CRISPY HASH-BROWN SHEPARD'S PIE



Crispy Hash-Brown Shepard's Pie image

This takes shepard's pie to a whole new level. It's amazingly awesome. I had family over for dinner and they couldn't get enough, my mom was raving about it. Great for meat and potato eaters!

1 lb ground beef
1 small sweet onion
8 oz sliced mushrooms
2 clove garlic
1 tsp salt
pepper to taste
lawry's seasoning salt to taste
dash cayenne pepper
1 Tbsp worcestershire sauce
1/2 c beef broth
1/2 c heavy cream
1 Tbsp flour
1/2 c unthawed peas- or more if you want
2 c refrigerated hash browns
1/8 c chopped chives
2 c cheddar cheese
1/4 c mayonnaise
paprika

Steps:

  • 1. Cook beef, mushrooms, garlic, salt, pepper, in skillet until juices have almost evaporated. Add a sprinkle of lawry's seasoning salt to season beef.
  • 2. Stir in Worceteshire, then flour. Cook 1 minute and add beef broth and heavy cream. Simmer until gravy thickens. Pour into a baking dish and sprinkle peas over top and let cool.
  • 3. In a bowl, combine hash browns, chives, 1 cup cheese, 1 tsp salt and mayo. Mix well and spread across top of beef layer. Spread remainder of cheese. and bake 45 minutes. I put broil on for a couple of minutes to get that good crispy top.

For the pie:
4 potatoes, about 1 3/4 pounds
3 tbsp butter
1 cup finely chopped onions
1 small clove garlic, finely minced
1 1/2 lbs ground beef
Salt and freshly ground pepper
1 bay leaf
2 sprigs fresh thyme of 1/2 tsp dried
1/4 cup tomato paste
1/2 cup milk
1/8 tsp nutmeg
3 tbsp finely chopped parsley
1/4 cup grated Parmesan cheese
For the sauce:
1/4 lb fresh mushrooms
2 tbsp butter
3/4 cup finely chopped onion
1.2 tsp finely minced garlic
Salt and freshly ground pepper
1/4 cup dry white wine
1 1/2 cups chopped canned tomatoes
1/4 cup heavy cream

Steps:

  • For the pie: 1. Peel the potatoes, cutting each into six pieces of equal size. Put the potatoes in a saucepan and add water to cover. Bring to the boil and simmer about 20 minutes or until tender. 2. Melt 1 tbsp butter in a saucepan and add the onion and garlic. Cook, stirring, until onions wilt. 3. Add the beef and cook, chopping down with the side of a heavy metal spoon to break up the lumps. When the meat has lost its raw color, add salt and pepper to taste, the bay leaf, thyme, and tomato paste. Cover and cook about 20 minutes. Discard the bay leaf. 4. Preheat the broiler to high. 5. Meanwhile, drain the potatoes and put them through a food mill or potato ricer. Return the potatoes to the saucepan and add the remaining 2 tbsp butter, stirring until the butter melts. 6. Heat the milk and add it gradually to the potatoes, beating with a wooden spoon. Add salt to taste, the nutmeg, and half the parsley. 7. Add the remaining parsley to the beef mixture. 8. Spoon the beef into a flame-proof baking dish. A dish that measures about 8 by 11 1/2 by 2 inches is ideal for this. Spoon the potatoes over the meat and smoth the top with a spatula. Sprinkle with the cheese. 9. Place the dish under the broiler and broil about 5 minutes or less until the potatoes are nicely browned. Serve with mushroom sauce. For the sauce: 1. Slice the mushrooms thinly. There should be about 2 cups. Set aside. 2. Melt 1 tbsp on butter in a saucepan and add the onion and garlic. Cook until the onion wilts. 3. Add the mushrooms and salt and pepper to taste. Cook, stirring often, until the mushrooms give up their liquid. Cook until this liquid evaporates. 4. Add the wine. Cook until wine almost evaporates. Add tomatoes and stir. Cover and cook about 15 minutes. 5. Stir the remaining butter into the sauce and add the cream. Bring to the boil and serve hot.

