4 teaspoons olive oil
1 tablespoon water
1 tablespoon white wine vinegar
1-1/2 teaspoons lemon juice
1 teaspoon honey
1 garlic clove, minced
1/4 teaspoon salt
Dash cayenne pepper
2 cups fresh broccoli florets
2 tablespoons chopped sweet red pepper

Steps:

  • In a jar with a tight-fitting lid, combine the first 8 ingredients; shake well. In a small bowl, combine broccoli and red pepper; add dressing and toss to coat. Cover and refrigerate for at least 1 hour. Serve with a slotted spoon.

3 tbsp soy sauce
3 tbsp honey
2 tbsp oil
1 tbsp garlic & ginger paste
8 skin-on chicken thighs
1 large head broccoli , cut into florets
1 tbsp sesame seeds
rice , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the soy, honey, 1 tbsp of the oil and ½ tbsp garlic & ginger paste in a bowl. Pour over the chicken thighs and leave to marinate if you have time, but don't worry if not - they will be delicious either way. Tip the chicken with all the marinade into a roasting tin, skin-side up. Cook for 45 mins until sticky and the skin is crispy.
  • When the chicken has 15 mins left, start cooking the rice following pack instructions, if using, and heat the remaining oil in a frying pan. Add the remaining garlic & ginger paste, sizzle for 1 min, then tip in the broccoli along with a splash of water. Cover and cook for 10 mins until tender, then take the lid off, tip the sesame seeds into the pan and give everything a good toss around. Season. Serve with the chicken, and all the caramelised bits from the bottom of the tin.

2 tablespoons soy sauce or tamari
1 tablespoon rice vinegar
1 tablespoon honey
1 (2-inch) piece fresh ginger, peeled and finely grated (about 1 tablespoon)
1 garlic clove, finely grated
1 pound broccoli, trimmed and cut into florets, thick stems discarded
2 scallions, trimmed and cut diagonally into 1 1/2-inch segments, plus thinly sliced scallions for garnish
1 tablespoon olive oil, plus more for brushing the salmon
Kosher salt and black pepper
4 (6-ounce) skin-on salmon fillets
1/2 lime, for serving
Sesame seeds, for serving

Steps:

  • Heat the oven to 425 degrees. In a small bowl, whisk 3 tablespoons sesame oil with the soy sauce, vinegar, honey, ginger and garlic until smooth. Set the glaze aside.
  • Place the broccoli florets and 1 1/2-inch scallion segments on a sheet pan. Drizzle with 1 tablespoon olive oil and the remaining 1 tablespoon sesame oil. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper, toss well and roast for 5 minutes.
  • While the broccoli and scallions roast, place the salmon fillets on a plate and pat dry with paper towels. Brush all over with olive oil and sprinkle with salt and pepper.
  • Toss the broccoli and scallions and move to the edges of the pan, clearing spaces in the center for the salmon fillets. Place the salmon fillets, evenly spaced, on the center of the pan. Brush the fillets generously with the glaze.
  • Return the pan to the oven and roast until the salmon is cooked through but still slightly rare in the center, about 12 minutes.
  • Squeeze the lime over the broccoli and sprinkle with salt. Scatter the sliced scallions and sesame seeds over the salmon, and serve hot.

SESAME BROCCOLI, REALLY..IT'S GOOD!

The dish is a nice and easy change from the norm, and quite different from some of the other broccoli recipes I have seen here. Try it, you might like it as much as we do! Due to a great suggestion from a reviewer, I have added toasting the sesame seeds, a marvelous idea! Also, PLEASE don't substitute the sesame oil as one review did here, you loose the entire flavor of this great dish! This is an adopted recipe and the above comments were made before I inherited it. Now having made this dish, I can concurr: it's a sesame oil that turns your head and gets your taste buds going in this recipe, and toasting the seeds also adds fuller flavour. I'm delighted to have adopted this recipe and will be making it often:) I hope that you will enjoy it too!

1 tablespoon sesame oil

Broccoli is believed to be the first of the cole crops to evolve from the wild species of kale or cabbage and was actually cultivated by the Romans. It was introduced in England in the early 16th century known as Italian asparagus or sprout cauliflower. In 1775, John Randolph described broccoli as the heads eat like cauliflower and the stems will eat like asparagus. Broccoli is a relatively recent introduction into the United States. It was grown in the 1800's, but was not popular until later. The first shipment from the west to the east was in 1923 and was really only found in Italian areas of the country. Broccoli means little sprouts in Italian. It became an important vegetable in the US during the 1930's. Broccoli is high in fiber and vitamin C and also is high in calcium and vitamin A. Cook time is marinating time. If you don't care for raw broccoli, lightly steam it for about 5-8 minutes.
