My family loves rice and clams, so I decided to combine them in this recipe. It was a hit! This dish is very filling and satisfying. Cooking and creating new recipes are two of my favorite pastimes.

Yield 4 main-dish or 8 side-dish servings.

Number Of Ingredients 7

3 cups cooked long grain rice
1/3 cup chopped onion
2 tablespoons chopped green chilies
1 can (6-1/2 ounces) chopped clams, undrained
1 can (5 ounces) evaporated milk
1/4 cup seasoned bread crumbs
1/2 cup shredded cheddar cheese

Steps:

  • In a 1-1/2-qt. baking dish coated with cooking spray, combine the rice, onion and chilies. In a small bowl, combine clams and milk; pour over rice mixture. Sprinkle with crumbs and cheese. Bake, uncovered, at 350° for 45 minutes.

Number Of Ingredients 12

4 cups mixed seafood (crab, scallops, shrimp, oysters, bass, and/or any mild firm white fish)
2 cups cooked white rice
1 cup soft bread crumbs
2 tbl chopped pimento(l small jar)
2 tbl chopped green pepper
2 tbl chopped green onion
4 oz canned mushrooms with liquid
2 tbl capers
1/2 cup mayonnaise
1/2 cup skim milk
1 10oz cream of mushroom soup
2 eggs, beaten

Steps:

  • Combine cooked rice, bread crumbs, pimento, green pepper, green onions, mushrooms with liquid, and capers in a bowl. Mix together mayonnaise, skim milk, cream of mushroom soup, beaten eggs and then add to rice mixture. Carefully fold in 4 cups of mixed seafood. Put in large greased 9" X 13" pyrex baking dish. Bake at 350 degrees for 35-45 minutes.

1 (8 ounce) package mushrooms, sliced
2 tablespoons butter
2 tablespoons olive oil
1 dash hot sauce
1 dash Worcestershire sauce
2 lbs white cheddar cheese, shredded
1 (28 ounce) can cream of mushroom soup
4 cups cooked white rice
1 lb shrimp, peeled and deveined
1 lb lump crabmeat
1/2 cup chopped onion
1/2 cup chopped celery
fresh ground pepper

Steps:

  • Melt butter in fry pan, add oil.
  • Saute mushrooms, celery and onion in butter/oil mixture until mushroom juices are released.
  • Add mushroom soup.
  • Remove from heat and add hot sauce and worcestershire sauce.
  • In a large bowl, gently fold rice, cheese,crab and shrimp together.
  • Add cooked sauce.
  • Place all ingredients in a large, lightly oiled casserole dish, and bake for 1 hour at 325 uncovered.
  • Sprinkle with fresh ground pepper to taste.
  • Serve with salad and crusty bread.

Very simple recipe created by me out of desperation to use stuff in my kitchen already. My husband loved it and even my toddlers ate it.

5 cups cooked rice
1 can condensed cream soup (like cream of celery or cream of mushroom)
1 can spinach, drained well
1/2 cup milk
1 (16 ounce) package imitation crabmeat

Steps:

  • Mix rice with condensed soup (works best when rice is still warm).
  • Add spinich and milk.
  • Cut the crab meat into chunks and mix that in last.
  • Put it all in a pan or casserole dish and heat covered at 350 degrees for 30-45 minutes.

Although a Portuguese dish, there is some Mediterranean influence in this dish in that it resembles Spanish Paella. This recipe was a natural by-product of the abundant seafood that's available year-round along the coast of Portugal. It's a perfect one-pot meal for anytime of the year. And the recipe lends itself quite easily to adjustments you wish to make to include whatever fresh seafood is available to you or to suit your particular seafood preferences.

1 small onion, finely chopped
1/2 small red pepper, chopped
2 clove(s) garlic, finely chopped or minced
1 whole - fresh lobster, cut into pieces
1/2 cup(s) vinho verde or white wine
1/2 cup(s) tomatoes, crushed
1 teaspoon(s) paprika
1 teaspoon(s) salt
4 cup(s) low-sodium chicken broth
2 cup(s) uncooked long-grain white rice
1 pinch(es) saffron
1 cup(s) peas
1 pound(s) uncooked medium shrimp, peeled and deveined
1 pound(s) scallops
1 pound(s) little neck clams, rinsed
1 pound(s) mussels, rinsed and cleaned
- fresh cilantro, chopped (for garnish)

Steps:

  • Preheat oven to 350°F.
  • Sauté the onion, red peppers and garlic in a large deep heavy oven-proof skillet (or Cataplana pan) until translucent.
  • Add the lobster pieces and brown for a few minutes.
  • Add the wine, tomatoes, paprika, and salt, and cook for about 5 minutes until reduced.
  • Add the broth and bring to a boil.
  • Add the rice and saffron and stir while cooking for about 5 minutes over high heat.
  • Taste and adjust seasoning, if needed. Remove pan from the burner and stir in the peas.
  • Arrange the shrimp, scallops, clams, and mussels so they're evenly submerged on top of the rice.
  • Bake uncovered for about 30 minutes or until the rice is tender and the seafood is thoroughly cooked. NOTE: You can add more broth if the rice is too dry, but the rice in this dish shouldn't be "soupy".
  • Garnish with fresh chopped cilantro, and serve immediately.
