DARLING recipe received in an email from makinglifebetter.com. This is SO delicious and super fast to throw together. You totally don't have to make them into hearts, but they do make a great meal for your anniversary or for Valentines Day :) I have changed the recipe a bit, as you don't need near the butter they called for nor do you need near amount of sauce for the shrimp. I also used sugar free jelly with no problems!

1 lb medium-large shrimp, peeled and deveined
6 tablespoons I Can't Believe It's Not Butter® Spread
1 tablespoon grated fresh ginger
4 teaspoons fresh lemon juice
1 1/2 tablespoons fresh sqeezed orange juice
1/4 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons sesame seeds, toasted
1/3 cup strawberry jelly (may sub other jams)
2 teaspoons raspberry vinegar
1/2 teaspoon hot pepper sauce
1 medium avocado, peeled and sliced

Steps:

  • Preheat oven to 425°. Slice down back of shrimp, almost completely through with small knife. Gently spread and flatten.
  • Melt 4 tablespoons I Can't Believe It's Not Butter!® Spread in small saucepan over medium heat, then stir in ginger, citrus juices, salt and pepper. Dip each shrimp in the butter sauce and arrange shrimp cut-side up on lightly greased baking sheet. Bake 4-5 minutes or until shrimp turn pink.
  • Meanwhile, heat remaining 2 tablespoons Spread, jelly, vinegar and hot pepper sauce in 1-quart saucepan over medium-low heat, stirring frequently, until jelly is melted. Strain, if desired.
  • Arrange shrimp in heart shapes on sliced avocado, sprinkle with sesame seeds and drizzle with sauce to serve.

1/2 cup water
1/2 cup soy sauce
1/4 cup rice vinegar
3 tablespoons light brown sugar
1 tablespoon cornstarch
1 teaspoon garlic powder
1 teaspoon sesame oil
1/4 teaspoon red pepper flakes
1 lb medium shrimp, peeled, deveined and tails off
2 tablespoons unsalted butter
salt
pepper

Steps:

  • Add the water, soy sauce, rice vinegar, brown sugar, cornstarch, garlic powder, sesame oil and red pepper flakes to a bowl. Whisk well to combine and set aside.
  • Heat a large nonstick skillet over medium high heat. Add the butter and let melt. Add the shrimp and season with salt and pepper. Cook until they just turn pink, about 3-4 minutes. Transfer to a plate or bowl.
  • Increase the heat to high. Give the reserved sauce a good whisk and add to the skillet. Let simmer until thickened, about 3 - 4 minutes.
  • Turn the heat down to medium. Add the shrimp and toss to coat. Let cook for 30 seconds. Garnish with sesame seeds.

1 ripe passion fruit
4 or 5 extra large shrimp (about 4 ounces), peeled, deveined, and diced
2 teaspoons olive oil
1/4 cup finely minced Maui onion
1/2 cup peeled, seeded, and finely diced tomatoes
2 tablespoons finely sliced scallions
1 tablespoon finely minced fresh cilantro
1 teaspoon hot pepper sauce
Salt and freshly ground pepper, to taste
4 Ahi tuna steaks, about 7 ounces each
3 tablespoons peanut oil
Salt and freshly ground pepper, to taste
Passion Fruit-Shrimp Salsa (recipe above)

Steps:

  • Scoop out the pulp from the passion fruit and press through a fine sieve. Reserve the juice (about 1 teaspoon). Coat the shrimp in olive oil and sear in a skillet on high heat until cooked through. Transfer to a stainless steel mixing bowl, add the passion fruit juice and the remaining ingredients, and toss well to combine.;
  • Prepare the salsa and set aside. Coat the Ahi steaks with peanut oil and season with salt and pepper. Heat a dry cast-iron skillet and sear the Ahi over high heat for about 15 to 20 seconds each side for rare (about 1 minute each side for medium-rare). Place the steaks on serving plates and spoon the salsa over the tuna, letting the juices from the salsa run onto the plates.;

4 tablespoons sesame seeds
1 to 2 tablespoons dark sesame oil
1 to 2 tablespoons rice vinegar
2 to 3 tablespoons low-sodium soy sauce
12 large shrimp, peeled and deveined, tail portion of shell removed
Four 6-inch bamboo skewers

Steps:

  • In a small skillet over medium heat, toast the sesame seeds until fragrant. In a shallow dish, combine 2 tablespoons of the sesame seeds with the sesame oil, vinegar, and soy sauce. Thread 3 shrimp onto each skewer, piercing each at the head and tail, and place in the marinade. Turn to coat and set aside for 10 minutes.
  • Spread the remaining 2 tablespoons of sesame seeds on a plate. Transfer the skewers to the plate and coat with the sesame seeds. Heat the skillet over medium-high heat and sear the skewered shrimp for 2 to 3 minutes per side, or until opaque. Pour the remaining marinade over the shrimp and cook until the marinade thickens.
  • Place the skewers on a plate and pour the marinade over. Serve warm or at room temperature.

2 ripe passion fruits
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
2 tsp. honey
1/2 cup crushed corn flakes
1/2 cup yellow cornmeal
2 tsp. crushed red pepper
1 egg
1 lb. medium shrimp (31 to 35 count), cleaned
2 cups PLANTERS Peanut Oil

Steps:

  • Cut off small ends of passion fruits. Scoop out pulp and seeds into mesh strainer placed over blender container; press down on pulp with back of spoon to extract juice. Add sour cream and honey to juice; cover. Blend well; set aside.
  • Mix corn flake crumbs, cornmeal and pepper in shallow dish; set aside. Beat egg lightly in separate shallow dish. Dip shrimp in egg, then in corn flake mixture, turning over to evenly coat both sides. Gently shake off excess crumb mixture.
  • Heat oil in large deep skillet or saucepan on medium-high heat to 350°F to 375°F. Add shrimp, in batches; cook 2 to 3 min. or until golden brown and cooked through. Drain on paper towels. Serve with the passion fruit sauce.

2 tablespoons soy sauce
2 tablespoons sesame oil, divided
2 teaspoons lemon juice
1/4 teaspoon garlic powder
Dash lemon-pepper seasoning
1/2 pound medium shrimp, peeled and deveined
Hot cooked rice, optional
1 tablespoon sesame seeds, toasted

Steps:

  • In a resealable plastic bag, combine the soy sauce, 1 tablespoon sesame oil, lemon juice, garlic powder and lemon-pepper; add shrimp. Seal bag and turn to coat; refrigerate for 30 minutes., Drain and discard marinade. In a skillet, saute shrimp in remaining sesame oil until shrimp turn pink, about 3 minutes. Serve with rice if desired. Sprinkle with sesame seeds.
