Tempura Shrimp Maki Roll with Sambal Aioli and Wasabi Tobbiko image

3 cups short grain rice
3 3/4 cups water
1/2 cup rice wine vinegar
3 tablespoons mirin
3 tablespoons sugar
2 tablespoons lemon juice
1 tablespoon sambal
1 teaspoon garlic
3 egg yolks*
1 cup canola oil
Salt
Pepper
1/2 cup rice flour
1/2 cup all-purpose flour
1 teaspoon salt
2 cups club soda
12 medium sized shrimp, peeled, deveined with tail removed
4 sheets nori
Sushi rice
Sambal aioli
1 cup julienne cucumber
1/2 cup julienne red bell pepper
1/2 cup wasabi tobbiko

Steps:

  • For the sushi rice: Wash the rice several times until the water runs clear. Cover the rice with cold water and soak for 20 minutes. Drain and place the rice in a rice cooker. Add 3-3/4 cups water. Cover and cook until the water is absorbed. While the rice is cooking, combine the rice wine vinegar, mirin and sugar in a small saucepan and cook over low heat until the sugar is dissolved. Remove from the heat. When the rice is cooked, remove from the cooker and place in a large wooden bowl. Using a rubber spatula, fold in the vinegar and sugar mixture. When the vinegar mixture is folded in, cover the bowl with a damp towel and let rest for 30 minutes.
  • For the sambal aioli: In the bowl of a food processor or blender, combine the lemon juice, sambal, garlic and egg yolks and process until combined. With the processor running, slowly drizzle in the canola oil to create an emulsion. If the aioli needs to be thinned out after all of the oil has been added, thin with a little water or lemon juice. Season with salt and pepper.

  • To make the Tempura Shrimp Maki Roll: Preheat a fryer to 360 degrees F. In a large bowl, combine the rice flour, all-purpose flour and salt. Add the club soda until the consistency of pancake batter is achieved. Butterfly the shrimp by slicing lengthwise down the back. Dip the shrimp in the tempura batter and then place in the fryer and fry until golden brown, about 3 minutes. Remove from the oil to a paper towel-lined plate.
  • On a sushi mat, lay down 1 piece of the nori, shiny side down. Spread the sushi rice on one half of the nori, about 1/4-inch thick. Spread about 1 tablespoon of the sambal aioli over the rice. In the center of the rice, lay down 1/4 cup of the cucumber and a few strip of red bell pepper in a line that reaches from one side of the nori to the other. Top the cucumber with 3 pieces of the tempura shrimp. Sprinkle 1/4 cup of the wasabi tobbiko over the shrimp. Roll the sushi up, using the sushi mat. To seal the roll, use a little water along the edge of the nori. Cut the roll into 6 pieces. Repeat this procedure 3 more times to create 4 rolls.

1/3 cup seasoned rice vinegar
2 teaspoons sugar
1 teaspoon salt
1 1/2 cup short grained sushi rice
1 1/2 cups water
4 sheets toasted nori
1 Kirby cucumber or 1/2 regular cucumber, seeded and cut into matchsticks
1/2 firm-ripe Hass avocado, peeled, thinly sliced lengthwise, sprinkled with lemon juice
8 large cooked shrimp, peeled and cut in 1/2, lengthwise
Soy Sauce

Steps:

  • For the rice:
  • Mix together vinegar, sugar, and salt.
  • Rinse the rice with cool water in a colander; drain. Put the rice and water in a medium saucepan with a tight-fitting lid. Bring to a boil over high heat, reduce heat to very low and simmer, tightly covered, (For a good seal, wrap the pan's lid tightly with a small kitchen towel and cover the saucepan. Make sure the towel's edges are folded up well away from the heat.) Cook until all the water is absorbed, about 15 minutes. Remove the rice from the heat (don't uncover), and set aside for 10 minutes.
  • Fluff the rice with a fork and transfer to a large bowl. Add the vinegar mixture and toss with a wooden spoon. Spread the rice out on a parchment paper-lined baking sheet. Fan the rice continuously with a fan or magazine until cooled. Cover the rice with a damp towel.
  • To assemble rolls:
  • Place the sushi mat with the slats running crosswise directly in front of you on a clean work space. Lay a sheet of nori shiny-side down and lined up with the closest edge of the mat. Light moisten fingers with water, and evenly press about 1/4 of the rice onto the nori, with 1 1/2-inches uncovered at the far edge. Line up the fillings about an inch from the closest near edge, evenly across the rice. Leave 1 inch of rice uncovered at the far edge.
  • Beginning with the near edge of the mat, tightly roll up the nori, rice, and fillings into a cylinder. Firmly tug on the rounded mat over the roll as you pull on the far edge of the mat to tighten the roll. Open the mat, dab unsealed edge of nori with a bit of water and roll the sushi forward to seal. Transfer the sushi to a plate and cover with damp paper towels. Repeat with remaining rice and fillings.
  • Cut each sushi roll, crosswise, into 8 pieces with a sharp wet knife.
  • Serve with bowl of soy sauce for dipping.

6 sheets nori (seaweed)
4 1/2 cups cooked sushi rice
3/4 lb cooked medium shrimp, peeled, deveined, and halved (1 1/2 cups)
12 slices julienne-cut carrots
1 1/2 medium avocados, peeled and cut into 12 1/4-inch-thick slices
6 green onion tops
1 cucumber, peeled, halved lengthwise, seeded, and cut into 12 7-inch julienne-cut strips

Steps:

  • Cut off top quarter of nori sheet along short end.
  • Place nori, shiny side down, on a sushi mat covered with plastic wrap, with long end toward you.
  • Pat 3/4 cup rice over nori with moist hands, leaving a 1-inch border on one long end of the nori.
  • Arrange 1/4 cup shrimp, 2 carrot strips, 2 slices avocado, 1 green onion top, and 2 cucumber strips along top third of rice-covered nori.
  • Lift edge of nori closest to you; fold over filling.
  • Lift bottom edge of sushi mat; roll toward top edge, pressing firmly on sushi roll.
  • Continue rolling to top edge; press mat to seal sushi roll.
  • Let rest, seam side down, for 5 minutes.
  • Repeat procedure with remaining ingredients.
  • Slice each roll into 8 pieces with a sharp knife.
