10 large eggs
Coarse salt and ground pepper
3 tablespoons olive oil
2 bell peppers (ribs and seeds removed), thinly sliced
1 medium red onion, halved and thinly sliced
1 cup shredded white cheddar (4 ounces)
1 tablespoon red-wine vinegar
1 head Boston lettuce (about 10 ounces), torn into pieces
1/2 cup store-bought salsa, for serving

Steps:

  • In a medium bowl, whisk eggs with 1/2 teaspoon salt and 1/4 teaspoon pepper; set aside. In a 10-inch nonstick skillet with a tight-fitting lid, heat 1 tablespoon oil over medium-high. Add bell peppers and onion; season with salt and pepper. Cook, stirring frequently, until softened, 6 to 8 minutes.
  • Add eggs, and cook, quickly stirring with a heatproof rubber spatula, until eggs thicken, about 1 minute. Sprinkle cheese evenly over egg mixture. Cover skillet; reduce heat to medium-low. Cook frittata for 15 minutes. Remove skillet from heat, and let stand, covered, 5 minutes.
  • Meanwhile, whisk together vinegar and remaining 2 tablespoons oil in a large bowl; season dressing with salt and pepper. Add lettuce, and toss to combine.
  • Slide frittata onto a work surface; cut into wedges. Top frittata with salsa, and serve with salad.

8 cups cubed watermelon (1/2-inch pieces)
1 cup cubed peeled jicama (1/2-inch pieces)
1 tablespoon lime zest
1 jalapeno pepper, stemmed, seeded, deveined and minced
1 tablespoon chopped fresh chives
1 tablespoon sliced scallion, white and pale green parts only
1/4 cup roughly chopped fresh cilantro
1/4 cup thinly sliced fresh basil
2 tablespoons fresh lime juice
1 tablespoon fresh lemon juice
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1/2 cup crumbled Cotija cheese

Steps:

  • Combine the watermelon and jicama in a large bowl. Add the lime zest. Stir in the jalapeno, chives, scallion, cilantro and basil. Mix well.
  • In a separate small bowl, whisk the lime juice, lemon juice and olive oil until blended. Season to taste with salt and pepper and drizzle over the watermelon-jicama mixture. Toss in the Cotija cheese. Check the seasoning and add more salt and pepper if needed.
  • Serve immediately or cover and refrigerate up to 2 hours.

1 teaspoon olive oil
1 red bell pepper, cut into thin strips
1 medium white onion, thinly sliced
¼ cup milk
4 egg whites
2 eggs
½ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a small casserole dish with cooking spray.
  • Heat oil in a 12-inch nonstick skillet over medium heat. Add bell pepper and onion and cook until tender, about 5 minutes.
  • While pepper and onion are cooking, combine milk, egg whites, whole eggs, salt, pepper, and cumin into a medium bowl using a whisk.
  • Transfer cooked vegetables to the prepared casserole dish. Pour egg mixture over the top.

1/2 tablespoon olive oil
2 to 3 green onions/scallions, sliced (white and pale green parts only)
3 large eggs
1 tablespoon water
1 tablespoon chopped fresh cilantro leaves
Salt and freshly ground black pepper
1/4 cup Mexican crema or sour cream
1/4 cup shredded Oaxaca or mozzarella cheese

Steps:

  • Preheat the oven to 425 degrees F.
  • In an 8-inch, nonstick, oven-proof saute pan, heat the oil over medium heat. Add the scallions green onions and cook until soft, about 3 minutes. Meanwhile in a medium bowl, beat the eggs with 1 tablespoon of water. Add cilantro and season with salt and pepper. Add egg mixture to pan and cook. Add the eggs and cilantro to the pan and season with salt and pepper. Cook for about 8 minutes lifting the edges with a spatula, to allow any uncooked egg to flow to the bottom. Pour the Mexican crema over the top and sprinkle with the cheese. Transfer the pan to the oven and bake until puffed and golden, about 8 to 10 minutes. Serve warm or at room temperature.

