3/4 cup Asian toasted sesame salad dressing
1 pound boneless skinless chicken breast halves, cut into 1-inch strips
1/2 cup reduced-fat cream cheese
1/4 cup coconut milk
3 tablespoons creamy peanut butter
2 tablespoons lime juice
1 tablespoon reduced-sodium soy sauce
1/2 teaspoon crushed red pepper flakes
1 tablespoon minced fresh cilantro

Steps:

  • Pour salad dressing into a large resealable plastic bag. Add the chicken; seal bag and turn to coat. Refrigerate for 4 hours or overnight., Drain and discard marinade. Thread chicken onto metal or soaked wooden skewers. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack., Grill skewers, covered, over medium heat or broil 4 in. from the heat for 10-15 minutes or until no longer pink, turning once., Meanwhile, in a small bowl, combine the cream cheese, coconut milk, peanut butter, lime juice, soy sauce and pepper flakes; sprinkle with cilantro. 4 boneless skinless chicken breast halves (6 ounces each)
1/8 teaspoon salt
1/8 teaspoon pepper
2/3 cup sesame seeds
2 tablespoons peanut oil
1/2 pound sliced fresh shiitake mushrooms
4-1/2 teaspoons minced fresh gingerroot
2 garlic cloves, minced
4-1/2 teaspoons soy sauce
1-1/2 teaspoons butter
1 cup heavy whipping cream
1-1/2 teaspoons wasabi mustard
Hot cooked rice

Steps:

  • Flatten chicken to 1/2-in. thickness; sprinkle with salt and pepper. Place sesame seeds in a shallow bowl; dip chicken in sesame seeds., In a large skillet, cook chicken in oil over medium heat for 6-8 minutes on each side or until a thermometer reads 170°. Remove and keep warm., In the same skillet, cook and stir the mushrooms, ginger and garlic in soy sauce and butter for 3 minutes. 2 mushrooms, sliced into 8 pieces

1 cup whipping cream