CHEATER'S MEATLOAF SHEPARD'S PIE

Hate when I don't have enough meatloaf for another meal, so I came up with this handy middle-of-the-week dinner for cheater's like me. The veggies can be whatever you so choose and you can make homemade mashed potatoes instead of instant. Also, you can add more veggies or potatoes to fit your needs.

1-2 lb leftover meatloaf (amount differs)
1-2 c peas and corn (your choice)
1 can(s) mushroom pieces
1 can(s) cream of mushroom soup
1/2 c sour cream
1 c cheddar cheese, shredded
2 1/2 c instant mashed potatoes, cooked (i added garlic while cooking)

Steps:

  • 1. Break up leftover meatloaf into greased 9x9 deep casserole dish. Sprinkle (drained or frozen)veggies and drained mushrooms over top.
  • 2. In a bowl, mix soup, sour cream and 2 tablespoons of water together. Spread mixture over casserole. Next, sprinkle with cheddar cheese. Spread prepared mashed potatoes evenly over top.
  • 3. Bake at 350 degrees for approximately 30 minutes.

This is my simple version. It tastes delish and my family loves it. This is my first time to post a recipe. Hopefully it makes sense to others. Please feel free to let me know if I need to improve anything. Or if you find a alternate or tweak for this.

1-2 lb hamburger
4-6 large potatoes
1 can(s) corn or green beans (your choice)
6-8 slice american cheese
1 Tbsp minced onion
butter and milk for mashed potatoes (your recipe)

Steps:

  • 1. Peel and cut up potatoes to boil. While potatoes are cooking, brown hamburger and minced onion, and drain.
  • 2. Set to side until potatoes are done. Once potatoes are done make your recipe for mashed potatoes. (My family loves them buttery)
  • 3. Place browned hamburger in 13x9 baking pan. Layer drained can of corn or green beans on top of hamburger. Add slices of cheese and then mashed potatoes on top. Bake at 350 for 30 minutes.

box(es) jiffy corbread mix+1/2 cup water
2 - beef cubes disolved in 1 cup water
1/2 cup(s) all purpose flour
1 medium chopped fine onion
1/2 teaspoon(s) garlic powder
1/2 teaspoon(s) lemon pepper
4 medium mashed potato's (you choose seasoning)
1 can(s) corn or pea's drianed(your choice)
1/2--1 pound(s) shredded chedder cheese
2 tablespoon(s) butter or margerine
- salt and pepper taste

Steps:

  • In small bowl mix the corn bread mix according to directions+1/2 cup water.Heat oven too 400.Grease a rectangular baking pan pour in the mixture bake till done.In small sauce pan add 1 cup water add 2 beef cubes bring to a boil mix let stand till dissolved.In large skillet put in the butter melt add the chopped onion when gold stir in the beef and rest of seasonings.When beff is cooked add the flour little by little keep stiring well add the beef stock mix well.It will look like beef in gravy.Take the cornbread out of oven.Pour the meat mixture on top spread all over the cornbread.When done pour the vegtable on top of meat,pour the mashed potato's spread over the vegtable's when done sprinkle the cheese all over the top.Bake at 350 60 minutes.This serves anywhere from 1-6 depends on eaters.

1 garlic clove, minced
16 ounces potatoes, mashed

  • Brown ground round, onion and seasonings. Drain fat. Layer in 8x8 pan. Cover with mashed potatoes (left over mashed potatoes work especially well for this recipe).

1 lb ground chuck or meat loaf mix
1 lb frozen mixed vegetables
1 medium onion
4 large russet potatoes
8 oz brown gravy with onion
1 tsp paprika
1 tsp ground hot pepper

  • 1. Brown meat and pour off grease. Mix in thawed vegetables, uncooked onion, and gravy.
  • 2. pour mix into bread pan and cover with mashed potatoes, spices, bake 350'F for 45 minutes.
