This is what we called 'Gobbledygook' when we were kids. It's actually a Southern version of very sweet, stewed tomatoes. It isn't the most attractive dish in the world, but it's delicious. Don't try making this with fresh tomatoes. It won't work. And you really do need that much sugar in there.

1 (28 ounce) can whole peeled tomatoes, with liquid
3 slices stale bread, torn into pieces
⅔ cup white sugar
¼ cup butter, melted
1 pinch salt
1 teaspoon black pepper

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 1 1/2 quart baking dish.
  • Stir the tomatoes, bread, sugar, butter, salt, and pepper in a bowl; pour into the prepared dish.
  • Bake until hot and the tomatoes are tender, about 45 minutes.

Number Of Ingredients 8

1 quart home-preserved or commercial canned tomatoes (see note)
1/2 cup light cream
1/4 teaspoon baking soda
1/4 cup finely crumbled saltine crackers
1 tablespoon sugar
Salt to taste, if desired
1/4 teaspoon Shaker bouquet garni (or a mixture of equal quantities of these dried herbs: parsley, thyme, crumbled bay leaf and chervil)
1 tablespoon butter

Steps:

  • Heat tomatoes in a saucepan, breaking up with a fork if necessary.
  • Add cream and baking soda; mix well and let simmer 3 to 4 minutes over medium-low heat. Add cracker crumbs and continue simmering until crumbs have swelled. Add sugar, salt and bouquet garni.
  • Just before serving, stir in butter. Serve immediately.

1 tablespoon unsalted butter
4 celery stalks, cut into 1/2-inch dice
1 yellow onion, cut into 1/2-inch dice
2 cloves garlic, minced
8 large ripe tomatoes, cut into chunks
1 tablespoon dark brown sugar
Pinch of ground allspice
2 teaspoons freshly squeezed lemon juice
Salt and freshly ground black pepper

Steps:

  • Place a large sauté pan over medium-high heat and add the butter. Add the celery and onion and sauté for about 5 minutes, until soft. Stir in the garlic, tomatoes, sugar, and allspice and cook for 10 minutes, until heated through.
  • Transfer the contents of the pan to the slow cooker. Cover and cook on low for about 4 hours, until the tomatoes have broken down. Just before serving, add the lemon juice and season to taste with salt and pepper.

Here is a good recipe for stewed tomatoes that I have on my site. This is a good way to use up the remaining tomatoes you may have on your vines!

4 large tomatoes
2 stalks celery, chopped very fine
1/4 bell pepper, chopped very fine
1 teaspoon Accent seasoning
4 tablespoons sugar
salt and pepper
2 cups water

Steps:

  • Peel the tomatoes by soaking them in boiling water for one minute. Gently pull away the skin.
  • Place tomatoes in a large pot and add the remaining ingredients.
  • Cover and boil gently for 15 minutes, until tomatoes are tender.
  • Serve with croutons.
  • I like my stewed tomatoes with toast and butter.
