Fresh basil marries the flavors of this splendid salad from Kathy Glasgow. The Marysville, California reader lightly dresses the dish, making it ideal with almost any entree.

8 ounces uncooked small pasta shells
2 cups frozen peas
1 cup thinly sliced celery
1/2 cup chopped sweet red pepper
1/4 cup chopped onion
2/3 cup fat-free mayonnaise
1 tablespoon white balsamic vinegar
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions, adding the peas during the last 2-3 minutes of cooking time. Drain and rinse in cold water. , In a large bowl, combine the pasta, peas, celery, red pepper and onion. In a small bowl, whisk the mayonnaise, vinegar, basil, mustard, salt and pepper. Pour over pasta mixture; toss to coat. Cover and refrigerate for at least 1 hour before serving.

Kosher salt
1 pound small pasta shells
2 tablespoons olive oil
4 tablespoons butter
1 pound ground beef
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon paprika
One 10-ounce can diced tomatoes and green chiles, such as Rotel
1/2 cup hot water
Freshly ground black pepper
2 cups milk, plus more if needed for thinning
8 ounces processed cheese, such as Velveeta, diced
2 1/2 cups grated Cheddar jack cheese
1 teaspoon dried cilantro
Sour cream and jarred salsa, for serving, optional

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook according to the package directions. Drain and set aside.
  • Heat the olive oil and 2 tablespoons of the butter in a pan over medium-high heat. Add the ground beef and cook, crumbling it with a wooden spoon, until browned, 5 to 8 minutes. Stir in the chili powder, cumin, onion powder, garlic powder and paprika. Stir in the diced tomatoes and chiles, hot water, 1 teaspoon salt and 1/2 teaspoon pepper and bring to a simmer. Cook until the sauce thickens, 2 to 3 minutes, then remove to a bowl (it will still be a little juicy).
  • In the same pan over medium heat, add the remaining 2 tablespoons butter and the milk and cook until hot and bubbling. Add the processed cheese and cook, stirring, until melted. Do the same with the Cheddar jack. Pour in the cooked pasta, add the taco meat and stir to combine. Taste and adjust the seasoning, thinning with a splash of milk if needed. Stir in the cilantro.
  • Top each serving with some sour cream and salsa if desired.

Here's my version of what's often called 'the San Francisco treat,' although the next time I see this served here will be the first time. I used real chicken broth and a variety of seasonings.

1 ½ teaspoons kosher salt, plus more as needed
⅛ teaspoon freshly ground black pepper
⅛ teaspoon ground coriander
⅛ teaspoon mustard powder
⅛ teaspoon celery salt
⅛ teaspoon paprika
⅛ pinch ground turmeric
⅛ teaspoon cayenne pepper
3 tablespoons unsalted butter
½ cup finely diced onions
⅔ cup uncooked orzo pasta
1 ⅓ cups uncooked long-grain white rice
3 cups good-quality chicken broth
1 tablespoon freshly chopped parsley

Steps:

  • Mix together salt, pepper, coriander, mustard powder, celery salt, paprika, turmeric, and cayenne pepper in a small bowl.
  • Melt butter in a large skillet over medium-high heat. Add diced onion and pasta. Cook and stir until onions soften and pasta turns golden brown, 4 to 6 minutes. Stir in spice blend; cook and stir about 30 seconds. Add rice and stir until rice is coated with butter, about 1 minute.
  • Pour in chicken broth. Bring to a simmer. Stir; reduce heat to low. Cover with a tight-fitting lid; cook for 17 minutes. Remove from heat; let covered skillet sit for 5 minutes. Remove lid and stir in parsley, fluffing rice and breaking up any clumps.

3-1/2 cups uncooked pipetti pasta, such as Barilla Pippetti, or medium pasta shells
1/4 cup butter, cubed
1/4 cup all-purpose flour
2-1/2 cups 2% milk
1/4 teaspoon pepper
2 cups shredded white cheddar cheese
4 slices white American cheese, chopped
1/4 cup grated Parmesan cheese
Bread bowls, optional

Steps:

  • Cook pasta according to package directions; drain and set aside. In a large saucepan, melt butter over low heat; whisk in flour until smooth. Whisk in the milk and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cheeses until melted; stir in pasta. Serve in bread bowls if desired.

I love a good macaroni salad! Recipe courtesy Guy Fieri, 2007, changed around just a bit! Macaroni salad was first found in early 20th century cookbooks.

16 ounces macaroni noodles, 1/4-inch tube (or use small shell pasta-or try rainbow rotini pasta-whole wheat pasta is best)
1 1/2-2 cups mayonnaise (The pasta absorbs the mayo, so use enough to make it "wet". )
1/2-2 tablespoon minced garlic (2 tbls. is alot!)
3 tablespoons yellow mustard
1 tablespoon rice vinegar (or white vinegar)
3/4 cup minced red onion (or green onions)
3/4 cup minced Peppadew pepper (may substitue cubanelle or anaheim peppers-you might just use roasted red bell peppers)
1/2 cup carrot, diced (can chop in the food processor)
3/4 cup celery, diced (can chop in the food processor)
1/4 cup diced roasted red pepper
1/4 cup minced pepperoncini pepper
1 teaspoon sea salt
1 1/2 teaspoons fresh ground black pepper, to taste

Steps:

  • In a medium saucepot, boil water and add salt. Add pasta, cook until al dente,about 8-9 minutes, and place into an ice water bath.
  • In a medium mixing bowl add mayonnaise, garlic, mustard, and vinegar. Mix to combine and place in refrigerator to keep chilled while pasta cools. To cool quickly, spread pasta on a baking sheet and place in refrigerator for about 20 minutes, or till cool.
  • When pasta is cool, mix in mayonnaise mixture and all vegetables. Mix thoroughly, season with salt and pepper. Place into refrigerator and chill for 1 hour for the flavors to combine. This is even better the next day!