2 tablespoons grated aged cheese, such as Gruyere
2 teaspoons whole milk
Coarse salt and ground pepper
1 teaspoon extra-virgin olive oil
1/2 small shallot, minced
1 1/2 cups baby spinach
Nonstick cooking spray
2 cups salad greens
1/4 teaspoon cider, sherry, or red-wine vinegar

Steps:

  • Place a 1-cup ovenproof baking dish on a rimmed baking sheet and place in oven; preheat oven to 450 degrees. While oven is heating, whisk together egg and egg whites, 1 tablespoon cheese, milk, 1/4 teaspoon salt, and pinch of pepper. In a small skillet, heat teaspoon oil over medium; add shallot and cook until softened, about 2 minutes. Add spinach; cook until wilted, about 2 minutes. Season with salt and pepper. Stir spinach into egg mixture.
  • Remove heated dish from oven and coat with cooking spray. Immediately pour in egg mixture and top with 1 tablespoon cheese. Bake until frittata is puffed up and golden brown, about 15 minutes. Toss greens with vinegar and 3/4 teaspoon oil; season with salt and pepper. Serve frittata with salad.

1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons canned adobo sauce (from chipotle chiles in adobo)
2 tablespoons ketchup
2 tablespoons fresh lime juice
Salt and freshly ground black pepper
1/3 cup chopped red bell pepper (from about 1/2 bell pepper)
1 tablespoon chopped fresh cilantro, plus sprigs for garnish
1 pound cooked Dungeness crab meat, picked
4 avocados, peeled, pitted

Steps:

  • Whisk the mayonnaise, sour cream, adobo sauce, ketchup and lime juice together in a large bowl. Season with some salt and pepper. Fold in the bell peppers and chopped cilantro. Then fold in the crab.
  • Cut a thin slice off the rounded side of the avocadoes so that they sit flat on a plate. Place the avocado halves, flat-side down, on a platter. Fill the cavities with the crab mixture, dividing equally. Garnish with a cilantro sprig. Serve cold.

Golden Beet Carpaccio Salad image

1 large golden beet, or 3 medium red beets (about 12 ounces), trimmed
1/3 cup olive oil
1 red jalapeno chile, stemmed, seeded, and minced
1 tablespoon distilled vinegar
Kosher salt and freshly ground black pepper
1/3 cup gorgonzola cheese, crumbled
1 cup baby arugula

Steps:

  • Preheat the oven to 400 degrees F.
  • Wrap the beet tightly in foil. Roast the beet directly on the oven rack for 40 minutes, or until just tender when pierced with a knife. Unwrap, cool to room temperature, and then refrigerate until completely chilled. (The beet can be made 1 day ahead. Wrap in plastic and refrigerate.)
  • For the chile oil: In a small saucepan, combine the oil and minced chile, and set over medium-high heat. As soon as the chile begins to sizzle and turns orange in color, turn off the heat. Transfer the chile oil to a small bowl and cool completely. (The chile oil can be made 1 day ahead. Keep covered at room temperature.)
  • Carefully peel the beet. Using a mandolin, set at 1/8-inch thickness, or a very sharp knife, cut the beet into paper-thin rounds. Arrange the beet slices overlapping on a large platter. Sprinkle the vinegar all over. Drizzle some of the chile oil (with the minced chile) all over the beets. Season the beet slices generously with salt and pepper. Sprinkle all over with the Gorgonzola cheese. Garnish with the arugula and serve.

1/4 cup pine nuts
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
3/4 cup pitted and halved black kalamata olives
3/4 cup pitted and halved green olives
3/4 cup halved assorted colored cherry or grape tomatoes
1/4 cup chopped fresh cilantro leaves
8 ounces Mexican Cotija or feta cheese, cubed

Steps:

  • In a small, dry skillet, toast the cumin seeds, coriander seeds, chile, and pine nuts over medium-high heat, stirring constantly, until fragrant, about 3 minutes. Transfer the dressing to a serving bowl and whisk in the olive oil. Season with salt and pepper, to taste.

