12 jumbo shrimp or 12 prawns, peeled and deveined
salt & freshly ground black pepper
Tabasco sauce
2 tablespoons olive oil
4 tablespoons sherry wine

Steps:

  • Heat the olive oil in a frying pan and stir fry the prepared shrimp or prawns for 2-3 minutes until pink.
  • Add the sherry to the pan; stir and continue to cook for 30 seconds until the shrimp are very fragrant.
  • Season with Tabasco sauce, salt and pepper to taste and serve immediately.

1 T butter
1T Olive Oil
1 large or 2 med. onions (yellow or sweet)
4 cloves garlic finely chopped
1 cup Fish Broth
5 small Red Potatoes peeled and cubed
2 cups Half and Half
1- 8oz.creamcheese(softened)
1 C crabmeat (canned or fresh)
1 lb. med shrimp cleaned
1 can whole Kernel Corn
1/2 t. Kosher salt
1/4 t. black pepper
1/8 t. Cayenne pepper
1/2 t. Old Bay Seasoning
3/4 C Dry Sherry
Green Onions for garnish

Steps:

  • In large, heavy saucepan, heat butter and olive oil over medium heat until butter melts. Add onions and cook until tender (about 4-5 minutes). Add garlic. Stir about 2 minutes. Add fish broth and bring to a boil. Add potatoes, cover and simmer about 10 minutes or until potatoes are just tender. Stir in creamcheese until blended. Add half and half, salt, pepper, cayenne, Old Bay. Over medium to medhigh heat, stir until well blended and thickened. Add shrimp and crabmeat. Heat through about 4 minutes. Add Corn, mix well. Stir in Sherry. Cook about 5 more minutes on low heat. Adjust salt and pepper if desired. Serve immediately. Garnish with chopped green onions.

1 tbsp. all-purpose flour
2 1/4 tsp. fresh thyme, chopped
1 lb. medium shrimp, peeled and deveined
1 tbsp. olive oil
1 large onion, chopped
1 large red or green bell pepper, chopped
3 cloves garlic, minced
1/3 cup medium dry sherry
One 14-oz. can whole tomatoes, chopped with juice reserved
2 tsp. sherry vinegar

Steps:

  • Combine flour, thyme, and salt and pepper in a plastic bag. Add shrimp and shake well. Heat olive oil in a large skillet over medium-high heat. Add shrimp and saute 3 minutes. Remove from pan. Add onion, bell pepper, and garlic; saute 2 minutes. Add sherry and cook 1 minute. Add 1/4 teaspoon salt and tomatoes, and cook 4 minutes. Add shrimp and vinegar, and toss to heat through.

GARLIC SHERRIED SHRIMP

This is a great "make it quick for company" dish! And really yummy!

1/3 cup(s) extra virgin olive oil
4 - fresh garlic cloves (sliced)
1 teaspoon(s) red pepper flakes
2 1/2 pound(s) unshelled raw shrimp
2 teaspoon(s) sweet paprika
1/3 cup(s) dry sherry
1 - fresh lemon (squeezed for juice)
1/4 cup(s) fresh parsley (chopped)
1/4 teaspoon(s) freshly ground black pepper
1/4 teaspoon(s) sea salt

Steps:

  • In a big ol' skillet, heat the oil over a medium fire til it's hot. Add the garlic and cook til golden. Add the red pepper flakes and the shrimp. Stir and mix for about 1 minute til them shrimp are nice and pink. Now, sprinkle the shrimp with the paprika and keep stirring for about another half minute. Add the sherry. Let that cook for another half minute. Add the lemon juice and season with the salt and pepper, give it a stir and transfer to a big ol' bowl. Sprinkle with the fresh parsley. YUM!
