NORWEGIAN KRUMKAKE

The Krumkake is a delicious holiday treat that is versatile, tasty, and a great way to celebrate Norwegian heritage. Great for Christmas, Thanksgiving, or just a fun treat for your family.

Number Of Ingredients 8

3/4 cup of sifted all purpose flour
1/2 cup sugar
1 tbsp corn starch
1/4 teaspoon crushed cardamom
2 eggs
2 Tablespoon heavy whipping cream
1/2 teaspoon vanilla extract
4 tbsp melted butter, but not hot

Steps:

  • Add flour, sugar, corn starch, cardamom to large bowl. Mix well.
  • In smaller bowl, beat eggs and then add cream, vanilla, and butter. Mix well
  • Add liquid mixture into dry mixture and combined until a smooth peanut butter like consistency
  • Preheat krumkake grill
  • Each Krumkake will require about 1 ½ tablespoons of batter. Add one to your Krumkake maker and cook until golden brown. For my tool, this is about 1:30 seconds.
  • Remove with fork and use Krumkake tool to form into cone before it cools down
  • Allow grill to heat back up, repeat until batter is gone
  • Sprinkle with powdered sugar. Fill with whipped cream and fruit. Eat!

A tasty traditional Scandinavian cookie that is sweet, crispy, and special. Whether you are making them for you, your family, or a big event, these Rosette Cookies are visually stunning and show the care you put into your cooking. A Christmas favorite in our house and I am happy to share it with you!

Number Of Ingredients 7

1 teaspoon vanilla
1 teaspoon salt
1 tablespoon sugar
2 eggs
1 cup whole milk
1 cup all-purpose flour
Vegetable Oil, for frying (I used 4 cups)

Steps:

  • except oil and flour to mixing bowl and beat.
  • and continue beating. Your end better should be smooth.
  • for 2 hours
  • to 370° - 375° Fahrenheit in appropriate pot (See Notes on Oil Safety).
  • for 1 minute 30 seconds and I start a stopwatch at this time. During this time where both hands are free, I take care of anything that needs to be filled or taken care of, such as sifting sugar on batches of rosette cookies (see notes).
  • into the batter for a few seconds, making sure not to fully dip the iron. That is, the batter should not reach over the top of the iron design.
  • and cook for 40-50 seconds or until golden brown.
  • to get intial drips of oil off and at the same time temp the oil. Adjust temperature as needed

  • 5-9 until all are cooked
  • If you haven't sifted powdered sugar on them yet, do so now.

This is my mom's Christmas cookie recipe that the kids and I have made for years. Great fun to make and decorate.

Number Of Ingredients 6

1 cup shortening
1 ½ cups white sugar
3 eggs
3 ¾ cups all-purpose flour
1 ½ teaspoons salt
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • In a large bowl, cream the shortening with the sugar. Add the eggs and vanilla and mix well. Sift the flour and salt into the creamed mixture and stir in gradually. Chill dough for at least one hour.
  • Roll the chilled dough out to 1/8 inch thick and cut into desired shapes. Bake on an ungreased baking sheet for 6 to 8 minutes. Allow cookies to cool before decorating.