1/2 lb ground beef
2 tsp taco seasoning
1/2 cup salsa
1 small green pepper (chopped)
1/3 lb plum tomatoes (sliced)
3 scallions (chopped)
8 eggs (scrambled)
1/4 tsp salt
1/2 cup grated cheddar cheese

Steps:

  • Preheat the oven to 375 degrees.
  • In a medium oven-safe skillet (8 to 9 inches wide), brown the ground beef in the olive oil. Add the taco seasoning and salsa. Stir to coat evenly, then remove the seasoned meat from the skillet.
  • Add the green pepper to the skillet and cook for a few minutes, until crisp tender. Add the meat back to the skillet, along with the tomato and scallions. Pour the scrambled eggs on top, and sprinkle with the salt and cheese.
  • Bake for 20 to 25 minutes, or until the frittata is set and no longer jiggly. Let it sit for a few minutes before cutting. Serve warm.

Seasonal Salad with Herb Vinaigrette image

2 tablespoons red wine or sherry vinegar, or a combination
1 small garlic clove, peeled
Salt
6 tablespoons extra-virgin olive oil
Pepper
6 large handfuls salad greens, about 3/4 pound

Steps:

  • Measure the vinegar into a small bowl. Crush the garlic clove and add it to the vinegar, along with 1/2 teaspoon salt. After 10 minutes or so, whisk in the olive oil and a little freshly milled pepper. Taste and adjust the seasoning. Make the vinaigrette no more than a couple of hours before serving.
  • Pick over the salad greens, discarding any tough outer leaves, or any that are wilted or blemished. (If you are using young head lettuces, trim the root ends with a sharp paring knife to free the leaves.) Fill a large basin with cold water and gently submerge the greens, allowing sand and grit to sink to the bottom. Lift the lettuces from the water and drain them in a colander, then dry them in a salad spinner. Wrap the leaves in clean cotton toweling and refrigerater in an airtight container.
  • To serve, put the greens in a wide salad bowl and season with a small pinch of salt. Remove the garlic clove, whisk the vinaigrette, toss the greens lightly with just enough dressing to make the leaves glisten. (Your hands make the best salad-tossing tools.) Serve immediately with garlic toast or croutons.

Health-conscious cook routinely toss the yolks and stick with the whites when preparing eggs. Good idea? No necessarily. Eggs are packed with nutrients, and most of them - vitamins A and E, folate, calcium, iron and lutien - are in the yolks. Sure yolks also pack dietary cholestrol, but many scientists now think saturated fat is the biggest culprit in raising blood cholestrol. A good srategy is to hedge your bets by using some, but not all of the yolks. For instance, preparing an omlette using one whole egg and two egg whites. This Mexican frittata calls for a reduced number of egg yolks, yet still has great flavour and texture. A wedge of this frittata, served with a salad and some crusty bread, is perfect for a light supper or brunch. It reheats well, so leftovers make a convenient meal the following day.

1 1/2 cups diced red potatoes or 1 1/2 cups white potatoes
1/4 teaspoon salt
3/4 cup chunky salsa
4 large eggs
2 large egg whites
2 tablespoons all-purpose flour
1 teaspoon dried oregano
1/4 tps. ground black pepper
1 cup mexican-style shredded cheese (reduced fat)
1/2 cup chopped scallion

Steps:

  • Place potatoes in a medium saucepan and add enough cold water to cover. Bring to a simmer and cook until just tender, about 5 minutes.
  • Alternatively, place them in a glass bowl, cover with plastic, then microwave on high until tender, 3-5 minutes.
  • Meanwhile, heat oven to 350°F Coat a 9-inch glass pie plate with cooking spray.
  • Spread potatoes over bottom of pie plate and season with salt. Spoon salsa over potatoes.
  • In a mixing bowl, whisk together eggs, egg whites, flour, oregano, and pepper until smooth. Stir in cheese and scallions.
  • Pour Mixture over potatoes and salsa. With a fork, gently stir misture so cheese and potatoes are evenly distributed. Bake frittata for 30-35 minutes or until it is set at the centre and golden on top. Slice into wedges.
