Oven-Fried Green Tomatoes Recipe - Make ultra-crispy, tangy fried green tomatoes with less oil and less mess by baking in the oven! Our healthier oven baked fried green tomatoes recipe can even easily be made gluten free.

3-4 unripe green tomatoes
1 ½ cups Panko breadcrumbs
¾ cup buttermilk
¼ cup all-purpose flour
2 teaspoons Cajun seasoning (creole seasoning)
1 teaspoon salt
½ teaspoon ground cumin
3 tablespoons oil (vegetable oil, olive oil)
Caesar Dressing for dipping

Steps:

  • Preheat the oven to 400 degrees F. Set out a large rimmed baking sheet. Drizzle the oil on the baking sheet and spread it around with a spoon or brush.
  • Slice the tomatoes into ¼ inch rounds. Set aside.
  • Set out 3 bowls. Pour the flour in one bowl, and the panko in the seconds bowl. In the third bowl combine the buttermilk, Cajun seasoning, salt, and cumin. Mix well.
  • One at a time, dip the slices of tomato in the flour. Shake off the excess flour and dip the tomato slice in the buttermilk. Shake off the excess buttermilk over the bowl, then dip the slice in breadcrumbs.
  • Lay each slice on the baking sheet, then flip it so it is coated in oil on both sides. Repeat with the remaining green tomato slices.
  • Bake for 12 minutes. Use a small spatula to flip the tomato slices over. Then bake again for 12 minutes, until golden brown.
  • Serve warm with a side of Caesar dressing for dipping.

1 tablespoon dried dill weed
salt to taste
ground black pepper to taste
5 medium green tomatoes, thinly sliced

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking sheet.
  • In a small bowl, mix the cornmeal, dill, salt, and pepper. Dip tomato slices into the mixture, coating both sides. Arrange coated slices in a single layer on a medium baking sheet.
  • Bake 45 minutes in the preheated oven, until crisp and golden brown.

4 green tomatoes, sliced
1 cup self-rising flour

Steps:

  • Preheat oven to 400 degrees. Melt the butter in a baking pan. Stir in the salt and pepper. Coat the sliced tomatoes with flour and place them in the pan. Bake on the lower rack of the oven for 8 minutes. Then turn the oven up to broil in order to brown the tomato slices.

1 cup all-purpose flour
1 1/2 teaspoons fine sea salt
1 1/2 teaspoons Cajun or Creole seasoning
2 cups panko breadcrumbs
1 cup buttermilk
3 large unripe (green) tomatoes, sliced into 1/4-inch-thick slices
Nonstick cooking spray, for the tomatoes
1 clove garlic, minced
Fine sea salt
1 large egg yolk (from a pasteurized egg)
2 teaspoons lemon juice
1 teaspoon Dijon mustard
1/3 cup extra-virgin olive oil
1/4 cup neutral oil, such as canola
1/2 teaspoon Cajun seasoning

Steps:

  • For the tomatoes: Preheat the oven to 375 degrees F. Line 2 sheet pans with parchment paper.
  • In a large flat bowl or pie plate, whisk together the flour, 1/2 teaspoon of the salt and 1/2 teaspoon of the Cajun seasoning. Put the breadcrumbs into a second pie plate and season with the remaining 1 teaspoon salt and 1 teaspoon Cajun seasoning. Pour the buttermilk into a third pie plate. Pat the tomato slices dry with a paper towel. Dredge them first in the flour mixture, shaking off any excess, then in the buttermilk, and then finally in the panko, patting to coat completely. Place onto the lined sheet pans, spaced about 1 inch apart. Spray the tops lightly with nonstick spray.
  • Bake for about 15 minutes, then flip the tomatoes, spray the tops lightly with nonstick spray, rotate the pans and bake until golden brown, an additional 15 minutes.
  • For the Cajun-spiced aioli: Meanwhile, sprinkle the minced garlic with salt and use the back of a knife to press it into a paste. Add the garlic and egg yolk to a stainless steel bowl along with the lemon juice and Dijon mustard; whisk to combine. Combine the oils in a container with a spout that will allow for easy controlled pouring. While whisking constantly, slowly add the oil in a slow steady stream (see Cook's Note). Stir in the Cajun seasoning and add salt to taste.
  • Serve the tomatoes on a platter with a bowl of the Cajun-spiced aioli.

