Number Of Ingredients 16

For the Cake:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup coconut oil (, at room temperature or oil of choice (I use coconut oil). Note: Oil yields a moister cake than butter)
1/3 cup natural unsweetened peanut butter
1 cup brown sugar
2 large eggs
1 cup buttermilk
1 teaspoon vanilla extract
For the Frosting:
1 cup natural unsweetened peanut butter
1/2 cup unsalted butter (, softened)
3 cups powdered (confectioner's) sugar ((can use less if preferred) )
up to 1/2 cup heavy cream (, at room temperature)

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, sift the flour, baking powder, baking soda and salt. Set aside.In a large mixing bowl, add the peanut butter, oil, and brown sugar. Beat until combined and creamy. Add the eggs and vanilla extract and beat just until combined.Alternately add the flour and buttermilk to the wet mixture, beating just until combined. Be careful not to over-beat or the cake will be dense and dry. A few small lumps of flour is fine.
  • Grease a 9X3 inch round baking pan (I use Magic Line pans). Pour the batter into the pan.Bake for about 30 minutes or until a toothpick inserted into the middle of the cake comes out moist (not wet with batter but moist. If the toothpick is dry, the cake is over-baked and will be dry). Let the cake sit in the pan for 5 minutes, then invert the cake onto a wire rack to cool completely.
  • To Make the Frosting: In the meantime place the peanut butter and butter in a large mixing bowl. Beat until smooth and creamy. Add the powdered sugar one cup at a time, continuing to beat. Add the heavy cream until you reach a spreadable consistency. (Note: This is a fairly stiff frosting.)Cut the cooled cake in half horizontally. Frost the bottom half of the cake and down the sides. Place the top layer of the cake, upside down, on top of the bottom layer. Frost the top layer and down the sides.

1/3 cup (45g) all-purpose flour
1/4 cup (50g) light or dark brown sugar
2 tablespoons (28g) unsalted butter, softened to room temperature
1 tablespoon (16g) creamy peanut butter
1/2 cup (50g) chopped roasted salted peanuts
1 and 1/2 cups (200g) all-purpose flour, sifted
1 and 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (120 ml) whole milk
1/4 cup (60 ml) sour cream (or buttermilk)
1/2 cup (1 stick/115g) unsalted butter, softened to room temperature
2/3 cup (170g) creamy peanut butter
1/4 cup (60 ml) canola or vegetable oil
1 cup (200g) granulated sugar
2 large eggs
1 teapoon vanilla extract

Steps:

  • Make the peanut butter crumble: In a medium bowl, whisk together flour and brown sugar. Using a wooden spoon or a fork, stir in butter and peanut butter until mixture is crumbly. Stir in peanuts. Cover with plastic wrap and keep in the refrigerator until ready to use.
  • Make the cake: Preheat oven to 350°F/180°C. Grease an 8x8-inch pan.
  • In a medium bowl sift together flour, baking powder, and salt. In another medium bowl mix milk and sour cream. Set bowls aside.
  • In a mixer bowl fitted with the paddle attachment, beat butter, peanut butter, oil, and sugar on medium speed until creamy, about 3 minutes. Beat in eggs, one at a time, until combined. Scrape down the sides and bottom of the bowl as necessary. Beat in vanilla extract. On low speed, beat in the flour mixture in 3 additions, alternating with the milk mixture in 2 additions, starting and ending with the flour. Be careful not to overmix.
  • Pour the batter into prepared pan and smooth the top. Sprinkle crumble evenly over the batter. It will look like a lot of crumbs, but use them all. Bake for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow cake to cool completely.
  • Store cake in an airtight container in the refrigerator for up to 5 days. Cake is best served at room temperature.

The original recipe was printed in the local newspaper; and this is similar to one served in the school lunchroom. We loved Peanut Butter Cake day! 1/2 c solid shortening (such as crisco)
1 1/4 c brown sugar, packed
2/3 c peanut butter
4 large eggs
2 tsp vanilla
2 c all-purpose flour
1 Tbsp baking powder
1 tsp salt
2/3 c milk
FOR PEANUT BUTTER ICING
1 stick butter
1/2 c peanut butter
1/3 c buttermilk (you can make your own -see hint, below.)
1 tsp vanilla
1 lb confectioners' sugar

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Beat shortening with brown sugar, until mixture is creamy. Blend in peanut butter until mixture is smooth.
  • 3. Beat in eggs, one at a time and vanilla; set aside.
  • 4. Sift flour with baking powder and salt and add to the peanut butter mixture, alternately with milk. Divide into two greased 9-inch cake pans OR a 9"x12" cake pan. I usually use the 9"x12" pan as it reminds me of my school days -they baked it in a sheet pan, and cut it into squares for us.
  • 5. Bake for 30 minutes or until the cakes test done -in a preheated 350 degrees F oven. Cool in pans for 10 minutes then turn out onto racks and frost when completely cooled.
  • 6. NOTE: If you are icing the cake with the Peanut Butter Icing below, don't let the cake(s) cool -put icing on hot cake.
  • 7. TOPPING/ICING: You can sprinkle confectioners' sugar on top of the cake if you bake in a sheet cake pan OR, if you bake layers (or a sheet cake), you can frost with a Vanilla Frosting OR use the Peanut Butter Icing (Very close to the icing used on the cake during my grammar school days.). It is very good -not too sweet. Directions are in the next step -step 8.
  • 8. FOR THE PEANUT BUTTER ICING: Bring to a boil 1 stick of butter, 1/2 cup peanut butter, 1/3 cup buttermilk, 1 teaspoon vanilla; bring to a boil, then add 1 lb. powdered sugar, mix well, and pour over hot cake.
  • 9. HINT: If you don't have buttermilk, you can make a substitute. Add 1 teaspoon lemon juice to 1/3 cup of milk; let it sit for 5 minutes. You will have the equivalent of 1/3 cup buttermilk.
  • 10. Share a piece of cake with me -I cut you a piece. ENJOY!!!

Steps:

  • Cream shortening and peanut butter with the sugar and brown sugar until smooth. Add the milk gradually and then the eggs and vanilla. Mix the flour with the salt and baking powder and slowing add to the creamed mixture, blending well. Pour into a lightly greased and floured 9 x 13 pan and bake at 350 for 25 to 30 minutes.

1 cup butter (softened)
1 cup sugar
1 cup brown sugar (firmly packed)
1 teaspoon vanilla extract
2 large eggs
2½ cups peanut butter (divided)
2 cups old fashioned oats
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
½ cup butter (softened)
¼ cup milk
2 teaspoons vanilla
4 Tablespoons cocoa powder
3 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, cream together butter, sugar and brown sugar together.
  • Add vanilla, eggs, and 1 cup of the peanut butter; stir to combine.
  • Add oats, flour, baking soda and salt and mix until well combined.
  • Spray a baking sheet (half sheet jelly roll pan that is approximately 17.8 x 12.8 x 1 inch) with nonstick cooking spray and spread out dough in an even layer.
  • Bake for 15 minutes and remove from oven.
  • Drop remaining peanut butter (about 1 1/2 cups) by very small spoonfuls (we use a baby spoon) all over on top of warm bars. Let set for about 5-6 minutes and gently spread when peanut butter has begun to melt. It will spread easily when the peanut butter has softened on the warm bars. Don't try to spread it while still thick.
  • Then let the bars cool until peanut butter has set up.
  • While cooling, mix together frosting ingredients with a hand mixer until smooth and spread on top of bars.
  • Cut into bars and serve.
