Number Of Ingredients 9

1 tablespoon cider vinegar
1 tablespoon Dijon mustard
2 teaspoons honey
1 small garlic clove, minced
2 tablespoons olive oil
1 pound Brussels sprouts, halved and thinly sliced
1 small red onion, halved and thinly sliced
1/3 cup dried cherries, chopped
1/3 cup chopped pecans, toasted

Steps:

  • Whisk together the first 4 ingredients; gradually whisk in oil until blended., Place Brussels sprouts, onion and cherries in a large bowl; toss with dressing. Refrigerate, covered, at least 1 hour. Stir in pecans just before serving.

Number Of Ingredients 7

1 1/2 lb Brussels sprouts (preferably on the stalk), any discolored leaves discarded and stems left intact
1 cup walnuts (3 1/2 oz), lightly toasted
2 tablespoons finely grated Pecorino Romano, or to taste
1/4 cup olive oil
3 tablespoons fresh lemon juice

an adjustable-blade slicer

Steps:

  • Holding each Brussels sprout by stem end, cut into very thin slices using slicer. Toss in a bowl to separate layers.
  • Lightly crush walnuts with your hands and add to Brussels sprouts along with cheese, oil, and lemon juice, then toss to combine. Season with pepper.

1 cup walnuts, lightly toasted (3 1/2 ounces)
2 tablespoons finely grated pecorino romano, or to taste
1/4 cup olive oil
3 tablespoons fresh lemon juice
Special equipment: Adjustable-blade slicer (mandoline)

Steps:

  • Holding each Brussels sprout by its stem end, cut into very thin slices; discard the stem ends. Toss in a bowl to separate the layers.
  • Lightly crush the walnuts with your hands and add to the sprouts along with the cheese, oil, and lemon juice, then toss to combine. Season with pepper.

Shaved brussels sprouts heat up and sparkle with dried chile and Meyer-lemon juice. Quinoa and walnuts make the salad a super-satisfying lunch.

1 cup quinoa, rinsed well
Kosher salt
1 Meyer lemon
1/4 cup extra-virgin olive oil
8 ounces brussels sprouts, trimmed and thinly sliced (preferably on a mandoline)
1/4 cup walnuts, toasted and chopped
2 scallions, thinly sliced (1/3 cup)
1/2 dried chile de arbol, crumbled, or 1/4 teaspoon crushed red-pepper flakes

Steps:

  • Place quinoa and 1 1/2 cups water in a small saucepan with a pinch of salt. Bring to a boil, reduce heat to a simmer, and cook, covered, until grains are tender and water has been absorbed, about 16 minutes. Transfer to a bowl; let cool.
  • Peel 4 long strips of zest from lemon with a vegetable peeler; thinly slice. Juice lemon into a bowl (you should have 2 tablespoons); whisk in oil in a slow, steady stream.
  • Add zest, brussels sprouts, walnuts, scallions, and chile to quinoa. Season with 3/4 teaspoon salt and drizzle with vinaigrette. Stir to combine. Serve immediately, or refrigerate, covered, up to 3 days.

20 medium brussels sprouts, cleaned
4 Tbsp olive oil, extra virgin
2 Tbsp fresh lemon juice
1/4 c pine nuts
1/4 c grated pecorino cheese
salt and freshly ground pepper

Steps:

  • 1. Cut the Brussels sprouts in half lengthwise and thinly slice them until you get to the chunky white core. Discard the remainder.
  • 2. Place Brussels sprouts in a medium mixing bowl and add the olive oil, lemon juice, pine nuts and cheese. Mix well. Season with salt and pepper.
  • 3. Cover the bowl and let sit for 30 minutes to allow the flavors to blend before serving.

1 tablespoon sherry-wine vinegar
2 teaspoons Dijon mustard
2 teaspoons Horseradish Cream for Matzo Latkes
1 teaspoon Worcestershire sauce
1/2 teaspoon paprika
Coarse salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
3 tablespoons creme fraiche
1 teaspoon freshly grated lemon zest, plus 2 teaspoons freshly squeezed lemon juice
1/2 head cabbage, julienned
6 ounces brussels sprouts, thinly sliced
3 celery ribs, sliced

Steps:

  • In a large bowl, whisk together vinegar, mustard, horseradish cream, Worcestershire sauce, and paprika; season with salt and pepper. Very slowly whisk in oil until emulsified. (Mixture should look like mayonnaise.) Carefully fold in creme fraiche and lemon zest. Season with salt and pepper.
  • In another large bowl, mix together cabbage, brussels sprouts, celery, and lemon juice; season with salt and pepper.
  • Just before serving, toss cabbage mixture with vinegar mixture; season with salt and pepper and serve immediately.