8.5 oz. box jiffy corn muffin mix
1 pkg of shake'n bake parmesan crusted flavor seasoning
1/2 tsp salt and pepper
2 eggs, beaten

Steps:

  • 1. Preheat oven to 400. Spray a cookie sheet with cooking spary
  • 2. In a medium bowl add the muffin mix and the shake'n bake; stir to combine.
  • 3. Stir in the salt and pepper.
  • 4. In another bowl add the eggs and beat them.
  • 5. Dip each tomato slice in egg, then muffin mixture.
  • 6. Lay tomatoes on cookie sheet and bake 15 minutes pre side.

1 large green tomato (about 8 ounces)
1 large egg, beaten
1 cup panko bread crumbs
1/4 teaspoon salt
1/4 cup reduced-fat mayonnaise
2 green onions, thinly sliced
1 teaspoon snipped fresh dill or 1/4 teaspoon dill weed
8 slices whole wheat bread, toasted
8 cooked center-cut bacon strips
4 Bibb or Boston lettuce leaves

Steps:

  • Preheat broiler. Cut tomato into 8 slices, each about 1/4 in. thick. Place egg and bread crumbs in separate shallow bowls; mix salt into bread crumbs. Dip tomato slices in egg, then in bread crumb mixture, patting to help adhere., Place tomato slices on a wire rack set in a 15x10x1-in. baking pan; broil 4-5 in. from heat until golden brown, about 30-45 seconds per side., Mix mayonnaise, green onions and dill. Layer each of 4 slices of bread with 2 bacon strips, 1 lettuce leaf and 2 tomato slices. Spread mayonnaise mixture over remaining slices of bread; place over top layer.

We like our "fried" green tomatoes done this way as there is less grease and they are very tasty. The same recipe works very good with eggplant and zucchini also.

green tomatoes thickly sliced--1/4 inch or more
1/2 c panko bread crumbs
1/2 c parmesan cheese
1 tsp seasoned salt or seasoning of your choice or herbs
1/4 tsp pepper
mayonnaise

Steps:

  • 1. Sprinkle tomato slices with salt and lay on paper towel to drain for at least 30 minutes. Blot dry.
  • 2. In a pie pan mix together panko bread crumbs, parmesan cheese, and seasoning or herbs of your choice.
  • 3. Spread a thin coating of mayonnaise on each side of the tomato slices and dip into the bread crumbs pressing to coat well.
  • 4. Lay on a foiled lined cookie sheet and spray with a little Pam.
  • 5. Bake in a preheated 400 degree oven for 20 to 30 minutes until browned and fork tender.

This is a compilation of several recipes and old fashioned Georgia shortcuts. Yields a light cornmeal coating that does not fall off. No need for buttermilk and egg batter! Much less hassle than frying in a skillet and healthier too! For the oil, you can certainly use non-stick spray but I like to use coconut oil when I can.

2 medium green tomatoes
1/2 teaspoon kosher salt
1/4 cup cornmeal
1/4 teaspoon cayenne pepper
1 tablespoon coconut oil or 1 tablespoon other oil

Steps:

  • preheat oven to 450°
  • slice tomatoes 1/4 inch thick. Sprinkle both sides lightly with salt, and let drain in a colander for 15-20 minutes.
  • line a baking sheet with parchment paper and lightly smear with half the oil.
  • dip the tomato slices directly into the cornmeal-cayenne mixture. No additional salt is needed.
  • place on parchment lined baking sheet. Bake 20 minutes. Dot the tops with the remaining oil and turn to "fry" the other side another 20 minutes. Total baking time 40 minutes, or until golden brown.
  • If you like a darker finished product, you can add a little paprika to the cornmeal mixture.
