Sheet-Pan Pizza With Asparagus and Arugula image

You might be tempted to call this a focaccia, not pizza, and you might be right, but it probably falls somewhere in between. Store-bought pizza dough can be a real time-saver, but if you can't find it refrigerated, you'll need to plan ahead to defrost frozen dough. Defrosting is best done for 24 hours or so in the fridge - or longer, as the dough will continue to ferment and improve in flavor after a day or two. The dough is easier to stretch if it's not ice cold, so let it come to room temperature. The pancetta can be omitted for vegetarians, but the lemony herb and arugula salad on top is not to be missed.

4 tablespoons olive oil
1 pound fresh or thawed frozen pizza dough, at room temperature
1/2 cup fresh ricotta (about 4 ounces)
5 ounces fresh mozzarella, sliced into 1/4-inch-thick rounds
1/2 bunch asparagus (about 1/2 pound), trimmed and cut into 5-inch pieces
1 or 2 serrano or jalapeño peppers, thinly sliced
4 thin slices pancetta (optional)
1/2 cup pitted and torn green olives, like Castelvetrano
Flaky sea salt and black pepper
1 cup loosely packed Italian parsley
1 cup loosely packed baby arugula
2 teaspoons lemon juice

Steps:

  • Heat oven to 500 degrees. Pour 3 tablespoons oil into a 9-by-13-inch rimmed baking sheet and brush to coat. (If you don't have a quarter sheet pan, you can use a larger one and aim to stretch the dough into a 9-by-13-inch rectangle.) Carefully stretch dough evenly to fill the baking sheet, avoiding creating holes or thin spots. The dough probably won't fit the baking sheet, so let it rest while you prepare the rest of the ingredients. If it still resists, layering the ingredients on top will help it keep its shape.
  • Dollop the ricotta around the dough. Tear the mozzarella into pieces and distribute evenly. Toss the asparagus with the peppers and 1 teaspoon oil; arrange randomly over the cheese. Cut the pancetta slices in half, if using, and tuck them in here and there.
  • Bake on bottom rack of oven for 15 minutes. If it seems to be darkening too quickly, lower heat to 450 degrees. Remove from oven, top with olives and return to oven for another 5 minutes until cheese is starting to brown and the crust is browned and crisp. Remove pan from the oven and immediately slide the pizza off the pan and onto a wire rack to prevent sogginess. After a few minutes, slide onto a board for serving. Season with flaky salt and pepper.
  • In a medium bowl, toss parsley and arugula with lemon juice and remaining 2 teaspoons olive oil. Season with flaky salt and pepper. Garnish pizza with salad and serve.

This giant rectangular pizza is made with from-scratch dough that's easy to work with and gets fluffy, chewy and unbelievably crisp in the oven. For our toppings, we opted for spicy sausage and meaty mushrooms -- a classic flavor profile that's universally loved. Putting the cheese underneath the sauce helps the thicker crust stay crisp. Tip: If you make a lot of pizza, invest in a black steel pan. It gets wonderfully hot and helps crisp up the crust.

4 cups all-purpose flour (see Cook's Note)
1 tablespoon sugar
2 teaspoons kosher salt
1 1/4 teaspoons active dry yeast
1 1/2 cups warm water (about 100 degrees F)
1/3 cup plus 2 tablespoons extra-virgin olive oil
One 15-ounce can crushed tomatoes
2 garlic cloves, grated
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
12 ounces hot Italian sausage, casings removed (about 4 links)
8 ounces cremini mushrooms, trimmed and thinly sliced
6 tablespoons freshly grated Parmesan
1 pound part-skim mozzarella, thinly sliced
Torn fresh basil leaves, for serving

Steps:

  • For the dough: combine the flour, sugar, salt and yeast in the bowl of a stand mixer fitted with the dough hook. Combine the warm water and 2 tablespoons olive oil in a liquid measuring cup. Turn the mixer to low and add the water mixture, mixing until a loose ball forms. (You can also do this by hand: Combine the dry ingredients in a large bowl. Make a well in the center, then add the water and oil and stir with a wooden spoon.)
  • Increase the speed to medium-high and knead the dough until smooth and slightly tacky, about 7 minutes. (If using your hands, gather the dough into a ball, turn it out onto a floured surface and knead, dusting your hands and the surface as needed with flour, until the dough is smooth and slightly tacky, about 5 minutes.)
  • Pour the remaining 1/3 cup olive oil into an 11-by-17-inch rimmed baking sheet or rectangular black steel pan. Transfer the ball of dough to the pan, turning to coat it with oil. Cover loosely with plastic wrap and let rise in a warm place until the dough fills about two-thirds of the pan, 1 1/2 to 2 hours.
  • Slide your hands under the dough and lift, gently stretching it to fit the pan. (It's OK if it doesn't stretch to the corners.) For the final rise, loosely cover with plastic wrap and set aside until slightly puffy, 30 to 45 minutes.
  • While the dough rises, position the oven racks in the upper and lower thirds of the oven. If you have a pizza stone, put it on the lower rack. Preheat the oven to its highest bake setting, 500 to 525 degrees F. Once the oven comes to temperature, heat for at least 1 hour before baking your pizza.
  • For the pizza: stir the crushed tomatoes, garlic, 1/2 teaspoon salt and a few grinds of black pepper together in a medium bowl or 2-cup liquid measuring cup until combined.
  • Heat the oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until it is browned at the edges and no longer pink, about 5 minutes.
  • Transfer to a bowl with a slotted spoon, leaving the rendered fat in the pan. Add the mushrooms to the hot pan and cook, stirring occasionally, until most of the liquid has evaporated and the mushrooms are tender, about 4 minutes. Remove to a separate bowl to cool.
  • When the dough has risen and is ready for topping, sprinkle 3 tablespoons of the Parmesan evenly over it all the way to the edges. Arrange the mozzarella over the dough leaving a 1/2-inch border. Spoon the tomato sauce over the cheese leaving some of the cheese exposed. Sprinkle the cooled sausage and mushrooms over the sauce, then sprinkle with the remaining 3 tablespoons Parmesan.
  • Put the pizza pan directly on the pizza stone if using, and bake until the crust is browned at the edges and the cheese is bubbling and browned in spots, 15 to 20 minutes. Remove the pan to a wire rack to cool slightly before removing the pizza from the pan, about 10 minutes. Top with torn basil, cut into squares and serve.

  • To a bowl or stand mixer, add the warm water, sugar, and yeast. Let the yeast proof for 5-15 minutes in a warm place until it is bubbling.
  • Preheat oven to 450˚F (230˚C).
  • Add in the flour and salt. Mix in the bowl until well combined and the dough comes together into a ball.
  • Dump the dough onto a floured surface and knead briefly to smooth out the dough and develop gluten. Form the dough into a ball and place into a new, large greased bowl. Cover with a towel and let rise for one hour or until doubled in size.
  • Remove the dough from the bowl, and cut 2-three ounce (85g) portions of the dough. Roll each portion out to a size slightly larger than a 9x13-inch (23x33 cm) baking sheet.
  • Place the first rolled dough rectangle onto the greased baking sheet. Sprinkle a thick layer of mozzarella cheese onto the dough, then place the second sheet of dough on top to cover the cheese.
  • Place string cheese into the edges of the dough, and fold the edges over the cheese, crimping the edges.
  • Brush the dough with olive oil, salt, and pepper to taste.
  • Bake for 20 minutes or until the crust is golden brown and the cheese is melted inside.
  • Quickly top the stuffed bottom crust with sauce and any extra toppings or cheese you would like.
  • Bake until the toppings are heated through, and the cheese has started to brown 10-15 minutes.
  • Transfer the pizza to a cutting board, slice, and serve.

