I was skeptical the first time my fiance said he was going to cook this for me, it has since become one of our regular dishes during hunting season. He can bring home as many grouse as he can bag.

Number Of Ingredients 11

2 complete grouse breast, deboned
1 c all purpose flour
2 tsp garlic powder
1 tsp seasoning salt
1/2 tsp basil, dried
1 tsp thyme, dried
1/2 tsp paprika
1 tsp parsley flakes
2 eggs, scrambled
1 Tbsp milk
2 Tbsp butter for frying

Steps:

  • 1. Using a large zip lock bag mix flour add all the dry ingredients, zip up bag and shake to mix.
  • 2. Scramble egg and milk in a bowl large enough to dip grouse breast. Dip breast in egg mixture.
  • 3. Put pieces into bag and shake to coat.
  • 4. Melt some of the butter in frying pan, tansfer breasts to pan and cook on med-low until golden brown on both sides approx. 25-30 min.

Number Of Ingredients 11

1 cup all-purpose flour
2 cups fine dry breadcrumbs
2 teaspoons cornstarch
2 teaspoons paprika
2 teaspoons onion powder
2 teaspoons salt
2 teaspoons sugar
3 1/2 teaspoons poultry seasoning
2 tablespoons crumbled dried parsley
10 teaspoons vegetable oil
6 pieces cut-up chicken

Steps:

  • Combine dry ingredients in a mixing bowl; mix well.
  • Add oil.
  • Mix well until combined.
  • Place in zipper-top plastic bag and store in freezer.
  • Use to coat chicken, pork, or veal.
  • To use:.
  • Preheat oven to 400 degrees F.
  • Line a baking dish with aluminum foil; grease well.
  • Moisten each piece of meat with water.
  • Shake off excess water, and shake in bag of mix to coat, one piece at a time.
  • Place in baking dish and bake for 30 minutes or until done, depending on size of pieces.
  • **Store unused mix in freezer.

⅓ cup vegetable oil
1 tablespoon salt
1 tablespoon paprika
1 tablespoon celery salt
1 teaspoon ground black pepper
½ teaspoon garlic salt
½ teaspoon minced garlic
¼ teaspoon minced onion
1 pinch dried basil leaves
1 pinch dried parsley
1 pinch dried oregano

Steps:

  • In a large resealable plastic bag combine the crumbs, oil, salt, paprika, celery salt, pepper, garlic salt, minced garlic, minced onion, basil, parsley and oregano. Seal bag and shake all ingredients together.

Steps:

  • Combine flour, cornmeal, cumin, onion powder, garlic powder, oregano, cayenne, salt, and black pepper in a large resealable bag. Shake well to combine.
