Pan Seared Chilean sea bass arranged on a bed of wilted garlic Swiss Chard (or Spinach) with browned crisp potatoes arranged around it and teased with a garnish of sweet diced sun dried tomatoes. Do I need to say more?

1 -1 1/2 lb chilean sea bass fillet, bones removed,cut in 4 serving pieces
salt and pepper
1/4 cup flour, more if needed
4 tablespoons rosemary oil (recipe #74729) or 4 tablespoons olive oil
1 small onion, minced
4 -6 cloves garlic, minced or pressed,divided
1 tablespoon fresh rosemary, minced
4 cups chopped swiss chard, main stem removed & washed
2 large potatoes or 4 medium potatoes, peeled and cooked
2 sun-dried tomatoes packed in oil, diced,for garnish

Steps:

  • Preheat oven for 375 degrees.
  • Lightly season the fish with salt and pepper, then coat with flour, shaking off the excess.
  • Heat two tablespoons oil in a skillet over medium-high heat, add the fish pieces and cook just until lightly browned, about 1 minute on each side.
  • Transfer to a casserole dish and place in oven for 10-15 minutes.
  • Add the onion and 3 cloves garlic to the skillet and cook, stirring, until beginning to soften, 1 to 2 minutes.
  • Slice pre boiled potatoes and add to the onions browning on both sides add rosemary, salt and pepper.
  • Meanwhile heat 2 tablespoons rosemary oil and toss in 3 minced cloves of garlic till almost browned add the Swiss chard till wilted about 3 minutes, season with salt and pepper.
  • Place wilted chard on platter place cooked fish on top.
  • Arrange browned potatoes around the Swiss chard.
  • Sprinkle with diced sun dried tomatoes.
  • Garnish with fresh rosemary.

SWISS CHARD AND TORTELLINI SOUP

Swiss chard is a wonderful green that often gets overlooked. It has a slightly sweet flavor and a firm texture. The combination of Swiss chard, mushrooms and tortellini makes for a hearty and delicious soup. Serve this with garlic rubbed croutons for a filling and comforting meal. The better than bouillon makes for a nice flavor but you could always use chicken broth for this soup if you're not vegetarian:-)

3 tablespoons olive oil
1/2 teaspoon red pepper flakes
3 tablespoons fresh rosemary, minced
1 teaspoon kosher salt
1 medium vidalia onion, diced
1 red bell pepper, diced
2 garlic cloves, minced
8 ounces cremini mushrooms, thinly sliced
1 lb swiss chard, sliced in ribbons (red, yellow, or white)
1 tablespoon better than bouillon vegetable stock base
10 cups vegetable broth
1 lb tortellini (fresh or frozen cheese or mushroom filled)
1 (15 ounce) can diced tomatoes with juice
2 tablespoons red wine vinegar
1/2 cup grated pecorino romano cheese (optional)

Steps:

  • Heat a stockpot with the olive oil. Add the pepper flakes, rosemary, salt, onion, bell pepper and garlic. Saute until the onions are just beginning to color and add the mushrooms. Saute for about five minutes or until the mushrooms are losing their liquid.
  • Add the Swiss chard and the better than bouillon and cook until the swiss chard is starting to wilt, about three or four minutes.
  • Add the vegetable broth and bring to a gentle boil.
  • When the soup is gently boiling add the tortellini.
  • If using frozen tortellini allow them to cook for about 5 minutes before adding the tomatoes.
  • If using fresh let them cook for about 2 minutes before adding the tomatoes.
  • Once you've added the tomatoes stir, reduce heat to medium and allow to simmer for about 8 minutes.
  • Turn off the heat and add the vinegar, stirring thoroughly.
  • Serve in deep bowls sprinkled with the Romano.

You must use fresh potatoes for this. These potatoes develop a crisp crust when seared in olive oil. They can be served with dinner or breakfast. Recipe from Vegetarian Planet. Cooking and prep times are an estimate.

1 lb potato (Yukon Gold, Yellow Finn, or new potatoes)
2 tablespoons olive oil
1 garlic clove, minced
1/2 teaspoon fresh rosemary or 1/2 teaspoon dried rosemary
1/2 teaspoon salt
fresh ground black pepper

Steps:

  • Bring a large kettle of salted water to a boil.
  • While the water heats, cut the potatoes in half (do not peel them).
  • Put them into the boiling water, and simmer them just until they are tender (check them often; they must not overcook, or they will break into pieces).
  • When the potatoes are done, immediately drain them, and put them into a large bowl filled with water and ice; let them sit in the water for at least 5 minutes, then drain them.
  • Cut them into large crosswise slices, about 1/2 inch thick, and place the slices on a kitchen towel to absorb any excess water.
  • Heat a large, heavy skillet over medium-high heat.
  • Add the olive oil, then quickly add the potatoes.
  • Salt and pepper the potatoes well.
  • Cook the potatoes for about 5 minutes, until they are a deep golden color on their undersides.
  • Turn the potatoes over, either by shaking the pan or by using a spatula; try not to break them.
  • Cook the potatoes for 5 minutes more; sprinkle them with the garlic and rosemary.
  • Shake the skillet or use a spatula to turn the potatoes again, and cook them another 2 minutes.
  • Serve the potatoes hot.
