind 1 pastry strip around 1 shrimp, slightly overlapping the pastry and ending just before the tail. Repeat with the remaining pastry strips and shrimp. Place the pastries onto a baking sheet.
  • Bake for 15 minutes or until the pastries are golden brown.
  • TIPS
  • • Try to keep Puff Pastry from becoming too warm when working with it by only using your fingertips-the coolest part of your hands.
  • • Use an egg wash to help seal filled pastries and connect Puff Pastry pieces: mix 1 egg plus 1 teaspoon water, brush between layers, then pinch or press together.

  • Thaw and cut pastry into squares. stir remaining except egg in bowl and add to center of squares. fold and crimp pastry with fork. punch two vents with knife. brush with egg and place in preheated 400 degree oven for 30 minutes until brown.

SHRIMP BISQUE IN PUFF PASTRY

1/4 cup grated onion
2 tablespoons grated green bell peppers
2 tablespoons butter or margarine
1 (10 3/4-ounce) can cream of potato soup
3/4 cup light cream
1/2 cup grated sharp cheddar cheese
2 teaspoons lemon juice
1 1/2 cups shrimp, cooked and peeled or seafood of choice
1 (10-ounce) package frozen puff pastry shell

Steps:

  • In a skillet, sauté onion and green pepper in butter. Blend in soup, cream, Cheddar cheese, lemon juice, and prepared seafood. Season to taste. Cook about 5-7 minutes. This may be stored in refrigerator or frozen until serving. When ready to serve, prepare puff pastry shells according to package directions. Thaw and heat seafood mixture thoroughly; pour into baked pastry shells.
