¼ cup real maple syrup
¼ cup water
¼ cup chopped onion
1 tablespoon white vinegar
1 tablespoon Worcestershire sauce
½ teaspoon chili powder
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat a skillet over medium-high heat. Sear the pork chops in the preheated skillet until browned, 2 to 3 minutes per side. Arrange seared chops into a casserole dish.
  • Whisk maple syrup, water, onion, vinegar, Worcestershire sauce, chili powder, salt, and pepper together in a bowl to dissolve the chili powder; pour over the pork chops.
  • Bake in preheated oven until the chops are no longer pink in the center, about 45 minutes.

2 bone-in pork rib chops, preferably blade-end, 1 1/2 inches thick (12 to 16 ounces each)
2 tablespoons kosher salt
1 1/2 teaspoons sugar
Freshly ground black pepper
2 tablespoons vegetable oil
2 tablespoons butter
1 medium shallot, thinly sliced
8 sprigs fresh thyme

Steps:

  • Pat pork chops dry with a paper towel. Season pork chops generously on all sides with all of the sugar. Season with salt to taste. Transfer to a wire rack set in a rimmed baking sheet and refrigerate, uncovered, at least 8 hours and up to 24.
  • The next day, preheat oven to 250°F. Place baking sheet with pork chops in oven and cook until an instant read thermometer inserted into the center of the chops registers 100 to 110°F on for medium-rare, about 30 minutes, or 110 to 120°F for medium, about 35 minutes. To prevent overcooking, start checking temperature 5 to 10 minutes before suggested time. Remove from oven.
  • Heat oil in a large stainless steel or cast iron skillet over medium-high heat until just smoking. Place pork chops in skillet and cook, turning occasionally, until starting to brown, about 1 1/2 minutes. Add butter, shallots, and thyme to skillet. Continue cooking, spooning shallots and thyme on top of chops and basting with butter until golden brown on both sides and well-crusted, about 2 minutes longer. Stack pork chops with tongs, hold them on their sides, and sear the fat caps on the edges until crisp, about a minute. Remove pan from heat, transfer chops to a clean rack set in a rimmed baking sheet, and let rest for 3 to 5 minutes.
  • Just before serving, reheat drippings in pan until smoking. Pour hot drippings over chops. They should sizzle and crisp a bit. Serve immediately.

4 pork chops
2 tablespoons butter or extra virgin olive oil
1/4 cup minced onion, plus 1 medium onion sliced (sliced onion optional)
1 tablespoon apple cider or white vinegar
1 teaspoon chili powder
1/2 teaspoon pepper
1/4 cup maple syrup
1/4 cup water
1-2 tablespoons Worcestershire sauce
Salt to taste
About 1 tablespoon flour to thicken the gravy

Steps:

  • Brown the pork chops: Preheat the oven to 400°F. Sprinkle both sides of the pork chops with a little salt. Heat the butter or oil in a large sauté pan on medium high heat. Pat dry the chops with paper towels and place in sauté pan. Cook (without moving) enough to brown well, then flip over and brown the other side. Remove the chops from the pan and place into a high-sided baking dish or roasting pan. (If your pork chops are very thin and have cooked through at this point, skip the oven step and tent them loosely with aluminum foil while making the sauce.)
  • Make the sauce: Add the minced onion to the sauté pan in which you browned the pork, and sauté for 2-3 minutes, until the onion begins to brown. Add the vinegar, chili powder, pepper, maple syrup, water, and Worcestershire sauce to the pan and bring to a boil.
  • Bake: Pour the sauce over the pork chops in the baking dish. Lower the heat to 350°F and bake uncovered for 10-15 minutes for thick (1-inch thick) chops, 5-10 minutes for thin (1/2-inch thick) chops, or until the interior temperature of the pork reaches 145°F.
  • Brown sliced onions (optional): In the same sauté pan that you used to make the sauce, add a little oil and heat to medium high. Cook the sliced onions in the pan, allowing the onions to pick up any sauce remaining in the pan. Cook until lightly browned, while the pork chops are baking.
  • Thicken gravy with flour: Place the pork chops on a serving platter and loosely tent with foil. Pour the sauce into the saucepan you seared the chops in and whisk in 1 tablespoon flour to thicken the gravy. Salt to taste, and serve the gravy over the chops and (optional) onions.

4 teaspoons canola oil, divided
1 tablespoon minced fresh gingerroot
1 teaspoon chili powder

1/2 cup reduced-sodium chicken broth
1/4 cup maple syrup

  • In a small skillet over medium-low heat, cook onion in 2 teaspoons oil until golden brown and very tender, about 10 minutes. Add ginger; cook and stir 2 minutes longer., Meanwhile, combine the chili powder, salt, pepper and cinnamon; rub over both sides of pork chops. I made this one year for a holiday dinner party. I had found two similar recipes in magazines that I combined to create this one. My only mistake was slightly over cooking the pork....nothing worse than overcooked and dry pork.

1/2 teaspoon kosher salt
1/2 teaspoon dried thyme
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon black pepper
1/4 teaspoon ground cloves
2 lbs pork tenderloin
1 tablespoon olive oil
1 (6 ounce) can chipotle chilies, in adobo sauce
1/2 cup maple syrup, get the good stuff
1/4 cup chicken stock
1 tablespoon balsamic vinegar

Steps:

  • Mix together spices (first six ingredients) in a bowl. Sprinkle over pork, place in a resealable bag, and allow to refrigerate for 1-4 hours.
  • Bring oil to high heat in large saute pan (oven proof). Sear off each side of the pork tenderloin, quickly, but ensuring a nice brown crust. Place the pan, with both tenderloins in a 375 degree oven for 30 minutes, or until the internal temperature reaches 155 degrees. Remove pork from oven and pan, cover in foil, and allow to rest for 10-20 minutes. Do not discard the juices from the pan.
  • In the pan (that was just used for the pork), prepare the sauce by adding 2 teaspoons of the adobo sauce, syrup, stock, and vinegar and stirring at a medium heat. Use a whisk or spoon to scrape up any brown bits at the bottom of the pan. Stir constantly for about 5-6 minutes. Taste for seasoning and add salt/pepper if desired.
  • Serve pork in slices with a drizzle of sauce.
  • This dish goes VERY well with creamy roasted garlic mashed potatoes and fried apples.

1/2 teaspoon dried thyme
4 pork chops, trimmed of fat (about 1 pound)
4 sprigs of fresh thyme
1 tablespoon extra-virgin olive oil
1 cup Chicken Stock to Make 1 1/2 Quarts, or low-sodium canned
1 1/4 cups Marsala wine

Steps:

  • Combine the salt and pepper and dried thyme and rub on the pork chops. Press a sprig of thyme into each chop. Heat the olive oil in a nonstick skillet over medium-low heat and add the pork chops, thyme-side down. Sear 5 to 7 minutes per side, or until just browned and the interior is no longer bright pink. Transfer to a warm plate.
  • Pour off the fat from the skillet, return to the heat, add the stock and wine, and bring to a boil. Reduce the heat and cook until slightly thickened, about 5 to 7 minutes. Spoon the sauce over the pork chops and serve.

1/4 cup onion, chopped
1 tablespoon vinegar
1 teaspoon chili powder
1/2 teaspoon pepper
1/4 cup maple syrup

  • Preheat the oven to 400°F.
  • Lightly brown the pork chops in a small amount of oil, then place them in a flat baking dish with sides.
