These strawberry shortcake biscuits have been in my husband's family for over 40 years. It is the best sweet biscuit to have under your strawberry and cream dessert. Delicious right out of the oven slathered with butter. They are also very good on their own with peanut butter.

2 ½ cups all-purpose flour
½ cup white sugar
3 tablespoons baking powder
1 teaspoon salt
½ cup shortening
2 large eggs
1 ½ cups milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.
  • Mix flour, sugar, baking powder, and salt together in a bowl. Cut in shortening and mix to combine.
  • Beat eggs in a separate bowl and mix in milk to combine. Add to the dry ingredients and mix until moistened. Pour batter evenly into each of the prepared muffin cups and transfer to the oven as quickly as possible.
  • Bake in the preheated oven until golden brown, about 20 minutes.

SWEET BISCUITS FOR BREAKFAST OR SHORTCAKE



Sweet Biscuits for Breakfast or Shortcake image

I wanted a sweet biscuit, but found that the more sugar I used, the heavier they would be. I started experimenting with a basic rolled biscuit recipe from The Joy of Cooking, and came up with this. The way you handle the dough is important, and be sure to use a sharp cutter to cut the rounds, so all of the edges puff up. A preheated oven and an insulated cookie sheet are necessary. If you don't have an insulated sheet, put two regular sheets together. Recipe is easily doubled. I've served this as shortcake with strawberries and whipped cream, and we also like it at breakfast with apple jelly.

2 cups all-purpose flour (I measure by fluffing up the flour, then dipping the metal cup into the canister and shaking the flo)
1/4 cup all-purpose flour, for patting out the dough
1 teaspoon regular table salt
1 tablespoon baking powder
3/4 cup powdered sugar
1/4 lb ice cold unsalted butter, if you have european style butter,use that
3/4 cup half-and-half

Steps:

  • Preheat oven to 400, I place a rack in lowest position in the oven.
  • Combine dry ingredients.
  • Cut in butter.
  • Stir in liquid until it just begins to pull from the sides- it will be pretty moist.
  • Spread 1/4 C flour on a pastry board and dump the dough onto the flour.
  • Gently turn the dough until all sides are covered with flour.
  • Knead by gently rubbing the dough into the flour, a scant 8 to 10 turns.
  • Pat the dough into a 1 inch thich slab.
  • Cut into rounds with a sharp round biscuit cutter- I use a 2 1/2 inch cutter-- you can push the scraps together to make room to cut a few more, try not to knead it too much.
  • Place on insulated cookie sheet about 1/2 inch apart.
  • Put in HOT oven and bake for 12- 15 minutes.
  • You can test by lifting the top layer of the center biscuit; if it's done it will look dry inside and the edges will be golden.
  • (I get 9 biscuits when I use a 2 1/2" cutter).

2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
10 tablespoons unsalted butter, chilled and cut into pieces
2/3 cup buttermilk
1 tablespoon chilled buttermilk
2 lbs baskets strawberries (about 7 cups hulled and halved, or quartered, if very large)
1/2 cup sugar
2 tablespoons sugar
2 tablespoons raspberry preserves
1 cup chilled whipping cream
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375°F.
  • Biscuits: Sift the flour, sugar, baking powder, and salt into a large bowl.
  • Add the butter and rub it in with your fingertips until the mixture resembles a coarse meal.
  • Gradually add the buttermilk, tossing with a fork until large moist clumps form.
  • Gather the dought into a ball. Divide it into 4 pieces. Shape each piece into a 3-inch round. Transfer the rounds to a baking sheet, spacing them evenly.
  • Bake the biscuits until a tester inserted into the centre comes out dry (about 20 minutes) - the biscuits will be pale. Transfer the biscuits to a rack and cool until they are lukewarm. (The biscuits can be prepared 6 hours ahead; cool, wrap tightly in aluminum foil, and store at room temperature; before serving, reheat the biscuits in a 350 F oven for 5 minutes).

My mum made these biscuits, and they are delicious. I like them with the cream cheese filling from recipe 24672, and topped with strawberries and the whipped cream from recipe 410125 (filling, no mint). I do not recommend substituting margarine for butter, but it can be done in a pinch. I use low fat sour cream. I sometimes form 8 rough balls, flattened instead of rolling the dough and cutting rounds.

1/2 cup yellow cornmeal
4 teaspoons baking powder
Pinch of salt
3 tablespoons sugar
8 tablespoons cold butter, in pieces
1 egg, lightly beaten
1/2 cup buttermilk
1 quart strawberries
Superfine sugar
1 tablespoon kirsch
1 1/2 cups heavy cream
Confectioners' sugar

Steps:

  • Preheat oven to 450 degrees. Cover a baking sheet with foil.
  • Combine flour, cornmeal, baking powder, salt and sugar in a food processor and process to blend. Add the butter and pulse until the mixture is uniformly crumbly. Transfer to a bowl.
  • Using a fork or your fingertips, lightly stir in the beaten egg and buttermilk, moistening the ingredients enough so they can be gathered together to form a ball of soft dough. Turn out onto a lightly floured board.
  • Pat the dough until it is uniformly one-half inch thick or just slightly thicker. Cut into six four-inch rounds. You can re-form the scraps and cut those. Place the dough rounds on the baking sheet and bake until medium brown on the bottom and just beginning to brown on top - 14 to 15 minutes. Remove from the oven and cool on racks.
  • Rinse, hull and halve the strawberries. Sweeten to taste with superfine sugar and allow to macerate in kirsch. Whip the cream with one tablespoon of confectioners' sugar.
  • To serve, split each of the shortcakes in half horizontally with a sharp knife. Spread the bottom halves with some of the whipped cream, top with strawberries, spread the undersides of the top halves with the rest of the cream, then cover the strawberries with the tops of the cakes. Dust the tops with sifted confectioners' sugar before serving.

