MOM'S SHRIMP MACARONI SALAD



Mom's Shrimp Macaroni Salad image

My mom's unusual salad has been popular with friends and family for many years. This salad calls for a lot of ingredients but is worth the effort. If possible, use pickle juice instead of the vinegar.

1 cup uncooked elbow macaroni
1 tablespoon finely diced onion
1 tablespoon chopped green bell pepper
½ cup diced celery
¾ cup mayonnaise
¼ cup sweet pickle relish
2 tablespoons ketchup
2 tablespoons white wine vinegar
1 teaspoon prepared horseradish
¼ teaspoon hot pepper sauce
1 tablespoon chopped fresh parsley
½ teaspoon celery seed
⅛ teaspoon chili powder
ground black pepper to taste
2 ounces cooked salad shrimp

Steps:

  • Bring a large pot of salted water to a boil, add the macaroni and let it cook until al dente; drain well.
  • In a medium-size mixing bowl, combine onion, bell pepper, celery, mayonnaise, sweet pickle relish, ketchup, pickle juices, horseradish, hot pepper sauce, parsley, celery seed, chili powder, salt, black pepper and shrimp. Fold the macaroni into the mixture. Cover and chill at least 3 hours before serving.

1 package (16 ounces) elbow macaroni
1 to 1-1/2 pounds cooked small shrimp
1 package (16 ounces) frozen peas, thawed
7 to 8 celery ribs, finely chopped
1 small onion, finely chopped
DRESSING:
1-3/4 cups mayonnaise
3/4 cup French salad dressing
2 tablespoons sugar
2 tablespoons white wine vinegar
1-1/2 to 2-1/2 teaspoons paprika
1 to 2 teaspoons salt
1 to 2 teaspoons garlic powder
1 to 2 teaspoons pepper

Steps:

  • Cook macaroni according to package directions; drain and rinse in cold water. In a large bowl, combine the macaroni, shrimp, peas, celery and onion. , In another bowl, whisk the dressing ingredients. Pour over salad and toss to coat. Cover and refrigerate for at least 8 hours before serving.

1 1/2 tablespoons lemon juice (fresh is best)
1 tablespoon vegetable oil
1 cup elbow macaroni, cooked
2 cups diced shrimp, fresh or canned (I used 100/200 frozen pre-cooked salad shrimp,whole)
2 hard-boiled eggs, chopped
2 tablespoons green peppers, chopped
1 teaspoon onion, chopped
1/2 cup fresh tomato, diced
2 tablespoons sour cream
1/2 teaspoon salt
1/2 cup mayonnaise
pepper

Steps:

  • Mix together lemon juice and oil.
  • Combine with cooked macaroni.
  • Chill for several hours, stirring occasionally.
  • Fold in shrimp, eggs, green pepper, onion, celery, and tomato.
  • Blend together sour cream, salt, pepper, and mayo and then fold into macaroni mixture.
  • Serve in nice salad bowl or arrange on crisp salad greens.

1 package (10 ounces) frozen cooked salad shrimp, thawed
1/2 cup chopped celery
1/2 cup chopped onion, divided
2 hard-boiled large eggs, chopped, divided
1/4 cup minced fresh parsley
1 cup mayonnaise
1/4 cup chili sauce
1 tablespoon chopped dill pickle or dill pickle relish
1/2 teaspoon Worcestershire sauce
1/2 teaspoon seasoned salt

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Place in a bowl; add the shrimp, celery, 1/4 cup onion, half of the chopped eggs and parsley., In a small bowl, combine the mayonnaise, chili sauce, pickle, Worcestershire sauce, seasoned salt, and remaining onion and eggs. Stir into pasta mixture. Cover and refrigerate until serving.

1 ½ cups elbow macaroni
¾ cup mayonnaise (such as Best Foods®)
1 large cucumber, diced
½ cup frozen peas
2 ribs celery, diced, or more to taste
4 radishes, sliced, or more to taste
3 green onions, chopped, or more to taste
1 teaspoon seasoned salt (such as Season-All®), or to taste
1 pound cooked medium shrimp
3 hard-boiled eggs, sliced, or more to taste
1 small avocado, sliced
1 medium tomato, sliced

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and pour into a salad bowl.
