2 tablespoons reduced-sodium soy sauce
4 teaspoons sesame oil
2 garlic cloves, minced
4 cups shredded cooked chicken breast
3 packages (8 ounces each) reduced-fat cream cheese
1 jar (10 ounces) sweet-and-sour sauce
2 cups chopped fresh baby spinach
1 cup thinly sliced green onions (about 8)
1/2 cup chopped salted peanuts
Sesame rice crackers

Steps:

  • Mix soy sauce, sesame oil and garlic; toss with chicken. Refrigerate, covered, at least 1 hour., Spread cream cheese onto a large serving plate; top with sweet-and-sour-sauce, spinach and chicken. Sprinkle with green onions and peanuts. Refrigerate, covered, at least 2 hours. Serve with crackers.

1-1/2 cups buttermilk
2 tablespoons lemon juice
2 teaspoons Worcestershire sauce
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
1 teaspoon soy sauce
1/2 teaspoon dried oregano
2 garlic cloves, minced
6 boneless skinless chicken breast halves (about 1-1/2 pounds)
2 cups dry bread crumbs
1/2 cup sesame seeds
1/4 cup butter, melted
1/4 cup shortening, melted
SAUCE:
1-1/2 cups prepared mustard
1-1/2 cups plum jam
4-1/2 teaspoons prepared horseradish
1-1/2 teaspoons lemon juice

Steps:

  • In a large resealable plastic bag or shallow glass container, combine the first nine ingredients; mix well. Add chicken and turn to coat. Seal or cover and refrigerate for 8 hours or overnight, turning occasionally. Drain and discard marinade. , In a shallow dish, combine bread crumbs and sesame seeds. Dredge the chicken in the crumb mixture. Place in a greased 13-in. x 9-in. baking dish. Combine butter and shortening; drizzle over chicken. Bake, uncovered, at 350° for 35-40 minutes or until juices run clear. , Meanwhile, combine sauce ingredients in a saucepan; heat through. Serve with the chicken.

2 lbs boneless skinless chicken breasts, cut into 1-inch cubes
1/4 cup bottled teriyaki sauce
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
4 egg whites
1 cup sesame seeds, lightly toasted
1 cup red currant jelly
4 teaspoons soy sauce
2 teaspoons grated fresh ginger

Steps:

  • Heat oven to 350 degrees F. Coat baking sheet with nonstick cooking spray.
  • Combine chicken pieces and teriyaki sauce in medium-size bowl. Let stand 15 minutes.
  • Combine flour, salt and pepper in large, resealable plastic food-storage bag. Lightly beat egg whites in a bowl. Spread out sesame seeds in shallow pan. Add chicken cubes, a few at a time, to flour mixture; seal bag; shake to coat. Dip floured chicken pieces into egg white. Roll in sesame seeds to coat. Place on prepared baking sheet.
  • Bake in 350 degree F oven for about 20 minutes or until golden and cooked through; instant-read meat thermometer inserted in chicken pieces should register 160 degrees F.
  • Dipping Sauce: Meanwhile, in small saucepan, heat jelly, soy sauce and ginger until warmed. Serve with chicken.
  • Note: In a large skillet, spread sesame seeds, working in batches if too crowded. Toast over medium heat, stirring occasionally, until lightly colored, 2 to 3 minutes.
  • Make-Ahead Tip: Chicken pieces can be coated and refrigerated up to 4 hours.

40 Ritz Crackers
1 cup mayonnaise
2 teaspoons diced onion
2 teaspoons ground mustard
¼ cup sesame seeds
¼ cup grated parmesan
4 boneless, skinless chicken breasts
½ cup mayonnaise (light works great)
2 Tablespoons yellow mustard
1 Tablespoon Dijon Mustard
3 Tablespoons honey
½ teaspoon lemon juice

Steps:

  • Preheat oven to 425 degrees.
  • Cover a large baking sheet with aluminum foil and lightly spray with non-stick cooking spray.
  • Place crackers in a Ziploc bag and roll over them with a rolling pin until they are finely crushed.
  • In a bowl, combine mayonnaise, onion, and mustard.
  • In a second bowl, combine crushed crackers, sesame seeds, and Parmesan cheese.
  • Cut chicken lengthwise into 1/4 inch strips.
  • Dip strips into mayonnaise mixture, then into crumb mixture.
  • Place chicken on foil-covered baking sheet.
  • Bake for 15-18 minutes.

1 cup flour
1/2 teaspoon salt
2 large eggs
2 tablespoons water
1 cup panko breadcrumbs
1/2 cup sesame seeds
3 tablespoons vegetable oil
1/4 cup mayonnaise
1/4 cup chinese sweet-hot mustard
2 tablespoons Dijon mustard
1 tablespoon crystallized ginger, minced
1/4 cup rice wine vinegar
1/4 cup black bean sauce (with chili optional)
1/4 cup scallion, minced
2 garlic cloves, minced
4 teaspoons brown sugar

Steps:

  • Preheat oven to 500 degrees F.
  • Trim chicken breasts, cutting them into 1-inch by 3-inch strips. In shallow dish, whisk together flour and salt. In another shallow dish, whisk together eggs and water. In third shallow dish, mix together crumbs and sesame seeds.
  • Dredge chicken strips in flour, coating all sides. Dip chicken in egg; then roll chicken strips in crumb mixture to coat well.
  • In large, non-stick skillet over medium-high heat, warm half the oil. Add half the chicken and saute until golden brown on all sides, about 5 minutes. Transfer chicken to baking sheet. Heat remaining oil in skillet and saute remaining chicken strips, transferring to baking sheet when done. Bake chicken until firm and crispy, about 8 minutes. Arrange on platter and serve with dipping sauces.
  • To make sauces:.
  • Mix together all ingredients for each sauce in two separate small bowls. Cover and set aside until ready to serve with chicken.

1/2 teaspoon minced peeled ginger
1/2 teaspoon sugar
1/8 teaspoon hot red-pepper flakes
For garlic dipping sauce:
2 tablespoons low-sodium soy sauce
2 tablespoons water
1 1/2 tablespoons finely grated garlic
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon sugar
For broth:
3 cups reduced-sodium chicken broth
2 cups water
1 garlic clove, sliced
3 thin slices peeled ginger
To cook and dip:
1/2 skinless boneless chicken breast (raw), thinly sliced
1/2 cup cubed firm tofu
1 ounce rice vermicelli (cooked according to package instructions and plunged into cold water to stop cooking)
1/2 cup sliced stemmed fresh shiitake mushrooms
1/2 cup fresh enoki mushrooms, cut into 3-inch lengths and spongy base discarded
2 scallions, sliced
1 cup snow peas, trimmed
2 Napa cabbage leaves, quartered
1 carrot, thinly sliced

Steps:

  • Make Sesame sauce:
  • Toast sesame seeds. Purée in a blender with remaining ingredients until smooth.
  • Make Garlic Sauce:
  • Stir together all ingredients until sugar has dissolved.
  • Make broth:
  • Bring broth, water, garlic, and ginger to a boil in a small saucepan. Discard ginger. Keep at a brisk simmer.
  • To cook:
  • Simmer chicken, tofu, noodles, and vegetables in small batches (chicken will take 30 seconds to 1 minute; make sure not to contaminate other food with utensils for the raw chicken). Serve with dipping sauces in small bowls.
