QUICK AND EASY ASIAN SESAME CUCUMBER SALAD
A chilled sesame salad of spiralized cucumber. It reminds me of the seaweed salad you get at Japanese restaurants, but just cucumbers.

Steps:
- Cut cucumbers into long, thin noodle shapes using a spiralizer set to the thinnest setting.
- Place cucumber noodles in a fine-mesh strainer set over a bowl. Sprinkle with 1/2 teaspoon salt and toss until combined. Let cucumber stand until moisture is drawn out, about 30 minutes.
- Whisk rice vinegar, sesame oil, soy sauce, and sugar together in a bowl until sugar is dissolved. Add cucumber; toss gently until coated. Season with remaining 1/2 teaspoon salt; sprinkle with sesame seeds.

JAPANESE-STYLE CUCUMBER SALAD WITH SESAME DRESSING

- Cut the cucumbers in half lengthwise, and scoop out the seeds with a teaspoon.
- Cut up the cucumber into bite sized pieces. Bash them up a bit with the side of your kitchen knife - this allows the dressing to sink into them.
- Toast the sesame seeds in a dry frying pan, shaking occasionally, until a few seeds pop. Immediately transfer the seeds to a plate (if you leave them in the pan they may get burned).
- Mix the lemon juice, vinegar, soy sauce, dashi stock granules and sugar together until the sugar has dissolved. Taste, and add a pinch of salt if you think it needs it. Add the sesame oil (or you can just drizzle on the sesame oil when you assemble the salad).
- Combine the cucumbers with the dressing and the sesame seeds. Serve right away or leave to marinate in the refrigerator for a stronger flavor.
- Note: If you're using small Japanese cucumbers any other small, immature cucumber, you don't need to de-seed them. Just cut them up and bash a bit. (This bashing thing, is a real cooking method in Japanese cooking. It helps the flavors to penetrate the bashed up vegetable better.).
- If you use white balsamic vinegar instead of the rice or white wine vinegar, you can decrease or even omit the sugar.
- This sesame dressing is very versatile. Try it with any number of vegetables. It's great on a leafy green salad. You can increase the sesame oil if you want it to have a richer sesame flavor. Add some chili pepper flakes to make it spicy, and/or some grated garlic for a more Korean-tasting twist.Add some shredded poached chicken breast to the cucumbers for a more substantial salad.
ASIAN CUCUMBER AND SESAME SALAD
I am still trying to find a recipe that comes close to the Shanghai Cucumber dish at PF Chang's. I just found this on another website and here is what the chef had to say: "I am experimenting with cucumbers since I ate this cucumber thing at PF Chang's. This one is better than the first one and as close as I have gotten to PF Chang's cucumber appetizer. When you have drained the sauce that they are marinating in, try to pour some of the sauce over brown rice. It is really good!"

- Cut the cucumber lengthwise into 1/4-inch pieces and cut each piece in half then cut the halves lengthwise into thin strips.
- Place them into a bowl and set aside.
- Place the soy sauce, mirin, rice vinegar and sugar into a small container with a secure lid.
- Put the lid on and shake to create the vinaigrette dressing.
- Pour the dressing over the cucumber and toss to coat.

MING'S SESAME TOFU AND CUCUMBER SALAD WITH SOY SAUCE EGGS

- In a mixing bowl, whisk together vinegar, soy, tahini, sesame oil, and sugar. Drizzle in canola oil to emulsify. Season. Toss with scallions, tofu, mushrooms, and cucumbers. Check for flavor. Plate salad and garnish with wedges of soy sauce eggs.
- Soft boil the eggs to the just-coagulated stage, and placed immediately in cold water.
- Tap eggs gently all over to cover with cracks.
- Add the eggs to pot filled with 1 cup soy sauce and 1 cup water (enough to cover 6 eggs), 1 slice of ginger, and half teaspoon of five-spice powder. Simmer over low heat for 25 to 30 minutes, then let steep for another 1/2 hour.
- Crack open the eggs and peel them, then slice into wedges.

