FRESH RASPBERRY BARS

These are not your ordinary raspberry bars. They are loaded with a thick filling of fresh raspberries that are perfectly sweetened. It is more like a pie filling and you just might need a fork to eat them.

Number Of Ingredients 11

1-1/2 cups all purpose flour
1 cup old fashioned oats
1 cup light brown sugar
1/4 teaspoon baking soda
1/4 teaspoon salt
8 tablespoons butter, melted
4 cups fresh raspberries
1/2 cup sugar
4 tablespoons cornstarch
1 teaspoon lemon zest
1 tablespoon lemon juice

Steps:

  • Pre-heat the oven to 350°F. Spray an 8-inch square baking pan with non-stick spray.
  • Stir together the flour, oats, brown sugar, baking soda and salt. Stir in the melted butter. The mixture will look like damp sand but it will hold together if you pinch it.
  • Press half of the mixture into the prepared baking pan. (Make sure to press it firmly)
  • Bake for 12 to 14 minutes until it is slightly puffy.
  • While the crust is baking, prepare the filling.
  • Place the raspberries in a mixing bowl.
  • Combine the sugar, cornstarch and lemon zest until well blended. Add the lemon juice to the raspberries then fold in the sugar/cornstarch mixture. Let the raspberry mixture sit for 5 to 10 minutes while the crust bakes down.
  • Spread the raspberry filling over the baked crust.
  • Sprinkle the remaining oatmeal crumble over the raspberries.
  • Bake for 35 to 40 minutes until the raspberry juices are bubbling at the edges and the crumble crust is golden brown.
  • Let the raspberry crumble bars cool completely before slicing.

Here are my simple raspberry streusel bars with four incredible flavors: a buttery shortbread crust, thick raspberry filling, brown sugar streusel, and a drizzle of sweet vanilla icing.

1/2 cup (115g) unsalted butter, melted
1/4 cup (50g) granulated sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 cup (125g) all-purpose flour (spoon & leveled)
3/4 cup (240g) raspberry preserves*
12-16 fresh raspberries*
1/2 cup (40g) old-fashioned oats
1/3 cup (70g) packed light or dark brown sugar
1/4 teaspoon ground cinnamon
1/4 cup (31g) all-purpose flour (spoon & leveled)
1/4 cup (60g) unsalted butter, cold and cubed
optional (but encouraged!): vanilla icing for topping

Steps:

  • Preheat the oven to 300°F (149°C). Line the bottom and sides of an 8-inch square baking pan with parchment paper, leaving enough overhang on all sides. Set aside.
  • Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes.
  • Remove the crust from the oven, and turn the oven up to 350°F (177°C).
  • Spread preserves over warm crust. Dot the preserves with raspberries on top.
  • Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles coarse crumbs. Sprinkle the filling with streusel and bake for 30-35 minutes or until the streusel is golden brown. The raspberry filling should be bubbling on the edges.
  • Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars. I usually cut them into 16 smaller bars, but you can cut them into 12 larger bars. Drizzle the bars with vanilla icing, if using. These raspberry bars can be enjoyed at room temperature or cold. I personally like them cold.

1 package (18-ounces) refrigerated sugar cookie dough, softened (recommended: Pillsbury)
3/4 teaspoon lemon extract
1/2 cup seedless raspberry jam
1/4 cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F. Line an 8-inch square glass baking dish with enough foil so there is an overhang on 2 sides.
  • Mix the cookie dough with the lemon extract, kneading to combine. With damp fingers, press 2/3 of the dough into the bottom of the prepared baking dish. Spread the jam over the dough. Crumble the remaining dough evenly over the top of jam. Scatter the pecans over top. Bake until browned around the edges and cooked through in the center, about 35 minutes. Let cool in pan. Lift edges of foil to remove the bars. The bars are soft, so carefully cut into 2-inch squares or diagonally into pennant shapes.

½ cup brown sugar
1 ½ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • In a medium bowl combine butter, white sugar, brown sugar, flour, baking powder and salt; mix well. Spread 2/3 of mixture into prepared pan.

1-1/2 cups all-purpose flour
3/4 cup butter, cubed
2 large eggs, separated
1 cup raspberry jam

  • In a small bowl, combine 1/3 cup sugar, flour, butter and egg yolks. Press into a greased 13x9-in. baking pan. Bake at 350° for 15 minutes or until golden. Cool. Spread jam over crust; sprinkle with nuts., In a small bowl, beat egg whites on medium speed until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread meringue over nuts. , Bake at 350° for 25 minutes or until set and lightly browned. Cool on a wire rack. To cut into bars, use a knife dipped in hot water. Store in the refrigerator.

For mix:
2-1/2 cups flour
1 egg
1 cup sugar
1 cup butter
1 cup chopped pecans
1 jar (12 oz) seedless raspberry jam
1-1/2 cups chocolate chips

Steps:

  • Mix until crumbly. Set aside 1-1/2 cups of this mixture. Press remaining mixture in bottom of pan greased 9x13 pan. Spoon seedless raspberry jam on mixture. Sprinkle chocolate chips over jam. Crumble reserved mix over top. Bake 40-45 minutes at 350 degrees or until lightly browned. Option: Sprinkle with confectionary sugar. For larger bars, double the recipe.
