CRISPY SESAME CHICKEN RECIPE

This finger-lickin' crispy sesame chicken recipe underneath a sticky and sweet honey sauce is super easy to make. Comes together in 30 minutes, served with rice and you'll never need a takeout again!

1½ lb. chicken thighs ((cut into bite size))
½ tsp salt
½ tsp black pepper
1 tbsp rice wine
2 cloves garlic ((grated))
1 tsp ginger ((grated))
2 eggs ((lightly beaten))
6 tbsp cornstarch
10 tbsp all-purpose flour
½ tsp pepper
½ tsp garlic salt
2 tsp paprika
1 tbsp sesame oil
2 cloves minced garlic
1 tbsp Chinese rice vinegar ((XiaoShing cooking vinegar))
2 tablespoons honey
2 tbsp Thai sweet chili sauce
3 tablespoons ketchup
2 tablespoon brown sugar
4 tablespoons soy sauce
¼ cup water
2 tsp gochujang ((Korean red pepper paste))
1 tsp soy sauce
1½ Tbsp strawberry jam ((or any fruit jam/jelly))
2 Tbsp ketchup
1½ Tbsp worcestershire sauce
2 Tbsp sugar
¼ cup water
2 cloves garlic ((chopped))
1 cup cooked rice
2 tbsp sesame seeds
Small bunch spring onions ((scallions, chopped))

Steps:

  • Mix all the ingredients for marinating the chicken. Cover with plastic wrap and let it sit in the fridge for 20 minutes (or overnight).
  • In separate bowls, place eggs and beat slightly. Mix the dry ingredients (flour, garlic powder, pepper, salt & paprika, etc.) in another bowl and mix all together.
  • Dredge the marinated chicken in the cornstarch, then dip in the egg wash, and finally dredge it in the seasoned flour.
  • In a deep frying pan, heat oil to 350° F over medium-high heat.
  • Carefully, drop the chicken bites in hot oil one at a time and cook for about 2-3 minutes while turning the chicken. (Don't overcook).
  • Take the chicken out and let them cool down using a drying rack to ensure minimal surface contact to prevent the chicken crust from becoming soggy. Let the chicken rest for 3-5 minutes before frying them the second time.
  • Increase the oil temperature to 370° F over high heat. Fry the cooked chicken once again to get that golden brown color.
  • Remove chicken from oil and place on a cooling rack to drain off excess oil.
  • Combine the sesame chicken sauce ingredients (choose for option 1 or option 2) in a bowl and pour it in a large skillet and bring the mixture to a simmering heat. Let it simmers until the sauce has thickened and reduced to 1/3.
  • Toss in the fried chicken. Keep tossing until the chicken bites are coated evenly with sauce. Turn off the heat. Finally, toss in sesame seeds and give it a last good mix.
  • Serve with rice and some steamed vegetables. Sprinkle some more sesame seeds and enjoy.

2 tablespoons cornstarch
¼ teaspoon baking soda
¼ teaspoon baking powder
2 tablespoons low-sodium soy sauce
1 tablespoon dry sherry
2 tablespoons water
1 teaspoon vegetable oil
1 dash sesame oil
1 pound skinless, boneless chicken breast meat - cubed
1 cup chicken broth
1 cup white sugar
2 tablespoons distilled white vinegar
2 tablespoons dark soy sauce
2 tablespoons sesame oil
1 teaspoon chile paste
1 clove garlic, minced
¼ cup cornstarch
½ cup water
1 quart olive oil for frying
2 tablespoons toasted sesame seeds

Steps:

  • Sift flour, 2 tablespoons cornstarch, baking soda, and baking powder into a bowl. Pour in low-sodium soy sauce, sherry, 2 tablespoons water, vegetable oil, and a dash of sesame oil; stir until smooth. Stir in chicken until coated with the batter, then cover, and refrigerate for 20 minutes.
  • Meanwhile, bring chicken broth, sugar, vinegar, dark soy sauce, sesame oil, chile paste, and garlic to a boil in a saucepan over high heat. Dissolve 1/4 cup cornstarch into 1/2 cup of water, and stir into boiling sauce. Simmer until the sauce thickens and turns clear, about 2 minutes. Reduce heat to low, and keep sauce warm.
  • Heat olive oil in a deep fryer or large saucepan to a temperature of 375 degrees F (190 degrees C).
  • Drop in the battered chicken pieces, a few at a time, and fry until they turn golden brown and float to the top of the oil, 3 to 4 minutes. Drain on a paper towel lined plate. To serve, place fried chicken pieces onto a serving platter, and pour the hot sauce overtop. Sprinkle with toasted sesame seeds to garnish.

0.70 lb Boneless chicken thigh/breast (( about 300 gram ))
1 cup Potato /Corn Starch
2 tbsp Toasted sesame seeds
2-3 Spring Onions
1 Egg white
Oil for frying
1 tsp Sesame Oil
1 tbsp Light Soy Sauce
1 tsp Garlic paste
¼ tsp Baking soda
½ tsp Sugar
¼ tsp Black pepper
2 tbsp Honey
2 tbsp Light soy sauce
2 tbsp Ketchup
1 tbsp Sesame Oil
1 tbsp Brown/white sugar
1 tbsp Vinegar
3 tbsp Water

Steps:

  • Cut chicken into small medium bite size pieces. Add all the ingredients from the chicken marinate list, mix well and marinate for 15 minutes.
  • In a small mixing bowl add all the ingredients from the sauce mix and mix well. Set aside.
  • Add one egg white into the marinated chicken and mix well. Coat the chicken pieces with Corn/potato flour and toss the excess flour out before frying.
  • Heat the oil into high heat about 350° F. Add the coated chicken pieces and deep fry for 2-3 mins till chicken turn into light golden brown. Remove from oil and set aside.
  • Heat the wok, add the sauce mixture and bring it to boil with medium high heat.
  • Add the fried chicken pieces. Stir well with medium high heat for few seconds.
  • Add the tosted sesame seeds and spring onions and stir well.
  • Garnish with extra sesame seeds and cut spring onions.
