The BEST Vegan Barbecue Seitan Wings image

This is the easiest seitan recipe in the world. Tossed in a delightful plant-based version of the classic, mustard-heavy barbecue sauce from South Carolina, these vegan barbecue seitan wings will melt in your mouth.

2 cups of vital wheat gluten
1 teaspoon of garlic powder
1½ teaspoon of salt
1¼ cups of vegetable broth
1 tablespoon of olive oil
Finely chopped fresh chives (optional)
1 cup of tomato sauce
3 tablespoons of apple cider vinegar
¼ cup of pure maple syrup
¼ cup of Dijon mustard
1 tablespoon of brown sugar
1 teaspoon of onion powder
1 teaspoon of garlic powder
Pinch of salt
Pinch of cayenne pepper

Steps:

  • To make the seitan wings, stir together the vital wheat gluten, garlic powder, and salt in a large bowl.
  • Slowly stir in the broth, and when the gluten becomes too hard to stir, knead it with your hands until the seitan comes together and forms a ball.
  • Bring a large pot of salted water to a boil over high heat. Pull tiny pieces of seitan from the dough ball and drop them in the water. Continue this process until all the dough is used. (The seitan will expand; the smaller the pieces you pull off, the better.)
  • Boil the seitan, reducing the heat if needed, for 30 minutes. Drain the pot and let the seitan cool completely.
  • While the seitan cools, preheat the oven to 375°F (191°C).
  • When the seitan pieces are cool enough to handle, squeeze as much liquid out of them as possible with your hands. Place the wings on a medium baking sheet. Drizzle the oil onto the wings and toss to coat them.
  • Bake the wings for 20 minutes, flip them and bake for 20 to 25 minutes more, or until they are brown and firm.
  • When the wings are almost done, make the barbecue sauce. In a small saucepan over medium-low heat, whisk together the tomato sauce, vinegar, maple syrup, mustard, brown sugar, onion powder, garlic powder, salt, and cayenne pepper. Bring the sauce to a simmer, reduce the heat to low and simmer for 10 to 15 minutes. Taste and adjust the seasonings. Remove the saucepan from the heat
  • When the wings are done, toss them in the barbecue sauce and serve them topped with the chives (if using).

1 cup vital wheat gluten (120 g)
1 cup water (236 mL)
¼ cup chickpea flour (30 g)
¼ cup nutritional yeast (15 g)
1 tsp each salt, garlic powder, onion powder, smoked paprika
6 cups vegetable broth (1.4 L)
2 Tbsp white vinegar (30 mL)
½ tsp liquid smoke (2 mL)
Buffalo Wings: ½ cup Frank's buffalo sauce, 2 Tbsp melted unsalted butter or margarine, ½ tsp garlic powder
Sticky Sriracha: ¼ cup sriracha, ¼ cup brown sugar, 1 Tbsp lime juice, 1 tsp soy sauce

Steps:

  • Dough: In a large bowl stir together all dough ingredients until a ball forms. Transfer to a clean surface and knead for about 5 minutes, or until dough is elastic and cohesive (it will still be lumpy, that's okay!)
  • Shape: Portion dough into about 20 pieces, then roughly form into nugget shapes (they will expand when cooking, so make them smaller than you think you'll want them!). Let hot wings rest while you prepare the broth.
  • Broth: Add all broth ingredients to a large pot and bring to a simmer. Gently lower the seitan wings into the broth, ensuring the dough is covered by the broth (if not, transfer to a smaller pot). Partially cover and simmer for 30 minutes.
  • Wing Sauce: Meanwhile, pick your wing sauce and whisk together all the ingredient for your chosen sauce.
  • Saute: Remove from pot and let cool enough to touch. Grease a large saute pan over medium heat, then add the hot wings. Cook, flipping once while cooking, until wings are golden brown on all sides.
  • Serve: Toss wings in your wing sauce and serve warm.

olive oil flavored cooking spray
1 (12 ounce) jar barbecue sauce, see note

Steps:

  • Note: Use your favorite sauce or your favorite sauce with your favorite Hot sauce. The recipe recommended "Boss" sauce. Also use Ken Cheney's white meat seitan recipe. It is posted here and on my site. I will attest to the correctness of the one on my site.
  • cut seitan into 1/2" wide by 2 or 3" long strips
  • lightly coat non-stick pan with cooking spray
  • heat pan to med-high
  • pan fry strips of seitan until heated through, browned and somewhat crispy
  • turn off heat and stir in Boss sauce
  • serve with celery on the side
  • Note: Try with Chicken flavored seitan for those longing for their wings.

Spicy seitan Buffalo "wings" are a vegetarian substitute for popular pub Buffalo wings and use seitan instead of chicken for a vegan recipe that is lower in fat and cholesterol-free.

1 pound seitan (sliced into strips)
2 tsp. garlic powder
1 tsp. onion powder
Oil for frying
1/3 cup margarine (melted)
1/2 cup hot sauce (or wing sauce like Frank's Red Hot Wing Sauce)

Steps:

  • First, coat your chopped seitan with the garlic powder and onion powder. then lightly fry in vegetable oil or canola oil over medium-high heat for 5 to 7 minutes, or until lightly browned on all sides.
  • In a medium-sized bowl, mix together the melted margarine and hot sauce.
  • Place the seitan in the bowl and stir to coat well.
  • The coating with firm up as it cools, leaving you with a delicious, coated seitan Buffalo wing which is just as sticky and delicious as the real thing. Enjoy!