GRANDMA'S SHORTCAKE DROP BISCUITS

During the Summer months, grandma would make these bicuits and put all kinds of berries on them with whipped cream. As a kid I thought they were the greatest. Well here I am older now and making my own. I garnish mine with a piece of my chocolate mint leaves I have in my spice garden.

1/2 cup nonfat milk
2 tablespoons melted light butter
2 tablespoons sugar (could use less sugar or substitute Splenda)
1/4 teaspoon cinnamon
2 cups reduced-fat baking mix

  • Preheat oven to 425 degrees.
  • Mash the drained sweet potatoes.
  • Melt light butter, stir in sugar.
  • Combine in bowl, mashed sweet potatoes, milk, butter/sugar mixture and cinnamon.

  • Drop by spoonfuls onto baking sheets lightly coated with non stick cooking spray, making 6 equal portions.

Steps:

  • Preheat the oven to 425°F; move a rack to the top third of the oven.
  • Whisk together the flour and the sugar.
  • In a separate bowl, whisk the vanilla into the cream.
  • Make a well in the flour/sugar mixture, pour the vanilla and cream into the well, and stir until everything comes together. If there's dry flour around the sides and bottom of the bowl, stir in additional cream or milk until all the flour is moistened.
  • Turn the dough onto a well-floured work surface, sprinkle flour on top of the dough, and fold it over several times.
  • Pat the dough into a 7" circle about 1/2" thick.

2 cups (8 1/2 ounces) Perfect Pastry Blend or King Arthur Unbleached All-Purpose Flour*
1 teaspoon salt
1 tablespoon baking powder
2 teaspoons sugar
1 to 1 1/4 cups heavy cream, enough to make a cohesive dough
1 to 2 tablespoons melted butter

Steps:

  • If you use unbleached all-purpose flour, substitute 1/4 cup (1 3/8 ounces) cornstarch for 1/4 cup of the flour. Sift together the flour, salt, baking powder, and sugar. Stir in enough heavy cream to moisten the dough thoroughly. You'll probably use about 1 cup in the summer, 1 1/4 cups in the winter, and 1 cup + 2 tablespoons at the turn of the seasons. You want to be able to gather the dough togeteher, squeeze it, and have it hang together, without dry bits falling off. Turn the dough out onto a lightly floured work surface, and very gently pat it into an 8" circle about 3/4" thick. Use a sharp biscuit cutter (we use a 2 1/4" cutter) to cut rounds. Dip the rounds into melted butter, and place them on a lightly greased baking sheet. Sprinkle with coarse sugar, if desired; this is a nice touch if you're going to use the biscuits for shortcake. Bake the biscuits in a preheated 425°F oven for 15 to 18 minutes, till they're golden brown. If you have any melted butter left over, brush it on the baked biscuits. "Serve hot!," says David. Yield: 10 large (about 2 1/2"), ultra-tender biscuits. To make Maine-style strawberry shortcake: Trim and slice 1 quart fresh strawberries. Sprinkle with 2 tablespoons sugar, stir, and set aside at room temperature for several hours; or refrigerate overnight. Whip 1 cup (8 ounces) heavy cream till it barely holds its shape. Sweeten to taste with granulated sugar. Split oven-warm biscuits in half. Top the bottom half of each with whipped cream, strawberries, more whipped cream, then the top half of the biscuit. Add a dollop of whipped cream and a slice of strawberry on top, as a garnish. Yield: 8 to 10 shortcakes.

1/2 cup All-Bran® Original
1 egg, well beaten
1 cup milk
1 1/2 cups all-purpose flour
3 tablespoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/3 cup shortening
1 tablespoon margarine or butter, melted

Steps:

  • 1. Combine KELLOGG'S ALL-BRAN cereal, egg and milk. Let stand about 2 minutes or until cereal softens.2. In medium mixing bowl, stir together flour, sugar, baking powder and salt. Using pastry blender, cut in shortening until mixture resembles coarse crumbs. Add cereal mixture, stirring only until combined. Turn dough out on lightly floured board and knead gently about 5 times. Roll out to 1/4 inch thickness. Brush with melted margarine. Fold over and roll out again to 1/2 inch thickness. Cut with floured 2 3/4-inch biscuit cutter. Place on ungreased baking sheet.3. Bake at 450°F about 10 minutes or until golden brown. Serve hot or cold, split and covered with fruit.