- Combine soy sauce and garlic in a small cup.
- Place tenderloin in a resealable food storage bag; pour soy/garlic mixture over the pork; turn to coat and refrigerate for 1 to 2 hours.
- While pork marinates, prepare cucumber salad.
- Wash, but do not peel cucumber; cut into thin slices.
- Mix cucumber and onion in a medium bowl.
- Combine vinegar, lime juice and sugar in a small bowl; stir into cucumbers and onions.
- Cover and refrigerate salad at least 30 minutes.
- Stir in cilantro and top with peanuts before serving.
- Preheat oven to 400 degrees F.
- Drain pork, reserving 1 tablespoon of the marinade.
- Combine honey, brown sugar, ginger and reserved marinade in a small bowl.
- Place pork in a shallow foil lined roasting pan; brush with 1/2 the honey mixture; roast for 10 minutes.
- Turn pork over and brush with remaining honey mixture.
- Sprinkle sesame seeds evenly on the top.
- Roast for 10 to 15 minutes or until internal temperature reaches 155 degrees F when tested with a meat thermometer inserted into the thickest part of the meat.
- Let pork rest under a foil tent on a cutting board for 5 minutes. Internal temp will continue to rise to about 160 degrees.
- Cut into 1/2-inch slices and serve with Thai cucumber salad.

- Heat a large pot of water for pasta and salt it. Add spaghetti and cook to al dente. Heads up: you will need to reserve 1/2 cup starchy liquid before draining. Preheat oven to 450 degrees F. Combine the juice of 2 limes with rice wine vinegar, honey and sesame oil. Add cucumber and 1/4 red onion to dressing, season with salt, toss in dressing and sprinkle with sesame seeds, reserve. - In a medium bowl, whisk peanut butter, vinegar, sesame oil, sherry, soy sauce, sriracha and scallions together until smooth. Cover and refrigerate overnight or at least 6 hours. (If it thickens up too much in the fridge, add a bit of water to bring it to the right consistency.).
- After the dressing is done chilling in the fridge, bring a pot of water to a boil and cook the rice noodles about 3 minutes, or until tender. (If your package has directions, follow those, but the rice noodles can quickly turn to mush if overcooked) Drain and rinse with cold water. Cut them into about 3-inch pieces and set aside.
- In a large bowl, add all your prepared veggies and chicken, then toss. Add in the cooked noodles, and gently combine. Pour the dressing over the top and stir to coat, using as much or little dressing as you'd like. Top with toasted sesame seeds and serve.

SESAME CHICKEN CUCUMBER NOODLE SALAD
Steps:
- 1. Fill a large bowl with water and add ice cubes. Cook noodles in boiling water until just tender, 2 to 4 minutes if fresh, about 6 minutes for dry (or according to package directions). Drain and transfer the noodles to the ice water. When the noodles are cold, drain well and transfer to a very large bowl. Set aside. 2. Meanwhile, whisk peanut butter, vinegar, sesame oil and Shaoxing (or sherry) in a bowl until smooth. Add scallions, cilantro, if using, soy sauce and hot sauce, and stir to blend. 3. If using baby romaine, half lengthwise, notch out the core, and cut crosswise into 1/2-inch pieces. If using regular romaine, remove the tougher outer leaves. Halve lengthwise, notch out the core, halve again, and cut crosswise into 1/2-inch pieces. You should have about 8 cups. 4. Add the lettuce, chicken, bell peppers and cucumber to the noodles. Add three-fourths of the dressing and toss to coat. Season with salt and pepper. Add the remaining dressing if desired. 5. Transfer the salad to a serving bowl. Serve garnished with sesame seeds.
SESAME-CUCUMBER SALAD RECIPE
Steps:
- Thinly slice the cucumbers crosswise. Combine the cucumbers, 3/4 tsp. salt, and the sugar in a large bowl and toss to coat the cucumbers evenly with the salt and sugar. Let stand for 30 minutes. Transfer to a colander, rinse, and drain well, then press out the excess moisture with your hands. In a serving bowl, stir together the vinegar, garlic, chile flakes, and sesame seeds. Add the cucumbers and toss to coat. Thinly slice the green onions, including the tender green parts, and sprinkle them over the top. Cover and refrigerate until well chilled, at least 2 hours or overnight. Serve the salad cold
