SESAME BEEF AND BROCCOLI

Sesame Beef and Broccoli! Full of protein, green broccoli goodness, and sticky-sweet garlic and ginger flavor. Perfect at-home takeout!

Number Of Ingredients 14

1 lb. beef flank steak, thinly sliced
1 head broccoli, cut into florets
2 tablespoons vegetable oil
3 cloves garlic, thinly sliced or minced
one 1-inch knob fresh peeled ginger, grated or sliced
white rice, brown rice, or cauliflower rice for serving
thinly sliced green onions for serving
1/4 cup low sodium soy sauce
1/4 cup water
1/3 cup brown sugar (sub coconut sugar)
1 tablespoon sambal oelek
1 tablespoon rice vinegar (sub white vinegar)
1 tablespoon sesame oil
1 tablespoon cornstarch

Steps:

  • Freeze beef for 30 minutes - 1 hour for easier slicing. Slice against the grain, into very thin strips. Toss the beef strips with a generous pinch of coarse salt and let it rest while you prep everything else. (All of this is optional but recommended for flavor and texture.)
  • Whisk the sauce ingredients together.
  • Heat a large heavy skillet over medium heat. Add a swish of oil. Working in batches, add the beef in a single layer. Let rest, undisturbed, for a minute or two to achieve a nice browning on the meat. Flip each piece over and cook until browned and yummy. Remove beef from pan.
  • Add a swish of oil to the same pan. Add the broccoli; stir fry for 2-3 minutes, until bright green. (Sometimes I add a splash of water to steam it a little bit.) Remove broccoli from pan.
  • Turn the heat down and let the pan cool a bit. Add one last swish of oil. Add the ginger and garlic; sauté for 1-2 minutes. Add the sauce; stir until a thickened and sticky sauce forms. Add beef and broccoli back in. Toss gently to coat.
  • Serve with rice, thinly sliced green onions, and sesame seeds.

1 cup peanut oil
1 pound sirloin steak, sliced into thin strips
4 tablespoons cornstarch, divided
1/4 cup reduced sodium soy sauce
1/4 cup brown sugar, packed
2 tablespoons freshly squeezed orange juice
2 tablespoons rice vinegar
2 cloves garlic, minced
1 tablespoon freshly grated ginger
1 tablespoon Sriracha, optional
1 teaspoon sesame oil
1 teaspoon sesame seeds
1 green onion, thinly sliced

Steps:

  • Heat peanut oil in a large stockpot or Dutch oven over medium heat. In a large bowl, combine steak and 2 tablespoons cornstarch, tossing to coat and letting the steak absorb the cornstarch. Add remaining 2 tablespoons cornstarch before adding to the stockpot. Working in batches, cook steak until golden and crisp, about 2-3 minutes. Transfer to a paper towel-lined plate. In a medium saucepan over medium high heat, combine soy sauce, brown sugar, orange juice, vinegar, garlic, ginger, Sriracha and sesame oil until slightly thickened, about 1-2 minutes. Stir in steak and gently toss to combine. Serve immediately, garnished with sesame seeds and green onion, if desired.

1 pound sirloin steak (without much gristle) or pre-cut beef tips
Kosher salt and fresh ground black pepper

Steps:

  • Trim off the excess fat from the meat, and then cut strips less than 1-inch wide. Rotate the meat and cut into small bite-size pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.
  • Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings.
  • Next, turn on your ventilation fan-you'll need it! Heat the skillet over medium-high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, and then get very brown, before you add the meat.
  • Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30 to 45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside.
  • Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

1 pound beef boneless sirloin steak
1/2 cup teriyaki marinade or sauce
3 medium green onions, finely chopped (3 tablespoons)
2 cloves garlic, finely chopped
1 tablespoon vegetable oil
4 cups hot cooked rice
1 tablespoon sesame seed, toasted if desired

Steps:

  • Cut beef diagonally across grain into 1/8-inch slices. (Beef is easier to cut if partially frozen, about 1 1/2 hours.)
  • Mix teriyaki marinade, onions and garlic in medium glass or plastic bowl. Stir in beef until well coated. Cover and refrigerate 30 minutes.
  • Remove beef mixture from marinade; reserve marinade. Heat oil in 10-inch skillet over medium-high heat. Cook beef mixture in oil, stirring occasionally, until beef is brown. Stir in marinade. Heat to boiling; boil and stir 1 minute.
  • Serve beef mixture over rice. Sprinkle with sesame seed.

1/4 cup sugar
6 tablespoons canola oil, divided
1/4 cup soy sauce
1/2 teaspoon pepper
6 green onions, thinly sliced
4 garlic cloves, minced
2 tablespoons sesame seeds
1 pound beef top sirloin steak, cut into 1/8-inch strips
Rice or chow mein noodles

Steps:

  • In a large plastic resealable bag, combine the sugar, 4 tablespoons oil, soy sauce, pepper, onions, garlic and sesame seeds. Pour half into a small bowl; set aside. Add beef to remaining marinade; seal bag and toss to coat. Let stand 15 minutes. , Drain and discard marinade from beef. In large skillet or wok, heat remaining oil over high heat; add beef and reserved marinade. Stir-fry until beef is brown and has reached desired doneness. Serve immediately with rice or noodles.
