1 pound medium shrimp ((thawed & peeled))
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
8-10 medium flour tortillas
Toppings (optional, to taste): sour cream, salsa, iceberg lettuce, tomatoes, cilantro, etc.

Steps:

  • Prep your shrimp. If frozen, run them under cool water until thawed. Peel them and remove the tails.
  • Meanwhile, prep your toppings.
  • Add the shrimp to a skillet along with the olive oil and spices. Cook over medium-high heat until the shrimp are no longer pink, flipping/stirring them occasionally (about 5-6 minutes).
  • Assemble tacos as desired and serve immediately.

4 cloves garlic, minced

1 ½ pounds uncooked medium shrimp, peeled and deveined
1 teaspoon paprika
3 tablespoons butter, cubed
3 tablespoons lemon juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed 9x12-inch baking pan with parchment paper and grease with cooking spray.
  • Place asparagus on the prepared baking pan and drizzle with 1 tablespoon olive oil. Sprinkle with garlic, 1 teaspoon salt, and 1/2 teaspoon pepper; toss until well coated. Arrange asparagus in a single layer.
  • Bake in the preheated oven until slightly tender, about 6 minutes.
  • Remove from oven and place shrimp on one side of the pan. Drizzle with remaining 1 tablespoon olive oil, 1 teaspoon salt, 1/2 teaspoon pepper, and smoked paprika; toss until well coated. Place shrimp in a single layer next to the asparagus. Top asparagus and shrimp with cubed butter.
  • Roast in the preheated oven until shrimp is opaque, about 6 minutes.
  • Remove pan from oven and drizzle with lemon juice.

1 garlic clove, minced
2 tablespoons water
3/4 pound uncooked medium shrimp, peeled and deveined
1 medium sweet red pepper, thinly sliced
1 jalapeno pepper, seeded and finely chopped
1 teaspoon cornstarch
2 tablespoons soy sauce
1 tablespoon lime juice
1/2 teaspoon grated lime zest
Hot cooked rice

Steps:

  • Place the asparagus, garlic and water in a 1-1/2-qt. microwave-safe dish. Cover and microwave on high for 3-4 minutes or until asparagus is crisp-tender. Remove with a slotted spoon; keep warm, Add shrimp, red pepper and jalapeno to dish. Cover and cook on high for 3 minutes or until shrimp turn pink. Remove with a slotted spoon; keep warm., In a small bowl, whisk the cornstarch, soy sauce, lime juice and lime zest until blended; stir into the cooking juices. Microwave, uncovered, on high for 1 minute or until sauce is thickened and bubbly., Stir in shrimp and asparagus mixtures. Cook, uncovered, on high for 30-60 seconds or until heated through. Serve with rice.

Shrimp and Asparagus Tacos image

This recipe was a creation I made for dinner one night that for some reason just sounded good. I couldn't find a recipe that fit the bill so this is what I came up with. Everyone loved it so I figured I'd better submit it to Food.com so I'd remember how I made them. I made 3 servings with shredded cheddar cheese blend and mine with crumbled goat cheese. The goat cheese was Delicious!! If I do say so myself.

12 ounces medium shrimp
8 corn tortillas
1 lb fresh asparagus
3 garlic cloves
2 tablespoons olive oil
2 teaspoons dried cilantro, divided
1/2 cup cheddar cheese (shredded) or 1/2 cup goat cheese (crumbled)
1/2 cup fat free Greek yogurt
1 teaspoon taco seasoning
salt and pepper
1 teaspoon lime juice

Steps:

  • Cut asparagus into 1 1/2 inch pieces, saute in olive oil and garlic til tender, season with salt, pepper and 1 1/2 tsp cilantro. Aprox. 5 - 8 minutes over med heat. Add in shrimp season lightly and cook covered for another 3 - 5 minutes. In the meantime, mix together yogurt, 1/2 tsp cilantro, lime, salt and pepper and taco seasoning.
  • Warm tortillas on a warm grill pan (no oil) over med. heat til lightly toasted on one side, turn over. Sprinkle cheese on tortilla, top with 4 or so shrimp asparagus and yogurt sauce. Eat warm.