1 20-ounce can sliced pineapple rings, drained and diced

4 small beets, roasted, peeled, and pureed
3 tablespoons olive oil, divided
2 teaspoons kosher salt
4 cups all-purpose flour
your choice of toppings, enough for 1 pizza
1 ½ tablespoons olive oil
1 ½ cups pizza sauce
1 cup shredded mozzarella cheese
1 pt cherry tomato
1 orange bell pepper, diced
1 yellow bell pepper, diced
1 cup fresh spinach, chopped
1 cup purple sweet potato, diced and roasted

Steps:

  • In a small bowl, combine half of the warm water and the brown sugar.
  • Add the active dry yeast and let foam without stirring for about 8 minutes.
  • In a large bowl, combine the pureed beets, 2 tablespoons of olive oil, salt, 2 cups (250 g) of flour, and the yeast mixture.
  • Rinse the yeast mixture bowl with the remaining warm water to get all the yeast, and pour into the large bowl.
  • Mix with your hands and gradually add in the reamining flour until the dough comes together in a ball and is not moist to the touch.
  • Transfer the dough to a floured surface and knead for about 5 minutes, until it becomes smooth and bouncy and does not stick to the surface. Add flour as needed.
  • Pour the remaining tablespoon of olive oil in a clean large bowl and rub around with your fingers.
  • Place the dough in the bowl and turn to coat with the oil.
  • Cover with a kitchen towel or a plastic wrap and let rise for at least 1 hour at room temperature (preferably warm). The dough should double in size.
  • Preheat the oven to 500°F (260°C).
  • Grease a nonstick baking sheet with the olive oil.
  • Place the dough on a floured surface and divide in half.
  • Save one dough half for later. It will keep in the refrigerator for up to 2 weeks in a bowl covered tightly with plastic wrap.
  • Using a rolling pin, flatten the remaining ball of dough into a rectangular shape that will approximately fit on the baking sheet.
  • Transfer the dough to baking sheet and stretch as needed to cover the pan.
  • Leaving a 1-inch (2 cm) border all around the sides, spread the pizza sauce over the dough and sprinkle with mozzarella.
  • Add strips of cherry tomatoes, orange bell pepper, yellow bell pepper, spinach, and roasted purple sweet potatoes.
  • Season with salt, pepper, and oregano.
  • Bake for 7-10 minutes, until the veggies are tender and the crust is cooked.

2 eggs, beaten
1 tsp. dried oregano leaves
1 can (8 oz.) CLASSICO Traditional Pizza Sauce
1-1/2 cups KRAFT Shredded Mozzarella Cheese
16 pepperoni slices

Steps:

  • Heat oven to 400°F.
  • Prepare Macaroni & Cheese Dinners in large saucepan as directed on package.
  • Add eggs and oregano; mix well.
  • Spoon into 15x10x1-inch pan sprayed with cooking spray; spread to form even layer on bottom of pan.
  • Bake 15 to 20 min. or until lightly browned. Spread with pizza sauce; top with mozzarella and pepperoni. Bake 5 to 7 min. or until mozzarella is melted. Cool 5 min. before cutting into 24 pieces.

Where I grew up, the only acceptable pizza was a deep-dish Chicago-style cheese fest. I didn't achieve true pizza nirvana until I moved to New York, home of thin-crust pies scattered with farmers' market loot at places like Roberta's in Brooklyn and Milkflower in Queens --meccas for family meetups with friends. We've since moved to another thin-crust pizza wasteland (except for glorious summer evenings at Westwind Orchard), but we still crave a pizza-night kind of affair: inexpensive, casual hangouts with friends that leave everyone satisfied, but not stuffed. The solution: making pizza at home. I'm no pizza wizard, so I embraced the deep-dish (or grandma-style) pie of my youth, only sexier (with nowhere near as much cheese). For the adults, this spicy, fennel and spicy sausage moment wins raves. A simpler cheese and broccoli version keeps small people happy -- and parents satisfied with the just-enough-vegetables vibe to let you kick back and feel you've done your job (use sweet Italian sausage only, and replace the fennel with broccoli, one for one).

One 28-ounce (794-gram) can whole peeled tomatoes (such as San Marzano), drained
2 anchovy fillets packed in oil, drained (optional)
2 garlic cloves
6 tablespoons (90 milliliters) olive oil
1/4 cup (3 grams) fresh basil leaves
Pinch of red pepper flakes (optional)

1/4 cup (60 milliliters) olive oil, plus extra for drizzling

1 small spring onion or fennel bulb, thinly sliced

Steps:

  • For the all-purpose red sauce: Pulse the tomatoes, anchovies (if using), garlic, oil, and basil in a food processor or blender until mostly smooth (some texture is okay); season with red pepper flakes (if using), salt, and pepper. Makes 8 servings.
  • For the pizza: Position a rack in the lower third of the oven and preheat to 525 degrees F (275 degrees C). If your oven only goes to 500 degrees F (260 degrees C), that's fine.
  • Coat a 13-by-18-inch (33-by-46-centimeter) baking sheet with the oil. Gently stretch the two balls of dough into an even layer, to reach into all four corners of the baking sheet, taking your time to stretch evenly with the seam meeting in the middle. Press the seam together to make one large sheet of dough. Spoon the tomato sauce evenly over the top, sprinkle with the mozzarella, and top with salami, spring onion, fennel seeds (if using), and Parmesan.
  • Bake until crisp and brown on the bottom and around the edges, about 25 minutes. Remove from the oven and sprinkle with flaky salt. Top with the greens and drizzle lightly with more oil. Serve warm.

6 eggs
1/4 cup milk
1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
6 slices OSCAR MAYER Bacon, cooked, crumbled
2 green onions, sliced

Steps:

  • Heat oven to 400ºF.
  • Unroll pizza crust onto bottom of 15x10x1-inch pan sprayed with cooking spray; let stand 5 min. Press dough onto bottom and up sides of pan. Bake 10 min.
  • Meanwhile, whisk eggs and milk until blended; cook in nonstick skillet over medium-low heat 5 min. or until eggs are set, stirring occasionally. Remove from heat; set aside.
  • Microwave VELVEETA and tomatoes in microwaveable bowl on HIGH 5 min. or until VELVEETA is completely melted and mixture is well blended, stirring after 3 min.

1/2 cup extra-virgin olive oil
1 3/4 cups water, heated to 110 degrees
1 tablespoon sugar
5 cups all-purpose flour
2 envelopes instant or rapid-rise yeast (4 1/2 teaspoons)
2 teaspoons salt
Sauce and Toppings
2 tablespoons extra virgin olive oil
3 garlic cloves, minced
1 1/2 teaspoons dried oregano
1/4 teaspoon red pepper flakes
2 tablespoons tomato paste
1 (28-ounce) can crushed tomatoes
2 tablespoons chopped fresh basil
Salt
1 1/2 cups grated Parmesan cheese
3 cups shredded mozzarella cheese

Steps:

  • * 1. For the dough: Adjust oven rack to lowest position and heat oven to 200 degrees. When oven reaches 200 degrees, turn off oven. Grease large bowl. Evenly coat 18- by 13-inch rimmed baking sheet with 1/4 cup oil. * 2. Combine water, sugar, and remaining oil in measuring cup. In bowl of standing mixer fitted with dough hook, mix flour, yeast, and salt on low speed until combined. Increase speed to medium-low and slowly add water mixture until dough is uniform in texture, about 3 minutes. Transfer dough to prepared bowl, cover with plastic, and place in warm oven. Let rise until doubled in size, about 30 minutes. * 3. For the sauce and toppings: Heat 1 tablespoon oil in large saucepan over medium heat until shimmering. Cook garlic, oregano, and pepper flakes until fragrant, about 30 seconds. Stir in tomato paste and cook until just beginning to brown, about 2 minutes. Add tomatoes and simmer until reduced to 3 cups, about 10 minutes. Off heat, stir in basil and season with salt. * 4. On lightly floured work surface, use rolling pin to roll dough into 16- by 12-inch rectangle. Transfer dough to prepared baking sheet and stretch dough to cover pan, pressing dough into corners. Brush dough with remaining oil and cover with plastic wrap. Set in warm spot (not oven) until slightly risen, about 20 minutes. Heat oven to 450 degrees. * 5. Remove plastic wrap and, using fingers, make indentations all over dough. Sprinkle dough with 1 cup Parmesan and bake until cheese begins to melt, 7 to 10 minutes. Remove baking sheet from oven and spoon sauce over pizza, leaving 1-inch border. Bake until sauce is deep red and steaming, 7 to 10 minutes. * 6. Sprinkle mozzarella and remaining Parmesan evenly over sauce and bake until cheese is golden brown, about 12 minutes. Remove pizza from oven and let rest 5 minutes. Serve.
